GRANDMA JOAN'S AWESOME BREAKFAST/BRUNCH CASSEROLE
This recipe had been made at every family gathering we have had for many years. Our family absolutely loves it! No matter how much is made, there is never any left! I have never seen a recipe like this posted, so here it is! I hope your family loves it as much as we do! This recipe should be made a day ahead and refrigerated until 30 minutes before baking. Prep time does not include refrigeration time.

Steps:
- Layer 1 box croutons in a 9 by 13 in pan. Set aside.
- Microwave sausage. Cut into bite size pieces. Sprinkle sausage pieces throughout pan over croutons.
- Layer with cheddar cheese.
- Layer cheese with Mushroom soup mixture.
- Beat or whip eggs until egg white and yolk are thoroughly combined.
- Gently stir or whip the 2 1/2 Cups milk into egg mixture until combined.
- Pour egg/milk mixture over casserole. Cover, and refrigerate for 24 hours.
- Let casserole come to room temperature for 30 minutes before baking.
- Bake, uncovered, in a 350 degree oven for 50 - 55 minutes Let rest for 10 minutes before serving.

HASH BROWN BRUNCH CASSEROLE
I got this from cooks.com. I didn't see one like this on here. I made this for our new years eve breakfast and hubby and i both loved it! It was so easy to make and i loved that i made it last night and just poped it in the oven in the morning while i was making the pancakes. The only thing I would do different is to add some hot pepper sauce to the mix(it was a little bland for our taste. I would also maybe add some mushrooms. enjoy!

Steps:
- Heat oil in skillet. Add hash browns, onions and green peppers. Cook until potatoes begin to brown. break eggs into bowl and whisk.
- Spray a 9" x 13" pan with vegetable oil spray. Spread potato mixture in bottom of pan. Top with ham. Pour eggs over all and season with salt and pepper.
- Gently stir to coat all ingredients with egg. Sprinkle with shredded cheese. Cover with foil and refrigerate overnight.
- Bake, covered, for 25 minutes at 375 degrees. Remove foil and bake 5 minutes longer.

EASY AND DELICIOUS POTATO BRUNCH CASSEROLE
No eggs in this, easy to put together and simply delicious! It even makes a wonderful dinner. The complete recipe may be cut in half and baked in an 8 x 8-inch dish. Try this, it is so good!

Steps:
- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- In a large skillet cook the sausages, breaking into pieces with back of the spoon (about 5 minutes).
- Mix in flour, and cook for 1 minute.
- Add in milk or half and half and Parmesan cheese; and cook until the mixture starts to boil and thicken (about 4-5 minutes).
- Season with pepper to taste.
- Pour the shredded hash brown potatoes in the prepared baking dish and toss with salt and pepper (I use seasoning salt for this) then spread out potatoes in the bottom of the dish.
- Top with 1/3 of green onion, then 1-1/2 cups cheddar cheese, then 1/3 green onions, then sausage mixture, then top with remaining cheddar cheese.
- Bake for about 45 minutes, or until potatoes are tender.
- Sprinkle with remaining 1/3 green onions and serve.

- Cube bread and toss with melted butter.
- In a greased 9 X 13 casserole dish add half the bread cubes, half of the cheese, half of the broccoli, all of the ham.
- Next add the rest of the broccoli, cheese, and bread cubes.
- Beat eggs and milk together with salt and pepper then pour over casserole.
- Refrigerate for 2 hours or over night.
- Bake at 350°F for 1 hour.

OVERNIGHT BREAKFAST/BRUNCH CASSEROLE
This is different than your average breakfast casserole. It is so yummy and easy to put together. You can easily make this into a light dish by substituting egg beaters and light cheese. I've made it both ways and both are equally good! Also, if you cut the recipe in half, use 2 whole eggs and 1 egg white. If you're a vegetarian, this is also good without bacon!

- Butter the bottom of a 13x9 inch pan. Place bread cubes into pan, followed by bacon, spinach, and mushrooms. Sprinkle cheese on top.
- Beat eggs together with milk, salt, and mustard. Pour over bread mixture.

CRESCENT CRUST SAUSAGE BRUNCH CASSEROLE
I guarantee you are going to *love* this! This makes a perfect brunch or weeknight dinner, to save time brown the sausage a day ahead. To increase to a 13x9-inch casserole you will need 1-1/2 packages of crescent rolls and all other ingredients will need to be increased slightly, I have even made this without the crescent roll crust!

Steps:
- Grease an 11x7-inch baking dish.
- In a large skillet over medium heat brown the pork sausage meat with onion until browned; place into a large bowl to cool slightly.
- To the bowl with the sausage mixture add in mozzarella cheese, cheddar cheese, half and half cream, eggs, seasoned salt, black pepper and cayenne (if using) mix to combine well; set aside.
- Unroll the crescent rolls then pinch all perforations to seal.
- Spread the crescent roll onto the bottom of the baking dish.
- Bake the crescent crust at 350°F for 10 minutes.
- Remove then spread the sausage mixture evenly over the baked crust.
- Sprinkle with Parmesan cheese (or mozzarella or cheddar) then return to oven to bake for 25-30 minutes or until heated through.

FARMER'S BRUNCH CASSEROLE
I have been making this recipe for about 12 years. I used to make it for brunch but now I serve it for dinner as well. It is loved by all we have served it too. It's great to serve with fresh fruits and "Recipe#126982". If using frozen, defrost first. I have used other cheeses but I find this Monterey Pepper Jack (w/ jalapenos) to work best., cheddar is too bland. NOTE & UPDATE 8/08: I grated red potatoes and the casserole turned out too wet and slimy. UGH. I would suggest purchasing the "Simply Potatoes" or using a potato that bakes up drier. Hope this makes sense.

- Preheat oven to 350°.
- Spray round 2" deep casserole or pie plate with nonstick spray.
- Arrange potatoes evenly in the bottom of the casserole.
- Sprinkle with cheese, green onions & ham.
- Combine eggs, milk, salt and pepper over potato mixture.
- Bake uncovered for 40-45 minutes until center is set and inserted knife comes out clean.
- Let rest for 5 minutes before slicing.
