GOURMET BOURBON FILET MIGNON CHILI
Steps:
- Melt 1/2 of the butter in a large pot over medium high heat. Brown the ground sirloin and filet. Remove the meat and drain off all but 1/4 cup of the remaining fat and add the jalapeno and onion. Cook for 4 - 5 minutes to soften. Add the meat back to the pot and pour in the bourbon whiskey and raise the heat to high and cooked for 2 minutes. Next add the masa and stir constantly for 1 minute. Quickly add the tomatoes, tomato paste and stock and stir. Reduce heat to a simmer and add the beans, chili powder, cumin, salt, pepper and brown sugar. Simmer the chili for 30 minutes uncovered, stirring occasionally. Finally, stir in the remaining butter and the shredded cheddar cheese. Top with more cheese and a dollop of sour cream.

- In a skillet cook onion in 2 tablespoons of butter over moderate heat until softened.
- In a 6-8 quart heavy kettle melt remaining 6 tablespoons of butter over moderate low heat and whisk in flour. Cool roux, whisking constantly, 3 minutes. STir in onion and gradually add broth and half and half, whisking constantly. Bring mixture to a boil and simmer, stirring occasionally, 5 minutes, or until thickened. See if you have better luck melting yours than I did. To assemble Pretty basic stuff as always. Simply start with a bed of fries, ladled on some chili and top with the melted cheese.
CROCKPOT GOURMET CHILI
This recipe is my own creation for healthy low fat chili with gourmet toppings. Regular chili needs to be dressed up for flavor and fun! The base recipe is very mild for the sensitive pallet. It is easy to make a 5-alarm version by adding cayenne or your favorite habanero sauce. Or, make everyone happy and serve the "super hot sauce" as an additional optional topping. The cool sour cream and tomatoes offset the heat of the chili.

- Heat oil in cast iron skillet or your favorite sautee pan. Sautee onion and garlic until translucent and garlic is fragrant. Do not brown the garlic as it will become bitter.
- Place pork tenderloin and all remaining ingredients in 5 quart crockpot.
- Add sauteed onion and garlic, stir gently.
- Set crockpot on low heat and let cook for 8-10 hours, until pork tenderloin is soft.
- Put toppings in individual dishes or in a lazy suzan. Serve chili in bowls and allow guests to choose their toppings. This makes a great fun community meal!
SEXY, SPICY CHILI FOR THE GOURMET COWGIRL - WSTRN NORTH CAROLINA
I came up with this Chili after trying to match the ingredients in recipe #328352 - an OUTSTANDING recipe! It is so delicious, I figured I would share my version for those who do not have the products for Liza's FABULOUS chili recipe. The different peppers add a number of levels of heat to the chili and the different flavors are discernible. I do believe this is the best chili I have ever put in my mouth! If you do not like spicy foods, keep searching. This chili is spicy, but certainly not over the top torture! I found it paired well with Amstel Light, Corona and Negra Modello!

- Brown meat in skillet and sprinkle with cumin. Brown in large chunks and do not overcook - the insides of the big chunks should be a little pink. While you are browning the meat, heat up a large pot or dutch oven on another burner. If using veggie crumbles you can skip this step.
- In large pot or dutch oven, saute onions and peppers in olive oil for about 5 - 7 minutes. They should just start to turn golden. If using veggie crumbles - add them once the onions start to cook down.
- Add garlic, cans of tomatoes and can of green chilies, cook until heated through (about 5 min or so.) Season with pepper.
- Add cans of beans to tomato mixture along with drained browned ground beef (if not using veggie crumbles).
- Add hot peppers and seasonings.
- Lower heat and let simmer for 2 hours. Taste chili throughout cooking period and adjust all seasonings as needed. I found I needed to add more chili powder as it cooked. Add chipotle seasoning as it cooks until there is just a hint of smokiness. Adjust heat at this point with cayenne.
- Serve with your favorite cornbread.

- In a large pot or dutch oven, heat the oil over medium-high. Add the onions and garlic; saute 3 minutes. Add the crushed red pepper, cumin, chili powder, paprika, ground coriander and Mexican oregano. Bloom the spices for 1 minute.
- Add the ground beef, salt and pepper; cook until browned all over, 4 minutes.
- Add the red wine and cook 1 minute.
- Add the tomatoes, beans, green chiles, brown sugar, honey, vinegar, broth or water and adjust seasonings with salt and pepper. Reduce heat to medium-low, cover and simmer about an hour, stirring occasionally. Remove cover and cook until thickened.

- Grill rolls or baguettes until toasty. Place a dog on the bottom half, top with chili. Garnish with cheese, cilantro, red onion.

- 1. Rinse beans and discard any dark or discolored beans. Cover with water and soak over night. Or follow directions on bag for quick method.
- 2. Saute onion in olive oil until tender. Add garlic, green chilies, cumin, oregano, cloves and cayenne pepper. Saute an additional 2 minutes.
- 3. Place all ingredients except for the velveeta cheese and garnishes in slow cooker; stir to combine.
- 4. Cover and cook 4 to 6 hours on high or 6 to 8 hours on low.
- 5. Add velveeta cheese the last 10 minutes of cooking time. Stir to incorporate.
- 6. Ladle into bowls and top with your favorite ganishes. Serve with a wedge of sweet cheesy cornbread. We also like it served over rice. Enjoy!
