Been making this recipe since I was a teenager, it is very easy and tastes a million times better than a mix! These are not cake style brownies, they are very moist and gooey, chewy, chocolaty and delicious! Pecans are my favorite but you can use any kind of nuts you like, macadamia nuts are wonderful in these too.

Number Of Ingredients 9

1/2 cup butter
1 cup sugar
1/3 cup unsweetened cocoa powder
2 eggs
1 teaspoon vanilla
1 cup all-purpose flour
3/4 teaspoon baking powder
1 dash salt
1/2 cup chopped pecans

Steps:

  • Preheat your oven to 350.
  • Melt the butter in a medium saucepan.
  • Remove from heat and stir in sugar and cocoa.
  • Stir in the eggs, one at a time, and vanilla till just combined.
  • Add flour, baking powder, and salt.
  • Fold in the nuts.
  • Pour into a greased 8x8x2-inch baking pan.
  • Bake in oven for 25 minutes or until a toothpick inserted in the center comes out clean. Do not over bake.
  • Cool in pan on a wire rack.

Oooey, Gooey, Rich and Chewy. If you are a fan of cake-like brownies, these are NOT for you. This makes a small pan of brownies that are moist and dense and need no icing. They form a crust that cracks and is a wonderful contrast to the fudgy texture of the brownie. Like all other basic brownie recipes, these are a great base for adding in chunks of chocolate, nuts, or whatever. As an adult, I like them with a 1/2 tsp of espresso powder added. For the brownie purist, the nuts are strictly optional. When I'm having one of those "must have chocolate" days, these are the perfect fix. After 1 brownie, I'm cured.

This recipe is originally from Zingerman's in Ann Arbor, Michigan. It has an extra fudgy flavor and gooey texture.

Number Of Ingredients 9

13 tablespoons butter
6 1/2 ounces unsweetened chocolate, coarsely chopped
1 1/2 cups cake flour or 1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
4 eggs
2 cups sugar
1 1/4 teaspoons vanilla
1 1/4 cups coarsely chopped walnuts, toasted*

Steps:

  • Grease 13 x 9 baking pan; set aside.
  • In a heavy small saucepan, heat the butter and chocolate over low heat, stirring constantly, until chocolate is melted and smooth. Set aside to cool.
  • In a small bowl, stir together flour, baking powder and salt. Set aside.
  • In a large mixing bowl, beat eggs and sugar with an electric mixer on high speed for 5 minutes, or until lemon colored and fluffy, scraping sides of bowl occasionally.
  • Add cooled chocolate mixture and vanilla. Beat on low speed until combined.
  • Add four mixture. Beat on low speed until combined,scraping sides of bowl. Stir in walnuts*.
  • Spread the batter in the prepared pan.
  • Bake in 325 oven for 30 minutes or until brownies are set.
  • Cool in pan on wire rack. Makes 15 brownies.
  • *I substituted 1 cup chocolate chips.

DECADENT TOFFEE BROWNIES

It's the muscovado sugar that gives these brownies its decadent treacle flavor. I've made them while in England and shared them with the teachers of modern languages (I've taught German in Kingston, near London). They were a big hit! I've never made them in Switzerland so far, as it is hard or even impossible to purchase muscovado sugar. I may try to replace the muscovado sugar with brown sugar, but I know it won't be the same. Maybe I should just wait until I go to England again...

