2 (9 inch) unbaked pie crusts
7 cups peeled, cored and sliced apples
1 cup white sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
  • Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

1 double crust pie crust
2 red apples
2 granny smith apples
1 cup sugar
3 tablespoons butter

Steps:

  • Roll out bottom crust into pie dish.
  • Peel, and cut apples into fine slices. (I use a cheese grater to get them perfect).
  • Mix apple slices and sugar.
  • Place apple mixture into pie crust.
  • Cut the butter into three 1 tbsp slices and distribute in pie.
  • Sprinkle generously with cinnamon.
  • Add top pie crust.
  • Cut four or more slits in top.
  • Bake @ 400° for 50 minutes.

1 ½ cups all-purpose flour
½ cup vegetable oil
2 tablespoons cold milk
1 ½ teaspoons white sugar
1 teaspoon salt
6 Fuji apples, cored and sliced
¾ cup white sugar
3 tablespoons all-purpose flour
¾ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup all-purpose flour
½ cup white sugar
½ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Crust: In a large bowl, mix together 1 1/2 cups flour, oil, milk, 1 1/2 teaspoons sugar and salt until evenly blended. Pat mixture into a 9 inch pie pan, spreading the dough evenly over the bottom and up sides. Crimp edges of the dough around the perimeter.
  • To Make Filling: Mix together 3/4 cup sugar, 3 tablespoons flour, cinnamon, and nutmeg. Sprinkle over apples and toss to coat. Spread evenly in unbaked pie shell.
  • To Make Topping: Using a pastry cutter, mix together 1/2 cup flour, 1/2 cup sugar and butter until evenly distributed and crumbly in texture. Sprinkle over apples.
  • Put pie in the oven on a cookie sheet to catch the juices that may spill over. Bake 45 minutes.

⅓ cup white sugar
1 tablespoon all-purpose flour
1 teaspoon lemon juice
⅓ teaspoon ground cinnamon
7 ½ cups peeled, cored and sliced apples
1 cup raisins
1 recipe pastry for a 9 inch double crust pie
1 egg

Steps:

  • Preheat oven 425 degrees F (220 degrees C). Spray deep dish pie plate with cooking spray
  • Combine white sugar, light brown sugar, flour, lemon, cinnamon, and mix well. Add apples and raisins to sugar mixture; stir until fruit is well coated.
  • Spoon apple mixture into pie crust. Place second piecrust on top of filling, and trim edges. Lightly glaze top of pie with a beaten egg, then sprinkled with a little sugar.
  • Bake till golden brown, about 35 to 40 minutes. Place on a wire rack, and cool 30 minutes.

1 pastry for double-crust pie, chilled (enough for a double crust)
4 lbs apples
3/4 cup sugar
1 lemon, zest of
2 tablespoons quick-cooking tapioca
1/2 teaspoon ground cinnamon
1/8-1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
2 tablespoons graham cracker crumbs (or dry bread crumbs)
2 tablespoons cold unsalted butter, cut into bits
milk or heavy cream
coarse sugar

Steps:

  • Butter a 9-inch deep dish pie plate (Pyrex is recommended).
  • Working on a well floured surface, roll out 1 piece of the dough to a thickness of about 1/8 inch; fit the dough into the buttered pie plate and trim the edges to ½ inch overhang.
  • Roll the other piece of dough into a 1/8 inch thick circle and slip it onto a baking sheet lined with parchment paper.
  • Cover both the circle and the crust in the pie plate with plastic wrap and refrigerate for 20 minutes, while you preheat the oven and prepare the filling.
  • Position oven rack in center of oven; preheat to 425°.
  • Peel, core, and slice the apples; put apples in a large bowl and add the sugar, lemon zest, tapioca, cinnamon, nutmeg, and salt.
  • Toss everything together well; if you have time, let the mix sit for about 5 minutes, until juice starts to accumulate in the bottom of the bowl.
  • Remove the pie plate and top crust from the refrigerator and put the pie plate on a baking sheet line with parchment paper.
  • Sprinkle the crumbs evenly over the bottom of the crust; turn the apples and their juices into the crust.
  • The apples will heap over the top of the crust, pat them down into an even mound.
  • Dot apples with the bits of cold butter.
  • Very lightly moisten the rim of the bottom crust with water; center the top crust over the apples.
  • Either fold the overhang from the top crust under the bottom crust and crimp the crust attractively, or press the top crust against the bottom crust and trim the overhang from both crusts even with the rim of the pie plate.
  • If you have pressed and trimmed the crust, use the tines of a fork to press the two crusts together securely.
  • Use a sharp paring knife to cut about 6 slits in the top crust.
  • Brush the top crust with a little milk or cream and sprinkle it with sugar.
  • Bake the pie for 15 minutes; decrease oven temperature to 375° and bake for another 50-60 minutes, or until the crust is gorgeously browned and the juices bubble up through the top crust.
  • After about 40 minutes in the oven, if the top crust looks as if it is browning too quickly, cover pie loosely with a foil tent.
  • Transfer pie to a rack and let it rest until it is only just warm or until it reaches room temperature.

