My sister submitted this recipe to her church's cookbook. She got it from a close friend of my mother, who, in turn, got it from her mother-in-law. My Mom says its the best, soft white sandwich bread sh'e ever eaten. I haven't tried it yet, but am putting it here for safekeeping.

Number Of Ingredients 5

3/4 cup sugar
2 1/4 teaspoons yeast (1 package)
4 cups warm water
3 teaspoons salt, heaping
10 cups flour

Steps:

  • Mix 1/2 cup of the sugar with the yeast in 1 cup warm water.
  • Sift the flour with the remaining sugar and salt.
  • Add the remaining 3 cups warm water and the yeast mixture to make the dough.
  • Knead well, then place in greased or buttered bowl, cover, and rise for 1 hour.
  • Knead again and let rise for 2 1/2 hours.
  • Punch down and form into 4 loaves.
  • Place loaves in greased and floured loaf pans, cover, and let rise for 1 hour.
  • Bake at 275 degrees for 50 minutes.

What Grandma used to make! Our family's favorite. The recipe was never written down (that I know of) until she shared it with me when she was in her 90's.

3 cups warm water
3 tablespoons active dry yeast
3 teaspoons salt
4 tablespoons vegetable oil
½ cup white sugar
8 cups bread flour

Steps:

  • In a large bowl, combine warm water, yeast, salt, oil, sugar, and 4 cups flour. Mix thoroughly, and let sponge rise until doubled in size.
  • Gradually add about 4 cups flour, kneading until smooth. Place dough in a greased bowl, and turn several times to coat. Cover with a damp cloth. Allow to rise until doubled.
  • Punch down the dough, let it rest a few minutes. Divide dough into three equal parts. Shape into loaves, and place in three 8 1/2 x 4 1/2 inch greased bread pans. Let rise until almost doubled.
  • Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes. The loaves may need to be covered for the last few minutes with foil to prevent excess browning.

My grandmother's famous recipe. She mad it often and we all loved it. I must admit that I do not know why my family calls this raisin bread, because it has always seemed more like a cake to me.

1 (15 ounce) box raisins
2 cups water
2 cups sugar
1/3 cup shortening
4 cups flour
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon clove
1 tablespoon baking soda

Steps:

  • Place raisins and 2 cups water in sauce pan and bring to boil for five minutes.
  • Remove from heat and add 1 cup cold water.
  • Let cool until it is lukewarm.
  • Cream together sugar and shortening, then add the salt, cinnamon, nutmeg, cloves and baking soda. Mix well.
  • Add raisins and flour to dry mixture. Mix well.
  • Bake in greased and floured cake pan for one hour at 350°F.
  • Recipe is great as is or add some cream cheese frosting.

2 eggs

This bread is from my Amish Grandma's recipe collection. My favorite times with Grandma were always centered around the kitchen and this was one of my favorites to make with her. I've updated it slightly, since Grandma didn't have electricity to work with, but it still tastes (almost) the same. This is still a family favorite at holiday gatherings and with Easter coming up it'll be a hit!

4 3/4-5 1/4 cups unbleached all-purpose flour
2 1/4 teaspoons fast rising yeast
1 1/3 cups milk (whole is best, but I've used skim and low- fat with good results)
3 tablespoons white sugar
3 tablespoons unsalted butter (margarine can be substituted)
1/2 teaspoon salt
2 large brown eggs (white eggs can be substituted)

Steps:

  • In a large bowl combine 2 cups of the flour with the yeast.
  • In a small sauce pan heat milk, sugar, butter and salt to 120-130 degrees F.
  • Slowly add the milk mixture to the flour mixture beating well.
  • Add the eggs and beat well.
  • Slowly add the remaining flour 1/2 cup at a time until dough is moderately stiff.
  • Knead dough until smooth and elastic using stand mixer with dough hook at medium speed for 2 to 3 minutes or 6 to 8 minutes by hand on a lightly floured board.
  • Place dough into a lightly oiled bowl, turning once to coat.
  • Cover bowl with a warm cloth that is slightly damp.
  • Let rise 30 to 45 minutes or until double in size.
  • Punch down and divide in half.
  • Cover portions with the cloth and let rest 10 minutes.
  • Shape dough into 2 loaves and put into greased loaf pans.
  • Let rise again until double.
  • Bake in a pre-heated oven at 375 degrees F 25 to 30 minutes.
  • Remove from pans and cool completely on a wire rack.
  • When completely cool wrap and store in a cool, dry place.

1 (16 ounce) package dry corn bread mix
2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock
2 tablespoons dried sage
salt and pepper to taste

Steps:

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
  • In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
  • Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.
