Steps:
- Heat oil in heavy large skillet over medium heat. Add chopped onion and garlic and sauté until translucent, about 8 minutes. Stir in chopped tomatoes and basil. Cook until mixture thickens, stirring occasionally, about 20 minutes.
- Meanwhile, using spoon, beat butter with Gorgonzola until blended.
- Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return pasta to pot.
- Whisk Gorgonzola mixture into tomato sauce. Add sauce to pasta and stir to coat. Season with salt and pepper. Sprinkle with Romano and serve.
CREAMY GORGONZOLA PENNE
This is one of my all-time favorite recipes for penne pasta with Gorgonzola. It is a bit heavy, but so delish and quick, too! My whole family enjoys this one, even my 3-year-old! You can use fresh spinach if you like, just let it wilt in the sauce. I use frozen spinach for speed. You can also use two 10-ounce packages of spinach if you'd like. Enjoy! Serve with additional Parmesan cheese.

- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and keep warm.
- Melt butter in a large soup pot over medium heat. Stir in Gorgonzola cheese until creamy, 3 to 4 minutes. Pour in heavy cream and cook, stirring frequently, until sauce has thickened, about 10 minutes. Steps:
- Cook pasta according to instructions until al dente.
- While pasta is cooking, steam broccoli in small amount of water in the microwave: 2 minutes on high will probably do it.
- Plunge broccoli in ice water to shock and retain slight bite. Set aside.
- Melt butter in large skillet, then add chicken, garlic, salt, and pepper. Cook over medium heat until chicken is nearly cooked through.
- Add wine and cream, stirring to mix. Simmer, stirring occasionally, for 5 minutes or until the sauce is reduced and thickened. Add flour and cook for one additional minute if sauce is too thin for your taste.
- Add the broccoli, drained pasta, and Gorgonzola.
- Taste and adjust seasonings.
- Serve with freshly grated Parmesan.
- Enjoy with a nice glass of white wine by the fire!

- Cook pasta in a 6- to 8-quart pot of boiling salted water , stirring occasionally, until al dente, 10 to 12 minutes.
- While pasta boils, heat butter in a 12-inch heavy skillet over moderate heat until foam subsides, then cook sage, stirring, 1 minute. - Cook pasta according to package directions. Meanwhile, place broccoli and water in a small microwave-safe bowl. Cover and microwave on high for 2 to 2-1/2 minutes or until crisp-tender. Although I usually post healthy recipes, this one does not fall into that category! It is rich, creamy and decadent. If you like cream sauces, watch out!! This is a recipe my husband developed based on a dish at an Italian restaurant. I think his is just as good.

- Grill or broil chicken breasts; slice into thin strips.
- Cook pasta according to package directions.
- Toss with olive oil, return to pot.
- While pasta and chicken are cooking, melt butter in medium saucepan, heat to boiling, stirring constantly, boil 1 minute.
- Slowly add heavy cream, heat to a boil to reduce, stirring constantly.
- Boil for 2 minutes.
- Reduce heat, add Gorgonzola, parmesan and nutmeg.
- Stir until melted.

- In 10-inch nonstick skillet, melt 2 tablespoons butter over medium-high heat. Stir in onion and garlic to coat with butter. PENNE AND ARTICHOKE HEARTS WITH GORGONZOLA SAUCE
The reworking of a recipe I got from someone else that I tweaked beyond all recognition... My serving size is pretty small because I like to enjoy pasta as a course rather than as the huge main focus of a meal. This is also a brilliant sauce to serve over gnocchi, if you feel so inclined, and I often do.

- Boil water for pasta and cook according to package directions, reserving some of cooking water when draining.
- While pasta is cooking, heat olive oil in large skillet over medium heat.
- Add garlic and saute for 1 to 2 minutes.
- Drain artichoke hearts well, add to skillet and saute 3 to4 minutes.
- Add cheese and heavy cream. Simmer a few minutes until cheese melts.
- Season with black pepper, onion powder and red pepper then set aside.
- Add hot, drained pasta to sauce mixture, thinning if needed with pasta cooking liquid.
- Toss with minced parsley then transfer to serving vessel.
- Top with toasted pine nuts then serve at once.
PENNE GORGONZOLA WITH CHICKEN
Steps:
- 1. Cook the Penne in a large pot of boiling salted water. Drain reserving 1/4 cup pasta water. In a medium skillet add the olive oil.
- 2. Add the chicken and brown on all sides. Add the garlic and cook 30 seconds. Add the wine and scrap up the bits on the bottom of the pan. Bring to a boil and reduce by half. Add the cream and chicken stock. Stir in the Gorgonzola cheese and cook until it's almost melted. Add the reserved pasta water and penne. Cook until the cheese is completely melted and the penne is coated. Stir in the butter until melted. Serve garnished with parsley and Parmigiano-Reggiano.

- In an 8-qt (or large) pot bring about 5 quarts water to a boil, add 2 tsp salt and penne and cook according to package directions.Before you drain pasta, reserve about 1 cup of the pasta water. Drain pasta.
- In a skillet (12in if you have it) bring about 1 - 2 cups of water to a boil. Add remaining 1 tsp salt and asparagus. Cook 5 minutes (or until crisp-tender) and drain. Discard water. Cut asparagus into bite sized pieces and set aside.
- In the same skillet, heat to medium - high and dry pancetta till crisp. Do not drain and add cooked penne and asparagus. If pasta seems "dry" - then slowly add reserved pasta water until pasta is sauced enough to your desire (I usually use about 1/4 cup) - add in cubed (as best as you can cube it) Gorgonzola and gently combine. Enjoy!

ITALIAN SAUSAGE AND GORGONZOLA PENNE
Steps:
- Boil a large pot of water and add 1 heaping tsp. of salt and cook the penne pasta. In a large skillet, squeeze the Italian sausages out of the casing and saute it over medium heat until well done. Lower the heat to low and add chopped onions and saute until soft, about 4 mins. Then turn off the heat and add the gorgonzola cheese and stir until well mixed. Add 2 tbsps of pasta water to the skillet after the pasta has been cooked. Drain the pasta and add to the skillet and stir well until the pasta is coated with sausage and cheese mixture. Add salt and pepper to taste and serve hot.
PENNE WITH SPINACH, GORGONZOLA, AND WALNUTS

- Tip: To wilt the spinach perfectly, put it in a colander and drain the pasta over it.Position a rack in the center of the oven and heat the oven to 350°F. Meanwhile, bring a large pot of generously salted water to a boil. Put the spinach in a colander in the sink. Toast the walnuts on a rimmed baking sheet in the oven until dark golden-brown, 6 to 8 minutes. Set aside. Cook the penne according to package directions. Reserve about 1/2 cup of the cooking water and drain the pasta in the colander over the spinach.
