GARLIC BURGER



Garlic Burger image

Make a tasty double cheeseburger flavored with garlic seasoning and garlic butter sauce.

1 1/2 pound ground beef chuck ((80/20))
1 1/2 teaspoons salt
1 teaspoon ground black pepper
1/4 teaspoon onion salt
1/4 teaspoon garlic salt
1/2 cup butter
2 teaspoons garlic (minced)
8 slices American cheese
4 hamburger buns

Steps:

  • Divide ground beef into 8 small balls.
  • Combine salt, black pepper, onion salt, and garlic salt together in a small bowl.
  • Melt the butter in a skillet over medium heat and add the minced garlic. Cook until the garlic butter becomes fragrant.
  • Brush the garlic butter onto the cut side of the buns and place the buns on the skillet to toast. Toast the buns long enough so the bread begins to brown.
  • Place the buns cut side down in the skillet and toast until lightly browned.
  • Brush a small amount of the butter on top of the ground beef balls and then sprinkle some garlic salt on top.
  • Heat a skillet to medium-high heat. (Cast iron recommended)
  • Place the ground beef balls in the skillet and use a spatula to press the balls into patties.
  • Season patties with the seasoning mixture.
  • When the burgers have browned on one side, flip them over and add a slice of cheese to each patty. Cook to desired doneness.
  • Place two patties onto each bun.
  • Add any desired toppings. Enjoy!

Back in the '60's, there was always something special about burgers at Grandma's house! We loved 'em!

1 lb ground beef
1/2 tsp to 1 teaspoon, salt *
1/4 tsp garlic powder
1/8 tsp celery salt
1/8 tsp paprika
1/8 tsp black pepper
2 Tbsp hot water

Steps:

  • 1. Pour hot water over spices, stir, and then mix with ground meat.
  • 2. Shape into patties, and cook as usual. We like our burgers grilled!
  • 3. * The original amount of salt was 1 teaspoon, but I use less salt now a days. I prefer to use a 1/2 teaspoon in this recipe. Your choice! Try it both ways!

FILLING
6 lb hamburger (I use deer or elk)
salt and pepper, to taste
garlic salt, to taste
5 Tbsp minced garlic
2 large onions
4 medium cabbage heads
5 loaves of bread dough
I have one person try these that stated they added cubes of potatoes to the filling as well!
BREAD DOUGH
1 c water, warm
1 Tbsp active dry yeast
1 Tbsp sugar
1/4 c sugar
1/3 c powdered milk
1 tsp salt
1 large egg
1/4 c oil or butter (melted)
3 c flour

Steps:

  • 1. I use my bread machines to make the bread. Add 1 Tbsp yeast and 1 Tbsp sugar to 1 cup warm water and mix until dissolved. Place in the bread machine.
  • 2. Add beaten egg and butter.
  • 3. Add all of the dry ingredients.
  • 4. Set the bread maker to the dough setting and start the dough process. I have it set up so when I take one batch of bread dough out I start the next loaf right away. Then by the time the cabbage burgers come out of the oven and cool I can be working on the next batch.
  • 5. While dough in the bread machine, cook the ground meat, onions, garlic, garlic salt, salt, and pepper. Drain the meat and set aside.
  • 6. While you are browning the meat you should chop up the cabbage. I like medium-sized chunks of cabbage.
  • 7. Add cabbage to the meat mixture and check seasonings to taste. Add about a half cup of water.
  • 8. Let simmer on low until the cabbage is tender.
  • 9. As soon as everything is ready to go, roll out dough on a floured surface. Cut dough into 12 squares large enough for a heaping 1/2 cup of the cabbage mixture.
  • 10. Place 1/2 cup of filling in the center of one square of dough.
  • 11. Fold up the corners and "just a pinch" to seal them.
  • 12. Place them on a large cookie sheet. Bake at 350 degrees for 30 to 35 minutes, till nice and golden brown.
  • 13. Lightly brush tops of rolls with butter.
  • 14. Serve right from the oven and freeze the rest if there is any. Enjoy!!!
  • 15. You can cut this down. I only do the majority of my baking in the winter so I do it this way and freeze them.

