4 tablespoons butter
1/3 cup flour
3 cups whole milk
1 teaspoon black pepper
4 1/2 ounces dried beef, cut into strips
Texas toast slices (or biscuits, if desired)

Steps:

  • Melt butter in a cast-iron skillet over medium heat until bubbling. Stir in flour, and then add whole milk, whisking until flour is completely incorporated. Stir constantly until the sauce has thickened.
  • Add pepper and strips of dried beef to sauce mixture, stirring until pepper is incorporated and beef is evenly coated. Spoon over Texas toast or biscuit halves; serve warm and top with additional ground pepper, if desired.

An easy way to make an old favorite. We like ours with some white pepper added. From my disintegrating Best-Loved Pennsylvania Dutch Recipes booklet. NOTE: This dish is not for those who are salt-restricted. Soak the dried beef in water first if you wish to remove some saltiness. Prep time is a guess-timate and includes cooking time. (I will make this again and confirm).

1/2 lb dried beef, chopped
2 tablespoons butter (or more if you need it)
1/4 cup flour
2 cups milk

Steps:

  • Melt butter in a frying pan.
  • Brown the dried beef in hot butter.
  • Sprinkle flour over beef and continue cooking until beef and flour are well-browned.
  • Stirring constantly, slowly pour in milk and bring to a boil.
  • Serve on toast, noodles or mashed potatoes.

This was a staple for my family when we had young kids because it was cheap, delicious and easy. These days the kids are all adults and not only do they love it, but all 4 generations in our house love it! We do tend to like things a bit saltier than a lot of folks, so because the beef is already a bit salty, you can leave out the bouillon and just add salt to your taste. Our favorite way to have this is over biscuits.

1/2 cup butter
6 ounces Buddig beef (3-2oz packages, chopped)
1/3 cup flour
4 cups milk
1 teaspoon instant chicken bouillon
1/4 teaspoon pepper (or to taste)

Steps:

  • Melt butter in medium size saucepan. Add beef and saute 1 to 2 minutes or until tender.
  • Stir in flour until smooth and continue to cook for about 1 or 2 minutes more.
  • Slowly stir in milk. Add chicken bouillon and bring to boil over medium heat, stirring occasionally. Boil and stir 1 - 5 minutes or until thickened.
  • Add pepper and salt to taste.
  • Serve over buttered sliced biscuits or buttered toast.

A great alternative to traditional SOS. Lower in fat too! This is a recipie my mother used back in the 1960's using cream of mushroom soup instead of white sauce.

1 (2 1/2 ounce) package dried beef
1 (10 3/4 ounce) can cream of mushroom soup (reduced sodium works great)
0.5 (5 ounce) can whole milk
1 tablespoon butter
1/4 teaspoon white pepper
toasted bread (Rye is great but white is traditional)

Steps:

  • You may want to rinse the beef in cold water to reduce saltiness and dry in a paper towel.
  • Shred the beef into small pieces and cook over medium heat for 3 minutes in butter.
  • Add mushroom soup, milk and white pepper.
  • Simmer for 3-4 minutes and serve over toast.
