1 lb chicken tenders
5 tablespoons olive oil
3/4 cup white wine
1 cup chicken broth
1/4 cup parsley
3 minced garlic cloves
2 tablespoons butter
salt
pepper
2 1/2 cups cooked white rice

Steps:

  • Cook chicken tenders in olive oil in skillet until golden brown on both sides.
  • Place in baking dish.
  • Add broth, white wine, garlic, parsley butter
  • Season to taste with salt and pepper
  • bake at 350 for 25-30 minutes
  • serve over white rice and enjoy !

As a boy, I wolfed down my grandmother's fried chicken. I never knew how she made it, but my recipe using potato flakes is crispy close. -David Nelson, Lincolnton, North Carolina

1 large egg
1 cup 2% milk
2 cups mashed potato flakes
1 tablespoon garlic powder
1 tablespoon each dried oregano, parsley flakes and minced onion
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
4 boneless skinless chicken breast halves (6 ounces each)
Oil for frying

Steps:

  • In a shallow bowl, whisk egg and milk. In another shallow bowl, toss potato flakes with seasonings. Remove half of the potato mixture and reserve (for a second coat of breading)., Pound chicken with a meat mallet to 1/2-in. thickness. Dip chicken in egg mixture, then in potato mixture, patting to help coating adhere. Arrange chicken in an even layer on a large plate. Cover and refrigerate chicken and remaining egg mixture 1 hour. Discard remaining used potato mixture., In a 12-in. cast-iron or other deep skillet, heat 1/2 in. of oil over medium heat to 350°. For the second coat of breading, dip chicken in remaining egg mixture, then in unused potato mixture; pat to coat. Fry chicken 4-5 minutes on each side or until golden brown and chicken is no longer pink. Drain on paper towels.

Flavorful way to do baked chicken. It's simple and fool-proof. I serve with marinara sauce for dipping (I just buy jarred sauce because it's easy)! I sometimes make strips, and sometimes I cut into bite-sized chunks or even just leave the breasts whole. Anyway is delish! Enjoy!

1 (1 ounce) envelope Italian salad dressing mix (I prefer Good Season's Zesty Italian)
1/2 cup parmesan cheese, grated
1 teaspoon garlic powder
1/2 teaspoon black pepper
4 chicken breasts, cut into strips

Steps:

  • In a large bowl, mix the first 4 ingredients.
  • Moisten chicken by rinsing with water.
  • Add chicken to bowl and toss to coat well.
  • Place chicken on a foil-lined baking sheet.
  • Bake 15-20 minutes at 400 degrees or until chicken is cooked and juices run clear.
  • Serve with marinara sauce, ranch, or your favorite dipping sauce!

4 skinless, boneless chicken breast halves
Salt and freshly ground pepper to taste
1 tablespoon chopped fresh oregano or 2 teaspoons dried
2 tablespoons flour
2 tablespoons butter
2 tablespoons olive oil
4 ripe plum tomatoes, skinned, seeded and diced small
1 tablespoon chopped garlic
4 tablespoons chopped fresh coriander or basil
2 tablespoons fresh lime juice

Steps:

  • Using a sharp knife, cut the breast halves in half crosswise, then lengthwise into strips 1/2-inch wide.
  • Blend salt, pepper, oregano and the flour well in a flat dish. Add the chicken pieces in one layer. Stir to season, keeping each strip separate.
  • Heat the butter and oil over high heat in a skillet large enough to hold the chicken pieces in one layer. Add the chicken, cook and stir until lightly browned, about 3 minutes. Add the tomatoes and garlic and cook, stirring, for 3 minutes more. Add the coriander and lime juice and continue cooking. Blend well and serve immediately.

1/4 cup sherry or chicken broth
1/4 cup reduced-sodium soy sauce
3 garlic cloves, minced
1 tablespoon honey
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1/2 teaspoon ground ginger
1/2 teaspoon Chinese five-spice powder
1/4 teaspoon crushed red pepper flakes, optional
1/4 teaspoon pepper
1 pound boneless skinless chicken breasts, cut into 1-inch strips

Steps:

  • In a large resealable plastic bag, combine the first nine ingredients. Remove 3 tablespoons for basting; set aside. Place chicken in bag. Seal and turn to coat. Refrigerate for at least 4 hours. Cover and refrigerate reserved marinade. , Drain and discard marinade. Broil chicken 3-4 in. from the heat for 3 minutes; turn strips over. Baste with reserved marinade.
