This is such a lovely example of a perfectly designed chocolate cake! If you haven't tried a mayo cake before, this is a must... It's oh-so moist.

4 c all purpose flour
1 c baking cocoa (powerded)
1/2 tsp salt
2 tsp baking soda
2 c regular sugar
2 c mayonnaise (any brand)
3 c cold water
BELOW GRANDMA'S HOMEMADE PUDDING FROSTING FOR CAKE:
2 c water
2 c regular sugar
6 Tbsp baking cocoa (powdered)
2 c milk
6 Tbsp cornstarch
2 Tbsp crisco shortening
2 tsp vanilla extract

Steps:

  • 1. Mix all cake ingredents together in medium mixing bowl and beat with mixer for 3 minutes, pour into 2 8inch well greashed and floured pans. Bake at 350 degrees for 20 to 30 minutes or until tooth pick when insert in middle of cake comes out clean. Let cool then Place onto a clean large plate or cake tray.
  • 2. GRANDMA'S HOMEMADE CHOCOLATE PUDDING FOR FROSTING: In saucepan combine water, sugar and cocoa. While boiling, in small bowl mix milk and cornstarch (set aside). When mixture has boiled, turn heat down to medium, but remove from heat(for now).
  • 3. Again stir cornstarch mix until blended and slowing stir into boiling mixture. Place back on stove over medium heat and add vanilla and crisco. Mixture will begin to thicken and look like chocolate pudding. When pudding has thicken, Pour pudding mixture over cooled cake and serve, any uneaten cake should be kept in Refrigerator.

1 box vanilla cake mix
1 small box vanilla pudding mix
1 cup buttermilk
1/2 cup vegetable oil
3 eggs
Zest of 1 lemon
Juice of 1/2 lemon
Juice of 1/2 lime
2 cups powdered sugar
1 stick unsalted butter
1/4 cup buttermilk
Zest of 1 lemon
Zest of 1 lime
Juice of 1/2 lemon

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cake: In a large bowl, combine the cake mix, pudding mix, buttermilk, oil, eggs, lemon zest and lemon and lime juices. Whisk well, or beat with a hand mixer, until the batter is combined and smooth.
  • Pour the batter into a 9-by-13-inch nonstick baking pan, or use a regular pan coated with cooking spray. Bake until the cake is baked through, 25 to 30 minutes. Remove the cake from the oven.
  • For the glaze: Combine the powdered sugar, butter, buttermilk, lemon and lime zests and lemon juice in a saucepan and whisk well to combine. Bring the mixture to a simmer over low heat. Remove from the heat.
  • Slice the cake into even pieces and drizzle the glaze over the top.

This is my father-in-law's mother's cake recipe from Oklahoma, and I'm posting it for safe keeping. Word (word in our family, that is) has it that no one made a mayonnaise cake like she did. She would always send one back with my husband's family when they made a trip out to Oklahoma to visit from Colorado. The frosting she put on it was boiled sugar frosting, and my father-in-law's father apparently liked frosting so much it was like, "How about a little cake with your frosting?" That's what I've heard anyway. ;) I've tried to make the boiled sugar frosting a couple times, but it doesn't come out right (maybe it's the Colorado altitude, maybe it's my cooking skills, maybe it was a grandma thing [she did have 50 years of making it behind her]. Who knows.), but my husband - the grandchild that loves mayonnaise cake the most out of all of them, so much so that we were gifted the "mayonnaise cake pan" upon the grandmother's passing - likes it just as much with this chocolate frosting. The frosting recipe is adapted from Hershey's and works swimmingly, whether you're a grandma or not. ;) Oh, this cake is also great when it's chilled - it makes it more dense and SO good.

1 1/4 cups sugar
3 tablespoons cocoa, heaping
1 cup mayonnaise (Hellman's is a good kind)
2 cups flour
1 1/4 teaspoons baking soda, plus 1/8-1/4 teaspoon baking soda
1 cup cool water, plus 2-3 tablespoons cool water
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/3 cups powdered sugar
2 tablespoons cocoa
3 tablespoons butter
2 tablespoons milk
1/4 teaspoon vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F and lightly grease a 9x12 baking pan.
  • Mix all ingredients in a medium bowl until you can't see any more flour.
  • Pour into the prepared baking pan and bake for 30 minutes.
  • Let the cake cool completely in the pan on a wire rack.
  • For the frosting: Place powdered sugar and cocoa in a medium bowl (I usually use a 4-cup Pyrex mesuring cup).
  • Heat butter and milk in a small microwave-safe bowl in the microwave until the butter is melted (be careful - if the heat is too high, it'll splatter!).
  • Gradually beat the butter mixture into the cocoa mixture until smooth.
  • Stir in vanilla.
  • Spread the warm frosting over the cooled cake. The frosting makes about a cup or so.
