CLASSIC CUCUMBER TEA SANDWICHES
Classic cucumber tea sandwiches are easy to make, soft and creamy, and a perfect dainty little bite to serve at tea time!

Steps:
- Blend cream cheese and mayonnaise in a blender until smooth, scraping down the sides as necessary.
- Combine the cream cheese mixture with cucumber, dill, pepper and garlic salt. Mix well.
- Spread the mixture on top of 12 pieces of bread, garnish with dill sprigs and cover with remaining 12 slices of bread to create sandwiches. Cut into triangle halves or into triangle quarters.
- Serve and enjoy!

CUCUMBER SANDWICH RECIPE

- Peel the cucumber, and slice it thinly. I used a simple OXO slicer for quick, even slices.
- Spread soft/room temperature cream cheese on two slices of bread.
- Arrange the cucumber slices, overlapping slightly, on one slice of bread and top with the other.
- Slice off the edges with a sharp serrated knife, wiping with a damp paper towel after each cut. Next, cut into fingers (or triangles). Whether you cut them into fingers or triangles, you'll end up with two finger sandwiches.
- If you need to make cucumber sandwiches ahead of time, keep them in a sealed container with a paper towel inside for a few hours, and refrigerate them.

GRANDMA'S CUCUMBER TEA SANDWICHES
My Grandma and her sisters got together every couple of weeks to play bridge. She always made these sandwiches when it was her turn to host--and spent most of the day in the kitchen guarding the refrigerator to keep all the rest of us from stealing them! I changed the bread to whole wheat, as I like it better, but you can use whatever suits you--we also use pumpernickel or rye.

- In a small mixing bowl, combine the first 8 ingredients; beat until well blended. Stir in the cucumbers, red peppers (if using, onions, olives and parsley. Cover and refrigerate for up to 8 hours.

- Lay the slices of bread on your work service and distribute the cream cheese evenly among each slice, spreading into a thin layer. Arrange the cucumber slices in rows over 3 slices of the bread. Top with the remaining bread, and cut into quarters so there are 4 pieces from each sandwich. Serve immediately.

- Place cucumber slices between 2 paper towels set in a colander. Allow liquid to drain, about 10 minutes.
- Mix cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce in a bowl until smooth.

- Place cucumber slices between layers of paper towels to remove excess moisture.
- In a small bowl, combine the mint, butter, and cream cheese; spread on one side of each slice of bread. Lay the cucumber slices onto the buttered side of 8 slices of bread. Sprinkle with salt. Top with the remaining slices of bread, buttered side down.
- Gently cut the crusts from each sandwich with a sharp knife. Cut the sandwiches in half diagonally and then cut in half again.
