My mom makes the best waffles and I thought I'd share the recipe with the world!

2 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons white sugar
1 teaspoon salt
2 cups milk
2 eggs
2 tablespoons vegetable oil

Steps:

  • In a large bowl, stir together flour, baking powder, sugar and salt. Add milk, eggs and oil; mix well.
  • Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.

My grandmother makes the greatest waffles I've ever had - and I think a lot of the flavor has to do with her special touch, knowing exactly how thin the batter should be. This is the recipe she gave me, and it is really tasty, but be wary that the batter s-h-o-u-l-d be kind of thin (like thin pancake batter). I sometimes have to use twice the amount of liquid because it is very dry where I live and humid where she's from, so feel free to thin the batter to your liking with water. Don't worry - you won't mess these delicious, buttery waffles up! Serve with butter and homemade syrup (recipe below).

Number Of Ingredients 6

2 1/2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 1/4 cups milk (try powdered milk mixed with water)
2 eggs
2/3 cup shortening, melted

Steps:

  • Sift together flour, baking powder, and salt.
  • In a separate bowl, mix together eggs and milk, then stir in melted shortening (you may substitute oil or butter but the resultant texture won't be quite as good!).
  • Pour into dry ingredients and mix well.
  • *Batter needs to be somewhat thin. Add more water if necessary.
  • Waffle iron has to be good and hot before pouring in the batter. Waffles are done when steam stops (if the waffle iron is hot enough, you should be able to hear the waffles steam. You may also see steam around the edges of it. Be careful!).
  • Grandma's Famous Syrup!: In a saucepan, bring to a boil the following ingredients: 2 cups white sugar, 2/3 cup water, pinch of salt, 1 Tbs. white corn syrup. Simmer about 5 minutes, then add 1 Tbs. Maple flavoring.

1/2 teaspoon salt
3 eggs, seperated
1 3/4 cups milk
4 tablespoons butter, melted
4 tablespoons sugar

Steps:

  • Combine flour, baking powder, salt.
  • In a separate bowl beat egg YOLKS and then add milk and butter.
  • Combine dry mixture with egg+milk+butter mixture. Beat until smooth.
  • Beat egg whites until stiff, but not dry.Slowly add sugar, beating constantly.
  • Mix 1/3 of beaten whites with batter then fold remaining whites in carefully.
  • Pour around 3/4 cup of batter in waffle iron.

1 1/2 cup flour
1/4 teaspoon salt
3 teaspoons baking powder
1/2 teaspoon soda
2 tablespoons sugar
1 cup milk
1 cup buttermilk
2 egg yolks
2 egg whites, beated till stiff but not dry
3 tablespoons vegetable oil

Steps:

  • Mix all ingredients,except for the egg whites and the oil. Fold in the egg whites, then slowly incorporate the oil. Preheat waffle iron, brush with oil lightly before each waffle, even if the iron is non-stick. (Nothing crazier than when you open the waffle iron and the waffle is stuck to everything and won't come out - it can wreck the whole meal...if this happens to you, this recipe is awesome as pancakes as well!- so just improvise at that point..)This recipe makes 6 waffles, in the large 4x squares waffle maker, 3/4 cup batter for each waffle. I usually guage 2 waffles per person, especially if both sauces are around. I have made them for my son's friend who is lactose intolerant and just substituted soy milk for the regular milk and buttermilk...he was a big fan!

2 large eggs, separated
1-1/2 cups whole milk

Sliced fresh strawberries or syrup

  • In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with strawberries or syrup.