1 1/2 cups whole wheat pastry flour
1 cup unbleached organic all-purpose flour
2 teaspoons salt
1 tablespoon vanilla powder
1 vanilla bean, split, seeds scraped
3 tablespoons sugar
1 1/4 cups sweet butter, unsalted
1 tablespoon white vinegar, chilled
6 -8 tablespoons ice water
4 tablespoons sweet butter
12 apples, peeled, cored and sliced (mixture of Granny Smith, Fuji or other tart, crisp apples the best)
1 vanilla bean, split seeds scraped
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup sugar
4 tablespoons unbleached all-purpose flour
1 teaspoon salt
2 teaspoons vanilla extract
1/4 cup apple cider vinegar
1/2 cup sour dried cherries, soaked in 1/4 cup Calvados for at least 2 hours
1 egg
1 tablespoon cream
turbinado sugar or coarse raw sugar

Steps:

  • For the crust: Measure out all dry ingredients, combine and place in freezer, keep butter & liquid ingredients in refrigerator for at least one hour prior to preparation.
  • When ready, add dry ingredients to food processor and pulse to mix thoroughly. Add butter cubes and pulse until mixture resembles pea-sized meal. Add vinegar, pulse to mix then add ice water, 1 T at a time, until dough begins to stick together and when pinched by hand, holds together. Remove from processor and transfer to work surface. Divide the dough into two equal parts and gently form into balls, and wrap in waxed paper and refrigerate for at least one hour.
  • For the filling: Mix all dry ingredients, including vanilla bean seeds together. Add 2 T of this dry mixture to roasting pan, along with peeled and sliced apples. Place under broiler and broil until apples are slightly browned but not cooked through. Once nicely browned, remove and add rest of the ingredients, except butter.
  • Adding Filling to Pie Dough: Chill pie plate while you roll out 1 of the dough discs on a lightly floured surface until you get a disc that measure slightly larger than your pie plate and about 1/8 “– ¼” thick. Pull out pie plate and gently place rolled out dough in plate.
  • Add broiled apples mixture, then dot with 4 T butter. Roll out 2nd disc into a circle about 1/8” – ¼” thick and place on top of apples. Pinch top and bottom dough edges together and form a decorative edge.
  • For the topping: beat the egg and cream together in a small dish then brush top and edges of pie with mixture, sprinkle with sugar.
  • Bake at 400 F for 45 minutes Cover edges of pie with aluminum foil if starting to brown too quickly. Turn pie in oven and cook an additional 15 minutes or until done. Cool for at least two hours prior to serving.

I guess Apple Pie has always been one of my most favorite pies! I can still remember my mom, in her little kitchen, peeling the apples and rolling out her delicious, flaky crust. She never had a recipe written down, but I think I got it right...this one tastes just like hers.

crust for 2 9" pies (use for top and bottom)
1 c sugar
1/3 c flour
1 tsp nutmeg
2 tsp cinnamon
dash of salt
8 c thinly sliced, pared apples (my family loves mcintosh)
3 Tbsp butter

Steps:

  • 1. Heat oven to 425'F. Stir together sugar, flour, nutmeg, cinnamon and salt; mix with the apples until all are coated.
  • 2. Turn into pastry-lined pie pan; dot with butter. Cover with top crust, which has slits cut into it, or use a fork to make holes in the top. (This allows steam to escape.) Seal the edges and using your fingers, make a flute all around. Place onto a baking tray, to catch any spills.
  • 3. Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.
  • 4. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft. Bake 40-50 minutes or until crust is brown and juice begins to bubble through slits in crust. If the top starts to get too browned, cover it with foil too
