1 cup packed brown sugar
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup 2% milk
3 medium tart apples, peeled and chopped
2 tablespoons butter, cubed
2 cups boiling water
Vanilla ice cream, optional

Steps:

  • Preheat oven to 400°. In a large bowl, mix the first five ingredients. Add milk; stir just until blended. Fold in apples. Transfer to a greased 2-1/2-qt. deep baking dish. Dot with butter., Pour boiling water over top. Bake, uncovered, 40-45 minutes or until golden brown. Let stand 15 minutes before serving. If desired, serve with ice cream.

4 cups soft bread cubes
¼ cup raisins
2 cups peeled and sliced apples
1 cup brown sugar
1 ¾ cups milk
¼ cup margarine
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
2 eggs, beaten
¼ cup white sugar
¼ cup brown sugar
½ cup milk
½ cup margarine
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.
  • In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.
  • Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
  • While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

Not really a pudding in the sense that we know pudding in this country. This recipe is from my English grandmother. In Great Britain all desserts are called puddings. I think that is why it is called Apple Pudding. Another name I have seen this recipe called by is Apple Macaroon, whatever you call it, it is wonderful served in the English way with some cream poured over. Or as my husband and his family like it with a scoop of vanilla ice cream.

5-6 large cooking apples
1/2-3/4 cup(s) sugar (i use half brown and half white sugar)
1 tablespoon(s) cinnamon
2 tablespoon(s) butter, unsalted
BATTER
4 tablespoon(s) butter, unsalted
1 cup(s) sugar
2 large eggs
1 cup(s) all purpose flour

Steps:

  • Core, peel and slice apples. Place apples in a greased baking dish. Sprinkle with sugar and cinnamon. Dot with butter.
  • Cream butter, add sugar and cream until light and fluffy; add eggs and beat well.
  • Add flour and mix well. Spoon batter over apple slices.
  • Bake at 350-degrees for about 45 minutes, or until golden brown. Serve warm.
