GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

- Drain pineapple in a colander over a large measuring cup to save juice. Add enough water to make 2 cups total liquid. Heat juice/water mixture over medium high heat and bring just to a boil. Add jello mixes and stir until completely dissolved. Remove from heat and allow to cool slightly, about 10 minutes. In a large bowl, whisk together evaporated milk and mayo until smooth. Slowly add jello mixture to mayo mixture, stirring to incorporate. Fold in crushed pineapple, cottage cheese and nuts. Transfer to a glass 8x8 baking dish. Cover and chill in fridge overnight before serving. To serve, cut into squares and top with whipped cream, if desired.

Served at my grandma's house for every holiday occasion as long as I can remember. You wouldn't know there is cabbage in this unless you saw the ingredient list! Tastes like fruit and whipped cream!

- Drain juice from can of crushed pineapple into a measuring cup.
- Add enough pineapple juice to make 2 cups.
- Bring the 2 cups of juice to a boil.
- Remove from heat and dissolve completely 2 pkgs.
- of lime jello in the juice, stir, stir, stir.
- Add all the cream cheese pieces using a gravy whip to blend.
- Add 6 ice cubes and pineapple, stir until ice dissolves.
- Put in the freezer until cool and syrup-like.
- Fold in chopped nuts, cabbage (shredded very fine), and Cool Whip.
- Refrigerate several hours.
GRANDMA'S JELLO SALAD
When ever I serve this dish I get rave reviews. My grandma used to make this for our holiday meals; it was the only thing that NEVER had leftovers. When most people hear the ingredients. they are often skeptical until they try it. So far it has won over everyone that has tried it. It is so simple to make that you can have it any night. Prep time is time to combine items and cook time is time to chill. Servings are approx.

Steps:
- Mix jello powder and whipped cream in bowl until jello is evenly dissolved.
- Add cottage cheese, 1/2 mandarin oranges (1 can), whole can of fruit cocktail, and walnuts stir until well mixed.
- Garnish top with remaining mandarin oranges and a sprinkle of walnuts.
- Refrigerate for about 1 hour before serving.

Whenever I invite my big family for dinner, my grandchildren request this favorite fruit salad. My sons have always liked it, too - maybe the taste runs in our family! This salad is also good for potluck gatherings.

- In a large bowl, combine 1 cup water and lemon gelatin. Add 1 cup ice cubes, stirring until melted. Stir in pineapple. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until set but not firm., Repeat with the orange gelatin, remaining water and ice. Stir in marshmallows. Pour over lemon layer; refrigerate until firm. , Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in reserved pineapple juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in butter. Cool to room temperature without stirring. Refrigerate for 1 hour or until chilled., Arrange bananas over gelatin. Stir whipped topping into dressing. Spread over bananas. Sprinkle with cheese.

PERFECTION SALAD- GRANDMA'S VERSION
Perfection Salad was invented in 1905 when Knox gelatin ran a recipe contest. A Pennsylvania woman won 3rd place with this salad and, now her salad is famous and the other 2 recipes that got the higher awards are unknown. You never know. :) Here is my Grandma's version of Perfection Salad. I understand it is a little different...

- 1. Combine the 2 packages of lime Jell-O with 4 cups of hot water in a large bowl, stirring until dissolved. Stir in cold water. Immediately add vegetables and well drained pineapple. Pour mixture into a mold or serving dish. Refrigerate until mixture has set (about 2 or 3 hours).
- 2. Prepare the lemon Jell-O package following directions on package. Pour over the first mixture after it has set. Refrigerate the salad for several hours more or overnight. Unmold by dipping into hot water for 10 seconds.
- 3. OPTIONAL: Serve with a sauce made of 1 cup mayonnaise or Miracle Whip thinned with 1-2 tablespoons milk, and sweetened with 1-2 tablespoons sugar. mix well until sugar is dissolved. Adjust amounts of milk and sugar to your taste. Spoon over salad as it is served.
