3 cups cubed apples (1/2 inch)
2 tablespoons lemon juice
1 cup chopped celery
1 cup miniature marshmallows
2/3 cup fat-free mayonnaise
1/2 cup chopped pecans or walnuts

Steps:

  • In a large bowl, toss apples with lemon juice. Add celery and marshmallows. Stir in mayonnaise., Refrigerate, covered, until serving. Stir in pecans before serving.

Yield 2 loaves (12 slices each).

Number Of Ingredients 12

1-1/3 cups all-purpose flour
2/3 cup rye flour
1/2 cup sugar
2 teaspoons baking powder
1-1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
3/4 cup unsweetened apple juice
3/4 cup sweetened applesauce
1/3 cup canola oil
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the flours, sugar, baking powder, cinnamon, baking soda and salt. In another bowl, whisk the egg, apple juice, applesauce and oil until smooth. Stir into dry ingredients just until moistened. Fold in pecans. , Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

6 pounds medium red potatoes
Water
DRESSING:
1 cup water
1/2 cup butter, cubed
1/4 cup white vinegar
2 large eggs
1/2 cup sugar
4-1/2 teaspoons cornstarch
3/4 cup heavy whipping cream
3/4 cup Miracle Whip
SALAD:
1 small onion, finely chopped
2 green onions, sliced
1 teaspoon salt
1/2 teaspoon pepper
3 hard-boiled large eggs, sliced
Paprika

Steps:

  • Place potatoes in a stockpot and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain. When cool enough to handle, peel and slice potatoes; cool completely., For the dressing, in the top of a double boiler or metal bowl over barely simmering water, heat 1 cup water, butter and vinegar until butter is melted. In a small bowl, beat eggs; add sugar and cornstarch. Add to butter mixture; cook and stir until thickened, 5-7 minutes. Transfer to a large bowl; cool completely. , In a small bowl, beat cream until stiff peaks form. Stir Miracle Whip into cooled dressing mixture; fold in whipped cream. Stir in onion, green onions, salt and pepper. Add potatoes; toss lightly to combine. Refrigerate, covered, until chilled., To serve, top with hard-boiled eggs; sprinkle with paprika.

1 (8 ounce) can crushed pineapple, drained
2 cups miniature marshmallows
1 cup flaked coconut
6 ounces sour cream

My grandma has made this for just about every holiday meal. I refuse to eat any other apple salad because hers is the best.

Number Of Ingredients 12

4-5 small red apples (diced)
2 c purple grapes (seedless)cut in half
20 oz can of crushed pineapple
1-2 c chopped pecans
1 c small marshmallows
3 Tbsp lemon juice
1/4 tsp salt
2 egg yolks
2 Tbsp flour
2 Tbsp butter
1 1/2 c pineapple juice( use juice from can of crushed pineapple)
1 c sugar

Steps:

  • 1. Mix pineapple juice, lemon juice, salt, flour, butter, egg yolks(mix these in while mixture still cool or you will end up with scrambled eggs),and sugar together in a small sauce pan. Cook over low heat until thick.(Not quite pudding thick)Stir constantely
  • 2. Cool mixture in refridgerator until completely cool stirring occasionally. Then mix in 1 container of cool whip. While mixture cools cut up fruit.
  • 3. Pour mixture over fruit and nuts and refridgerate until ready to serve.
