GRANDMA'S BROWN BREAD (GRAHAM BREAD)
A very old-fashioned basic quick bread using graham (or whole wheat) flour. My Grandma made it at all holidays... hence the name. She was born in the mid 1880's and probably learned the recipe from her own mother. I had to write it down by standing at her elbow as she made it! Since there is no shortening in this recipe... I recommend whole milk... but skim also works. Make sure to use baking soda... NOT baking powder. Bread is moist, dense, and flavorful.

Steps:
- Preheat oven to 300 degrees F.
- Grease medium sized loaf pan.
- Mix dry ingredients together.
- Add wet ingredients to dry.
- Fold in nuts if desired.
- Batter will be thick.
- Bake in very slow 300 degree oven for about 55-60 minutes. Test near center with wooden skewer.
- Serve warm or room temperature with butter or your favorite spread. Or alone with a cuppa tea!

GRAHAM CRACKER BANANA BREAD
The original recipes called for raisins but I subbed nuts. Tasty and great sliced with a bit of honey on it.

Steps:
- Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan.
- Mix graham cracker crumbs, flour, sugar, baking powder, and salt in large bowl; set aside.
- Beat eggs, milk and oil in medium bowl with wire whisk until well blended. Stir in bananas.
- Add to flour mixture; stir until just blended. Stir in raisins. Spoon into greased loaf pan.
- Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan; cool completely. Cut into 16 slices to serve.
GREAT GRANDMA NORTHRUP'S BROWN BREAD OR GRAHAM GEMS
from my great grandmother on my mother's side. I have tried this and found it very good. You can substitute whole wheat flour for the graham flour if you can't find it. The texture will be a little different but it should still be good.

GRAHAM CRACKER BROWN BREAD
A delicious way to use up leftover graham cracker crumbs. I like cooking this bread in a round loaf pan or coffee can similar to old-fashioned brown bread, but it can also be cooked in a small loaf pan (8x4-inch). This is a dense, not too-sweet bread that is great served with hot dogs and beans. Recipe adapted from Cooking Light (March 2003).

- Preheat oven to 350°F.
- Coat a round loaf pan or coffee can with cooking spray and dust with 4 teaspoons graham cracker crumbs.
- Alternately use 8x4-inch loaf pan.
- Combine dry ingredients (flour-salt) in large bowl.
- Cream butter or margarine in large bowl at medium speed until smooth.
- Gradually add 1 cup graham cracker crumbs, beat until combined (2 minutes).
- Add egg and beat 1 more minute.
- Add molasses and beat until combined.
- Beating at low speed, add flour mixture and buttermilk alternately to batter, beginning and ending with flour until blended.
- Stir in raisins.
- Pour into prepared pan.
- Bake for one hour or until toothpick comes out clean.

- Heat oven to 375°F. Grease and flour bottoms only of two 8 x 4-inch loaf pans. In large bowl, combine graham cracker crumbs and shortening beat until well blended. Add buttermilk, molasses and eggs blend well. In small bowl, combine flour, baking soda, salt and nutmeg mix well. Add to graham cracker mixture mix at low speed until well blended. Fold in raisins. Pour batter into greased and floured pans.Bake at 375°F. for 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes remove from pans. Cool on wire racks. GRANDMA G'S FINNISH RYE/GRAHAM BREAD (BREAD MACHINE)
This was my grandma's bread recipe. There were no amounts, only a list of ingredients. With much testing, I have come up with the recipe that tastes as close as I can get to her bread.

- 1. Add the wet ingredients to your bread machine (water, oil, honey). Next add the salt, potato flakes and oats.
- 2. Into a measuring cup, put the rye flour and graham flour. Add enough regular bread flour to make 3 1/2 cups. Pour this into the bread machine on top of the wet ingredients.
- 3. Make a "well" in the flour mixture and add the yeast. Use the "whole wheat" cycle on your machine, 2 pound loaf, dark crust. Turn the machine on and you will have a delicious loaf in a little over 3 hours. NOTE: WATCH THE CONSISTENCY of the mixture as it mixes. If it seems too dry, add one tablespoon of water at a time until the dough forms a "ball" around the paddle. If it is too wet, add one tablespoon of flour at a time.

- Preheat oven to 325 degrees F. Spray a 9x5 loaf pan thoroughly with nonstick spray. In a small bowl, combine the graham cracker crumbs, flour, baking soda, cinnamon and salt, whisking thoroughly. Set aside.
- In a large bowl, whisk together eggs and brown sugar until smooth. Add in coconut milk and canola oil, whisking until combined. Stir in mashed bananas and vanilla until mixed. Slowly stir in dry ingredients and mix until just combined. Pour batter in the greased loaf pan.
- Place loaf pan on a baking sheet and set in the oven. Bake for 75-85 minutes, or until center is set. If the top begins to brown (mine did after about 45 minutes), tent the bread with aluminum foil. Remove and let cool for at least 30 minutes before cutting.
GRAHAM BREAD (LITTLE HOUSE)
Graham bread (named after Sylvester Graham) is bread made with both white and brown wheat. It requires minimal kneading, but it's also slow to rise. Instead of sugar, this bread uses molasses to feed the yeast. This recipe came from "The Little House Cookbook" by Barbara M Walker, and was served at the church's New England Supper in "Little Town in the Prairie."

- In a small bowl, crumble yeast into 1/4 cup bloodwarm water. Let soak for 5 minutes.
- Meanwhile in a large bowl, combine flours and salt, and make a wide, deep well in the center.
- To the yeast add molasses and 2 cups of bloodwarm water and stir. Piour this liquid into the well and stir around and around at the center. Gradually the batter will thicken into a stiff dough.
- When all the flour is mixed in, dust the dough mass with an extra handful of flour so it no longer sticks to the bowl. Cover with a dish towel and set to rise at room temperature (68 degrees F) for about 2 hours, until doubled in bulk.
- With a floured fist, punch the dough down and turn it onto a floured board. Knead a few times, then pull into a rope and cut in half with a knife. Flatten each half into a rectangle and roll up like a jelly roll.
- Grease loaf pans with drippings. Turn loaves to grease them as you put them into pans. Cover, and set to rise for another 2 hours.
- Preheat oven to 350 degrees F. Bake the loaves about 40 minutes, then remove bread from pans. Return loaves to the oven rack to bake 10 minutes more. Cool well. Slicing will be easiest next day.

GRAHAM BREAD
Graham flour makes this bread especially nutritious. It takes a little time , but it;s worth it. A friend makes this bread, and he gave me the recipe!!

- In a large bowl, dissolve yeast in 1 cup warm water and let stand 5 minutes. Add 1-1/2 cups white flour and beat until smooth.
- Cover loosely with a light towel and let rise in a warm place for 45 minutes.
- Add remaining 2 cups water, molasses or corn syrup, oil salt and graham flour. Beat at medium speed of electric mixer until smooth.
- By hand, gradually stir in additional white flour, enough to make a soft dough, mixing well after each addition so dough is well blended.
- Turn out onto lightly floured board and knead until smooth and elastic, about 8 to 10 minutes. Place in a greased bowl, turning once to grease top
- Cover with towel and let rise in a warm place until doubled in bulk about 1-1/2 hours. Dived dough in half, shape into loaves and place in greased loaf pans.
- Cover and let rise until doubled in bulk, about 1 hour. Bake at 375 degrees for 50 minutes or until done. Remove from pans and cool on wire rack.