12 ounces dark chocolate, in pieces (preferably around 50-60% cocoa solids, 350g)
9 ounces butter, in pieces (250g)
3 large eggs
9 ounces dark muscovado sugar (250g/1 1/2 cups)
3 ounces plain flour (85g/3/4 cups)
1 teaspoon baking powder

Steps:

  • Preheat the oven to 160°C/320°F/gas 3/fan 140°C Butter and base-line a shallow 23cm/9in square cake tin.
  • Melt the chocolate and butter together (you can do this in the microwave, it takes about 2 minutes), then stir well and cool slightly.
  • Whisk the eggs until pale then whisk in the sugar until thick and glossy and well combined. Gently fold in the melted chocolate mixture, then sift in the flour and baking powder and gently stir until smooth.
  • Pour into the prepared cake tin and bake for 30-35 minutes, or until firm to the touch. Test by inserting a wooden cocktail stick into the middle - there should be a few moist crumbs sticking to it. The mixture will still be soft in the centre, but will firm up on cooling.
  • Cool in the tin on a wire rack for at least 1 hour - if you can resist the temptation to eat them ;)-then cut into 16 squares and finish cooling on the rack.

8 tablespoons butter
1/4 cup finely diced onion
4 tablespoons all-purpose flour
2 cups milk
8 ounces sharp white cheddar cheese, grated (you can experiment with cheeses of course, I think I put in bits of a few kinds I had on hand)
1 cup heavy cream
salt
white pepper
1 teaspoon Dijon mustard (or more to taste, regular, not honey)
3/4 lb macaroni or 3/4 lb choice of shaped pasta, cooked, drained, and cooled, tossed with a little butter to prevent sticking
1/2 cup plain breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Meanwhile, melt 4 T. of the butter in a medium saucepan over medium heat.
  • Saute onions until tender and translucent.
  • Whisk in flour to make a roux and cook for a couple minutes, stirring, until golden.
  • Slowly whisk in the milk with a wire whisk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes.
  • Remove pan from heat and whisk in grated cheese. Stir vigorously until cheese has just melted.
  • Then whisk in heavy cream to achieve the desired consistency and season to taste with the salt, white pepper and mustard.
  • In a mixing bowl combine sauce with drained macaroni and adjust salt and white pepper to desired flavor.
  • Transfer mixture to a 13 x 9 inch baking dish and spread it out evenly.
  • Sprinkle bread crumbs on top and dot with remaining 4 T. of butter.
  • Bake until hot and bubbly, about 30 minutes.
  • Let stand 5 minutes before serving.

I only have a couple of favorite recipes for brownies, this one happens to be high on my list, these are the most decadent, rich brownies! Yield is only estimated, depending on what size you cut the brownies. If I have any Kahlua, I always add in about 1/4 cup and omit the vanilla.

1/2 cup butter
2 tablespoons butter (use 10 tablespoons all together)
1 1/4 cups sugar (can use more for a sweeter brownie)
3/4 cup unsweetened cocoa powder, plus
2 tablespoons cocoa powder
2 teaspoons vanilla (or can use 1/4 cup Kahlua in place of vanilla)
2 tablespoons vegetable oil
2 large eggs (eggs must be cold NOT room temperature!)
1/2 cup flour
1/4 teaspoon salt
3/4 cup chopped walnuts (or use both!) or 3/4 cup chocolate chips (or use both!)

Steps:

  • Set oven to 350 degrees (set oven rack to second-lowest position).
  • Grease a 8 x 8-inch baking pan.
  • In a small bowl mix together flour and salt; set aside.
  • In a heatproof bowl combine the 1/2 cup plus 2 tablespoons butter, 1-1/4 cups sugar and 3/4 cup plus 2 tablespoons cocoa.
  • Set the bowl over barely simmering water, and stir until the butter is melted and the mixture is smooth and hot.
  • Remove the bowl, and set aside a short time until the mixture is only warm not hot.
  • Stir in vanilla or Kahlua (if using) and oil with a wooden spoon.
  • Add in cold eggs, and whisk vigorously.
  • When the batter looks thick and shiny and well blended, add in the flour/salt mixture with a wooden spoon, then changing to a wire whisk mix until completely blended.
  • Stir in the nuts and/or chocolate chips.
  • Spread evenly into prepared baking pan.
  • Bake about 20-25 minutes, or until a toothpick inserted in the middle comes out just slightly moist with batter.
  • Let cool completely.
  • Cut into squares.
