My grandmother's meatballs--always a treat at Christmas and one of our family favorites! Season meatballs as you would a hamburger.

1 egg
¼ cup water
1 pound ground beef
2 slices bread, crumbled
1 pinch salt and ground black pepper to taste
1 cup ketchup
1 cup beef bouillon
½ cup vinegar
½ cup brown sugar
2 tablespoons cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg and water in a bowl; add ground beef, bread crumbs, salt, and black pepper to eggs and mix thoroughly. Form ground beef mixture into bite-size meatballs; place meatballs into a large baking dish.
  • Bake in the preheated oven until meatballs are browned and no longer pink inside, 25 to 30 minutes.
  • Mix ketchup, beef bouillon, and vinegar in a large saucepan or Dutch oven. Combine brown sugar and cornstarch in a small bowl and stir brown sugar mixture into ketchup mixture. Bring to a boil, reduce heat to low, and stir until sauce is thickened and bubbling and brown sugar has dissolved, about 5 minutes. Add meatballs to sauce, stir until coated, and serve.

2 large eggs, lightly beaten
1 envelope onion soup mix
1/2 cup seasoned bread crumbs
1/4 cup chopped dried cranberries
2 tablespoons minced fresh parsley
1-1/2 pounds lean ground beef (90% lean)
SAUCE:
1 can (14 ounces) whole-berry cranberry sauce
3/4 cup ketchup
1/2 cup beef broth
3 tablespoons brown sugar
3 tablespoons finely chopped onion
2 teaspoons cider vinegar

Steps:

  • In a large bowl, combine first five ingredients. Add beef; mix lightly but thoroughly. Shape into 1-in. balls., Place a third of the meatballs on a microwave-safe plate. Cover with waxed paper; microwave on high until cooked through, 2-3 minutes. Drain on paper towels. Repeat twice with remaining meatballs., In a 2-qt. microwave-safe dish, mix sauce ingredients. Microwave, covered, on high until heated through, 3-4 minutes, stirring halfway. Gently stir in meatballs. Microwave, covered, on high until heated through, 1-2 minutes.

1 pound ground chuck
4 ounces dried bread crumbs
4 large eggs
4 ounces whole milk
6 ounces grated Romano
3 ounces grated Spanish onion
2 ounces finely diced fresh garlic
2 ounces finely chopped fresh Italian parsley leaves
2 ounces finely chopped fresh basil leaves

Steps:

  • Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.
  • Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
  • Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes. Enjoy!

Olive oil
1 pound ground beef chuck
1 1/2 cups grated Pecorino Romano cheese
1 1/4 cups fresh bread crumbs
3 large eggs, lightly beaten
1/4 cup whole milk
1/2 cup minced fresh flat-leaf parsley leaves
1/4 cup chopped fresh basil leaves
1/2 small Spanish onion, grated
3 tablespoons minced garlic
Pinch of kosher salt, or to taste
1/3 cup olive oil
12 cloves garlic, finely sliced
1 large Spanish onion, finely diced
2 (28-ounce) cans imported crushed tomatoes
1 teaspoon kosher salt
1/2 teaspoon freshly ground white or black pepper
1 large handful fresh basil leaves, thinly sliced
1 pound spaghetti, cooked al dente

Steps:

  • To make the meatballs, preheat the oven to 350°F. Brush a rimmed baking sheet with olive oil.
  • Mix the beef, cheese, bread crumbs, eggs, milk, herbs, onion, garlic, and salt in a mixing bowl.
  • Roll the meatballs loosely about the size of a large golf ball, and place on the prepared baking sheet. Bake until cooked through and lightly browned, 35 to 40 minutes.
  • To make the sauce, heat the olive oil in a medium saucepan over medium heat until it begins to shimmer. Add the garlic and onion, and cook until soft and slightly browned, about 5 minutes. Add the tomatoes, salt, and pepper, and stir. Allow the sauce to come to a simmer and cook for 20 minutes. Remove from the heat and add the basil.
  • Add the meatballs to the sauce.
  • To serve, divide the spaghetti among 4 plates, and top with the meatballs and the sauce.

1/2 cup fine dry breadcrumb
1/2 cup milk
1/2 lb ground beef
1/2 lb ground pork or 1/2 lb ground lamb
salt & pepper
1/2 teaspoon allspice
1/2 teaspoon ground ginger
1/4 cup finely chopped onion
1 egg, beaten
6 tablespoons brown sugar
1/2 cup beef broth, undiluted
2 tablespoons butter, melted

Steps:

  • Soak the breadcrumbs in the milk until the milk is absorbed (use a good sized bowl that is big enough to hold the other ingredients).
  • Add the meat, salt, pepper, allspice, ginger, onion and egg, mix til well blended.
  • Bring 2 quarts of water to a boil, add some salt.
  • Roll the meat mixture into golfball (or a bit smaller) sized balls.
  • Drop the balls into the boiling water and cook covered for 15 minutes.
  • Meanwhile heat the oven to 350F and in a saucepan combine the brown sugar, broth & melted butter, stir & heat until the sugar is dissolved and forms a glaze.
  • Place the meatballs in a single layer in a 9X13 baking dish.
  • Spoon the glaze over the meatballs and bake uncovered for 30 minutes.
  • Turn the meatballs a couple of times.
