Best-Ever Macaroni and Cheese image

In the South, mac 'n cheese is like everyone's favorite aunt-and this best-ever recipe beats out the rest.

16 ounces uncooked large elbow macaroni, large shells, or cavatappi pasta
6 tablespoons salted butter
⅓ cup grated yellow onion
2 teaspoons dry mustard
1 teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon freshly grated nutmeg
⅛ teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 ½ cups milk
1 ¾ cups heavy cream
2 teaspoons Worcestershire sauce
4 ounces extra-sharp yellow Cheddar cheese, shredded (about 1 cup), plus 4 oz. diced (about 1 cup), divided
4 ounces sharp white Cheddar cheese, shredded, (about 1 cup), plus 4 oz. diced (about 1 cup), divided

Steps:

  • Preheat oven to 350°F. Prepare pasta according to package directions for al dente.
  • Melt butter in a large saucepan over medium. Add next 6 ingredients; cook, stirring, 30 seconds. Add flour, and cook, stirring, until golden, 2 minutes. Gradually whisk in milk and cream. Bring to a boil, whisking occasionally. Reduce heat to medium-low; simmer, whisking, until slightly thickened, 5 minutes. Stir in Worcestershire sauce. Remove from heat; stir in 3/4 cup each of shredded Cheddar cheeses until melted. (Reserve remaining 1/4 cup each of shredded cheeses.) Stir in pasta and diced cheeses; pour into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake on a rimmed baking sheet in preheated oven until bubbly and golden, 30 minutes. Remove from oven; increase oven temperature to broil. Sprinkle with reserved shredded cheeses; broil 6 inches from heat until cheeses are melted and golden, about 2 minutes. Remove from oven; cool slightly on a wire rack, about 15 minutes.

3-1/2 cups uncooked elbow macaroni (about 12 ounces)
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
3/4 teaspoon ground mustard
1/2 teaspoon pepper
Few dashes hot pepper sauce
3-1/2 cups whole milk
5 cups shredded cheddar cheese, divided

Steps:

  • Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. Cook for 1 minute or until bubbly. Stir in the macaroni, milk and 4 cups cheese. , Transfer to an ungreased 13x9-in. baking dish. Cover and bake at 350° for 45-50 minutes or until bubbly. Uncover; sprinkle with the remaining cheese. Let stand for 5 minutes before serving.

This is different twist on everybody's favorite comfort food! It is especially good served with buffalo chicken, wings or tenders.

1 lb macaroni (I like shells)
2 tablespoons butter
1/4 cup all-purpose flour
2 cups whole milk
1 cup whipping cream
3 cups grated white cheddar cheese
1 1/2 cups crumbled gorgonzola
1 tablespoon minced fresh chives

Steps:

  • Preheat oven to 350°F Grease 13x9x2-inch glass baking dish.
  • Cook pasta until l dente, drain.
  • Melt butter over medium-low heat, add flour, cook 1 minute to make roux (do not brown).
  • Gradually whisk in milk and cream, simmer until mixture thickens slightly, whisking occasionally.
  • Reduce heat to low, add grated cheddar cheese and crumbled gorgonzola cheese, whisk until cheese melts.
  • Add cooked pasta to sauce, stir to coat, transfer mixture to prepared baking dish, sprinkle with remaining 1/2 cup blue cheese and bake until sauce begins to bubble. Sprinkle with chives and serve.

2 shallots, peeled
3 cloves garlic
1 teaspoon olive oil
3 pieces bacon, diced, cooked, reserving 1 tablespoon bacon fat
2 tablespoons flour
4 cups heavy cream
1 teaspoon chopped fresh thyme
1 cup shredded Pepper Jack cheese
2 cups shredded Cheddar cheese
Salt and freshly ground black pepper
1 pound penne pasta, cooked
1/2 cup Panko bread crumbs
2 tablespoons melted butter
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F. Place shallots and garlic in a small aluminum foil pouch and drizzle with olive oil. Roast 20 to 30 minutes or until tender. Remove from foil and chop. In a large saute pan, reheat reserved bacon fat over medium heat. Add roasted shallot and garlic and saute for 1 minute. Add flour and stir for 1 minute. Whisk in heavy cream and thyme. Reduce by a third. Stir in cheeses until melted, creamy and thickened. Season to taste with salt and pepper. Remove from heat and gently stir in pasta. Place in a 9X13 casserole dish. In a small bowl, mix together diced bacon, bread crumbs, butter and parsley. Top Mac n Cheese with Panko mixture and bake uncovered at same heat until bubbling and lightly browned on top, 20 to 25 minutes.

four -cheese blend 3 1/2 cups shredded, may consist of monterey jack, mild cheddar, parmesan, and white cheddar
macaroni 8 cups
large spanish onion 1 onion cut into chunks
garlic cloves 10 cloves
unsalted butter 4 ounces one stick
ground oregano 1 1/2 tablespoon
paprika 1 1/2 tablespoon
kosher salt 1 1/2 tablespoon for the sauce, not the water....
pepper 1 tablespoon freshly ground if you can get it
milk 2 cup
heavy cream 1 1/2 cup
sour cream 1 cup
eggs 2 egg slightly beaten
goldfish crackers, cheddar flavor 2 1/2 cup

Steps:

  • pre-heat oven to 350°f in a large pot, combine enough water to cover the pasta and the kosher salt, bring to a boil toss all the cheeses together in a large bowl and set aside boil the pasta til it is about 2/3rds cooked. drain water and set aside in a large bowl toss the hot pasta with about 4 cups of the cheese mixture in a food processor, pureè the onion and the garlic in a pan/pot on the stove, melt the butter until the foam subsides add the onion/garlic pureè to the melted butter (it should sizzle) and lower the heat to low whisk in the salt, pepper, oregano, and paprika to the onion/garlic/butter add the milk, heavy cream, and sour cream and whisk til the mixture comes back to a low simmer add about 6 cups of the remaining cheese mixture to the pot and keep whisking til the cheeses completely melt add the eggs to the sauce mixture, mixing til completely blended pour the cheese sauce into the bowl the the pasta and mix together well transfer the pasta and cheese to a lightly greased 10 by 15 pan scatter the remaining cheese mix on top top the mac and cheese with the pulverized goldfish crackers cover the dish with plastic wrap and aluminum foil bake for 30 minutes
