My grandma knew how to make the best pies every year for Thanksgiving. The crust is tender and flaky and so easy to make! You will never buy from the store again!

1 1/4 cups all purpose flour
1/4 teaspoon salt
1/3 cup shortening
4 to 5 Tablespoons cold water

Steps:

  • In a medium bowl stir together flour and salt. With a pastry blender cut in shortening till pea-sized.
  • Sprinkle water on one tablespoon at a time tossing with a fork. Push moistened dough to the side. Mix till all flour is moistened. Don't mix too much or the crust will be hard.
  • Form into a ball and roll out on the floured surface. Turn and flour the dough a few times till it's the size you need.

1/3 c sugar
1/2 c butter, melted
4 c corn flakes cereal

Steps:

  • 1. Add together: sugar, butter, and crushed corn flake cereal crumbs. Press firmly into the bottom and sides of a 9 inch pie plate. Bake at 350 degrees about 7 -9 minutes. Let cool before adding pie filling.
  • 2. Pie fillings: Chocolate, Butterscotch, Coconut.

This is an older recipe I can remember my mom making. I don't know where mom got the recipe (it's in her own writing), but she made it often judging by the spatters. For a change, I've filled the pie with Jello pudding and pie filling (the kind you cook on the stove) and top w' whipped cream. Cooking time is an estimate (I haven't made this myself in a while).

1 cup corn flakes, crushed
1/4 cup sugar
1/3 cup butter, melted
2 cups milk
2 egg yolks
2 1/2 tablespoons cornstarch
1 pinch salt
5 tablespoons sugar
1 teaspoon vanilla
2 egg whites
3 tablespoons sugar

Steps:

  • CRUST:
  • Mix cornflakes, sugar and butter. Press firmly into a greased 9" pie plate and chill.
  • FILLING:.
  • Whisk milk, egg yolks, cornstarch, salt and sugar together in top of a double boiler. Cook over simmering water, stirring constantly, until mixture gets thick.
  • Remove from heat & stir in vanilla.
  • Cool slightly & pour into pie crust.
  • MERINGUE:.
  • Beat egg whites until they form soft peaks.
  • Slowly beat in the sugar until meringue goes stiff.
  • Spread over filling & bake in a preheated 350* oven until golden (should take 10-15 minutes).

1 teaspoon salt
½ cup vegetable oil
3 fluid ounces cold milk

Steps:

  • Sift flour and salt into a bowl. Pour vegetable oil into a 1-cup measure and fill the measure with milk up to the 7-ounce mark. Whisk oil and milk together and pour immediately into the bowl with flour. Mix the crust together with a fork just until it holds together. Do not knead.

This is my grandma's recipe. She was known for her pies. This crust is so light and flaky. Just delicious! My change to this recipe is my rolling technique. I roll between 2 sheets of parchment paper. Grandma rolled on a floured board. But it works for me!

2 1/2 c flour
1 tsp salt
1 tsp sugar
1 c crisco
1 egg, slightly beaten
1 Tbsp lemon juice
3 Tbsp cold water

Steps:

  • 1. Mix flour, salt, and sugar in a mixing bowl. Using a pastry blender (or 2 knives), cut in the Crisco, until pea size pieces form.
  • 2. Add egg, lemon juice, and water, one tablespoon at a time. Toss with a fork until dough will form a ball. Wrap dough in plastic wrap and chill for 30 minutes.
  • 3. Divide dough in half, and form two, 5 inch discs. Roll a disc between 2 sheets of lightly floured parchment paper, to desired size.
  • 4. Carefully place rolled dough into a 9" pie plate. Fill with fruit filling, and top with remaining rolled dough.
  • 5. Trim, fold, and crimp edges. Cut a few vents in the top of the pie. Bake at 425 degrees, for 40 to 50 minutes.
