GRANDMOTHER'S COLESLAW
I had to estimate amounts, but this is the coleslaw that my Grandmother always made. It is a very simple recipe but is my favorite! I will admit that the carrots and celery seeds are my addition :-) but I hope that you enjoy this coleslaw as much as I do!

Steps:
- Combine cabbage and carrots in medium-large bowl.
- Mix mayonnaise, apple cider vinegar, sugar, and celery seeds together until smooth.
- Pour dressing over cabbage and mix until cabbage is well coated.
- Refrigerate for at least 4 hours.
- Serve!

- 1. Stir vegetables together and place in a serving bowl. Mix dressing ingredients in a mason jar and shake well to blend. Pour dressing over salad. Mix. Cover bowl and refrigerate for several hours before serving. Best made the night before using. Keeps well for several days in the refrigerator.
- 2. You can omit the celery seed if you prefer.

- Shred cabbage, carrots, green pepper, and onion set aside in large bowl.
- Mix mayonnaise, sugar, vinegar, salt, dry mustard, celery seed, pour over shredded cabbage mixture mix well.
- Cover and refrigerate at least 4 hours before serving.

You can even freeze this slaw and when you thaw it out it will still be crunchy and yummy!

Steps:
- 1. Put the cabbage, onion and pepper in a big bowl and sprinkle with the salt and mix together well. Let stand for 1 hour and it will "shrink" down to about 3/4ths to 1/2 of original size. This step is what keeps it crunchy.
- 2. Next stir together in a sauce pan on med. heat on the stove the vinegar,water,sugar,celery seed and mustard seed. Turn on your over head fan to get rid of the vinegar fumes (pretty potent). Bring to a boil and let boil for 3 minutes. Let cool and when the hour is up on the cabbage pour over and mix together well. Let stand for 1/2 hour to meld the flavors.
- 3. Left overs can be put away in the freezer and then thawed out and will still be yummy and crunchy!
