The flavor combination of chocolate, peanut butter, and coconut is heavenly. Try not to eat it all before it sets up!

2 cups white sugar
½ cup evaporated milk
½ cup unsalted butter
3 tablespoons unsweetened cocoa powder, or more to taste
½ cup peanut butter
2 teaspoons vanilla extract
2 ½ cups quick oats
½ cup shredded sweetened coconut

Steps:

  • Bring sugar, milk, butter, and cocoa to a boil in a large saucepan. Let boil until all sugar crystals on the sides of the pan are dissolved, about 2 minutes.
  • Remove from heat and stir in peanut butter and vanilla extract. Stir in oats and coconut until evenly distributed. Quickly spoon tablespoonfuls of dough onto sheets of waxed paper and allow cookies to set up, about 20 minutes.

Number Of Ingredients 5

- 1/2 bag of [a large bag] of coconut
- almost 1/2 bag choc chips
- 1/4 can coconut milk
- about 1/2 can sweetened milk
- cookie sheet lined with wax paper

Steps:

  • in double boiler melt choc chips. stir in sweetened milk til nice and smoothe. then stir in coconut milk til smooth
  • add the coconut 1 cup at a time. i added 3 cups and it did great. blend well. should b real thick.
  • with wooden spoon drop onto wax paper. i put mine in the fridge to set
  • take out and plate. hope u like these.
