1/4 cup mustard seeds
2 teaspoons dry mustard
1/4 cup water
1/4 cup dry white wine
1/3 cup raspberry vinegar
1/2 teaspoon salt
1/2 cup raspberry jam, seedless

Steps:

  • Whirl mustard seeds, mustard powder and water in blender 1 minute until coarsely pureed to paste. Let stand at room temperature at least 2 hours. Combine mustard mixture, wine, vinegar and salt in top of small double boiler. Cook over boiling water, stirring occasionally, 10 minutes or until slightly thickened. Return to blender. Add raspberry jam. Whirl until well mixed. Refrigerate in covered container at least overnight or up to 1 month.

1 cup raspberry preserves
1/2 cup Dijon mustard
1 fully cooked bone-in ham (18 to 20 pounds)

Steps:

  • Preheat the oven to 325 degrees F. Mix together the preserves and mustard in a small bowl and set aside.
  • Score the surface of the ham in a diamond pattern, about 1/8 inch deep. Bake according to the package instructions, 2 1/2 hours or longer. About 30 minutes before the cooking time is up, remove the ham from the oven and brush the glaze onto it. Cook until it's nice and glossy. Repeat with another layer of glaze if desired.
  • Serve the remaining glaze in a dish alongside the ham.

Homemade mustard is better than its supermarket counterpart, and it's stupendously easy to make. Here, the combination of yellow and brown seeds makes for a medium-aggressive kick, but you could use all of one variety if you prefer. Use cold water to soak the seeds, and after puréeing, taste your mustard. You can smooth it out with a little honey, or up the zip with horseradish or chiles. Either way, your mustard will mellow out after a few days in the fridge.

1/4 cup brown mustard seeds
1/4 cup yellow mustard seeds
1/2 cup white wine
1 teaspoon kosher salt

Steps:

  • Place mustard seeds in a medium-size bowl. Stir in 1/2 cup cold water and the wine. Cover and let stand overnight.
  • Purée mustard with salt until you reach the desired consistency. Transfer to an airtight container and refrigerate for 24 hours before using.