ROASTED GARLIC BURGER

A definite guy-pleasing burger. Mellow roasted garlic seasons the meat and the finished burger rests in a nest inside a "bun" of crusty bread. Quick to put together if you make the Roasted Garlic Paste ahead. The garlic recipe will leave you with extra for other uses. Prep and cook times include both garlic and burger recipes.

1 lb garlic head
1/2 cup olive oil
salt & freshly ground black pepper
1 lb ground chuck
salt & freshly ground black pepper
3 tablespoons roasted garlic paste
1 loaf good crusty bread, cut into 2 sections just big enough to surround the burger with a 1/2 inch border

Steps:

  • Roasted Garlic Paste: Preheat oven to 375°.
  • Remove any loose papery skins from the outside of the garlic heads; cut off the top 1/3 of the heads to open the cloves; set aside for another use; place the heads in a small baking dish, cut sides up; pour olive oil over them and sprinkle with salt and pepper.
  • Cover the dish tightly and bake until 3/4 done, about 45 minutes; uncover and continue to bake another 15 minutes or until the cloves begin to pop out of their skins and brown; cool.
  • Squeeze the cloves out of their skins into a bowl; add the oil from the baking dish and mix well, forming a paste.
  • Store, refrigerated, up to one week.
  • Burgers: Mix the hamburger, salt, pepper and garlic; form 2 burgers, 3" thick, to a size that will fit inside the bread with a 1/2" border all the way around.
  • Split the 2 bread sections and pull out some of the soft center from both sides to make a nest for the burger; toast the cut sides under the broiler or on a grill.
  • Broil or grill burgers to desired doneness; place in bread nest and add condiments of choice.

We use ground turkey to make these juicy, slightly spicy burgers, but you can use beef if that's your preference. The chopped garlic really makes these special, so don't be afraid to add lots!

2 lbs ground sirloin or 2 lbs ground turkey
1 large yellow onion, chopped
8 cloves garlic, minced (or more)
1 medium bell pepper, chopped
1 bunch green onion, white part and half of green stalks,chopped
1 large egg
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1/4 teaspoon Tabasco sauce
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon thyme
1/4 teaspoon cornstarch
1 tablespoon softened cream cheese
1 tablespoon plain breadcrumbs

Steps:

  • In a large bowl, combine all ingredients.
  • Mix well with your hands and shape into patties.
  • If time allows, place burgers in an airtight container and refrigerate overnight to let flavors intensify.
  • Bake, broil, grill or fry burgers the way you like them.

ROASTED GARLIC BURGER

2 pounds ground chuck
Sea salt, preferably gray sea salt, and freshly ground black pepper to taste
1/4 cup Roasted Garlic Paste, recipe follows
1 loaf good crusty bread, cut into 4 sections
1/2 cup extra-virgin olive oil
1 pound peeled garlic cloves, store bought
Gray sea salt and freshly ground pepper

Steps:

  • Preheat the grill. In a bowl, mix the meat, salt and pepper, and the roasted garlic paste.
  • Form 4 burgers by using a mold, the top of a lid, or your hands. Wrap in plastic wrap and refrigerate until you are ready to grill them.
  • Cook burgers over a hot fire until desired temperature is reached.
  • Meanwhile: Split the pieces of bread, and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
  • Place the burger in the bread, and top with your favorite condiments.
  • Preheat the oven to 375 degrees F.
  • Heat an ovenproof saucepan on the stovetop. When it's hot, add the extra-virgin olive oil. Next, add the cloves and season with salt and pepper. Let the cloves begin to caramelize, then put the pan in the preheated oven.
  • Roast cloves in the oven for about 30 minutes or until they are nicely browned. (Starting the garlic on the stove will save at least 20 minutes of roasting time). Let cool.
  • When cool enough to handle easily, put the roasted garlic into a small bowl, mash with a fork and add oil from the pan until a paste forms. Store, tightly covered, in the refrigerator, for up to 1 week.
