GRANDMA'S PECAN BALLS (FROM AUNT KATIE)
I always thought the origin of these cookies was Germany, and my paternal Grandmother set me straight when I asked for the recipe today - it came from Aunt Katie (who isn't really my Aunt, she's my godmother). In any case, here are my most favourite cookies that Grandma makes - I'll have to post the rest of the authentic German recipes she gave me years ago as well... she's been making these since I was kneehigh to a grasshopper!

Steps:
- Preheat oven to 350.
- Cream butter with sugar.
- Add flour and pecans, mix well.
- Roll into balls, about the size of a large gumball, and place on a cookie sheet (I prefer to line mine with parchment, but I'm sure cooking spray would do.).
- Bake at 350 for 20 minutes, or until very lightly browned.
- While still warm, roll in superfine sugar - this is important because the dough does not have much sugar.
NUTTY FINGERS
My grandmother gave me this recipe. I made it for my husbands family get together. Ever since then I have been asked to make this every time we have a family reunion or holiday.

Steps:
- Preheat oven to 300 degrees.
- Cream 2 sticks of butter.
- Add 1/4 cup of powdered sugar, 2 cups all purpose flour, 2 tablespoons vanilla extract, and 1 1/3 cups of chopped pecans.
- Roll into a ball or lengthwise about the size of a finger.
- Bake on greased cookie sheet in preheated oven for 20-25 minute.
- Cool for 1 minute then roll in powdered sugar.
- Enjoy!

You can't go wrong with the combination of butter and pecans in this recipe. I never serve these cookies without receiving requests for it.

- In a large bowl, cream butter and sugar until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in pecans. , Shape tablespoonfuls into 2-in. fingers. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 15-18 minutes or until lightly browned. Roll warm cookies in confectioners' sugar; cool on wire racks.

- Peheat oven to 375*.
- Combine Bisquick, butter, pecans sugar & vanilla in a medium size mixing bowl.
- Add water & stir vigorously with a fork until dough forms a ball & cleans the bowl.
- Shape dough into 24- 2 !/2" long fingers.

- Bake 10-12 minutes at 375*.

- Make finger shapes by taking 1 large tsp of dough and rolling it into an oblong in the palms of your hands. Place on ungreased cookie sheet. May be placed close together as cookies do not raise. Bake for 12-15 minutes or until slightly brown on edges Immediately roll warm cookies in powdered sugar and place on wire rack to cool Makes 5-8 dozen depending on size.
GRANDMA'S PECAN COOKIES
I have fond memories of helping my grandmother make these delicious cookies. It was a family favorite and she brought it to gatherings often. She gave me the recipe in 1967 when I was getting married. Over the years it "disappeared". Imagine my excitement when I found it recently. This is a crispy cooke that is not too sweet. I hope this will be a memory for my grandchildren.

Steps:
- Let butter and eggs come to room temperature.
- Cream butter, brown sugar and white sugar on low speed.
- Slowly add flour and soda blend well.
- Mix in vanilla and pecans.
- Divide dough into three sections. Roll dough into logs about 1 1/2" in diameter. Wrap in wax paper and refrigerate for at least 1 hour. (You can also put rolls in freezer to use at a later date)
- Slice 1/8" thick and place on well greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes until medium brown. Makes about 6 dozen.

Steps:
- Make FILLING 1st, put in fridge till cookies are baked.
- FILLING: Cook on low til thickened, milk, flour.
- Cool in fridge.
- Beat tog marg and crisco.
- Beat well.
- Add vanilla, and sugar.
- Beat well.
- Add the cooled flour mixture& beat, beat beat!
- DOUGH: Measure flour, add a pinch salt.
- Cut in 1 pound marg or butter (as for pie crust).
- Blend in sour ceam (I used plain no-fat yogurt).
- Refrigerate overnite or at least 6 hours.
- Cut dough into 4 pieces.
- Roll out thin, 1 piece at a time (keep rest in fridge til ready to roll).
- Cut rolled piece into 1"x 4" long pieces.
- Wrap loosely around pins, (see NOTE) making sure dough overlaps somewhat, so as to not have"holes" or"gaps".
- Bake 350 about 12-15 minutes or till very lite golden color.
- DO NOT BROWN.
- When cool use pastry bag to fill;NOTE: Some stores sel the box of metal-"pins" to use.
- I have 1 box but it's not enough, so, I use clothes pins also.
