HAM WITH MUSTARD CREAM SAUCE
This recipe comes from a little book called ABC Jiffy Cookery. I've had it over 50 years. I haven't cooked any of the recipes yet. I'm putting them here so I can find them easier.

Steps:
- Place 1 slice of ham in greased baking dish. Mix mustard and brown sugar. Spread half of it on the ham. Top with other slice and spread with rest of prepared mixture.
- Cover with evaporated milk and bake in 350* oven for 20-25 minutes, basting frequently. Brown slightly under broiler.
- Serve on platter with remaining sauce poured over it.

- Place ham steaks in a large skillet. In a small bowl, combine water and mustard; pour over ham. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes on each side or until heated through. Remove from the heat; stir in sour cream and onions.

SPICY MUSTARD HAM GLAZE (NOT SWEET AT ALL)
I couldn't find a true savory ham glaze, so I made up my own. It turned out so well, I just had to share! I bought a large ham (bone-in of course!) that I wanted to use the left overs, for other yummies later in the week. I don't necessarily like the sweet ham glazes, as it seems to linger with the leftovers. This will be great in scalloped ham and potatoes, ham and beans, omlets, sandwiches.. you name it! - 1. In a small bowl, wisk all ingredients together.
- 2. Pat ham dry with papertowel.
- 3. Schmear all over ham.
- I put mine in the slow cooker for 8 hours on low, or you could bake, roast, smoke, or grill the ham, depending on your preference. You could also marinate the ham before cooking, but I just didn't think about this until the morning of.
- I made a double batch of this to use as a dipping sauce as well. Delish!

- In the top half of a double boiler or a medium metal bowl, stir together the mustard powder, white sugar and flour until blended. Gradually stir in the cream so that no lumps form. Place over a pot of simmering water. Cook, stirring occasionally, until thickened, about 15 minutes.
- Measure vinegar into a cup, and drop the egg yolk in it. Whisk together with a fork, then quickly stir into the mustard mixture until well blended. Let stand over simmering water until ready to serve. This sauce can also be reheated over simmering water if there is any left over.

- In a small bowl, mix together the flour, sugar and mustard powder until evenly blended. Whisk together the milk and egg yolks in a saucepan, and slowly whisk in the mustard mixture. - 1. Mix mustard, sugar, salt and pepper in a pan. Add vinegar and whisk to blend well. Add cream and egg yolks to the pan, put over low heat land cook,stirring til thickened and smooth. Serve. Makes 2 1/2 cups. Store any leftover sauce in refrigerator for 1 to 2 days.
- 2. It will thicken up like mayonnaise and makes an unbelievably good spread for ham sandwiches. A little side note: The cardinal sin when cooking a ham, not matter what kind, is heating it at too high a temperature for too long. The secret is low oven temp, 275, til it reaches an internal temperature of 135, which can take as long as 6 hours. Let ham rest for 15 to 30 minutes before carving.
