1 French baguette, sliced into 1/4 inch rounds
¼ cup olive oil or melted butter
2 pears - peeled, cored and sliced
8 ounces crumbled Gorgonzola cheese
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange the baguette slices in a single layer on a baking sheet. Brush the top of each one with olive oil or melted butter. Place a slice of pear onto each piece of bread, then crumble some of the cheese over the top. Sprinkle with walnuts.
  • Bake for 12 to 15 minutes in the preheated oven, or until the pears are browned and the cheese has started to melt.

With all due respect to De Gaulle and his countrymen, I would happily forgo each and every one of France's 246 cheeses for 1 wedge of gorgonzola. For me, it is the king of cheeses, the queen of cheeses, the grand empress of cheeses. This dish is my way of paying respects to it, although I own I am perfectly happy to eat it all alone (both me and the cheese). If you want cheese at the end of a dinner party, then this is the way to do it. And while it's not an Italian recipe, it is entirely Italian in inspiration. For me it's Autumn in Milan cast in food.

2 pears (approximately 1 pound total weight) each cut into 1/8's unpeeled and uncored)
2 tablespoons olive oil (regular, not extra-virgin)
3 tablespoons Marsala
2 tablespoons honey
1/2 cup walnut halves
1 pound ripe gorgeous Gorgonzola in perfect condition; it should never have seen the inside of your fridge

Steps:

  • While you are cutting the pears, let the oil heat in a large frying pan/skillet.
  • Fry the pears for 3 minutes a side, and while they are frying whisk the Marsala and honey together in a cup.
  • When the pears have had their time, add the Marsala-honey mixture and let it bubble up around the pears, and then transfer them, all bronzed and syrupy, to a plate.
  • Add the walnuts to the dark juices left in the pan and stir-fry them for about a minute until they are themselves darkened in part and sticky all over. Remove them to the plate with the pears and add the Gorgonzola.

2 1/2 to 3 cups Gold Medal™ Better for Bread™ flour
1 package regular active dry yeast (2 1/4 teaspoons)
1 cup very warm water (120°F to 130°F)
1 teaspoon salt
1/3 cup chopped walnuts
1/3 cup crumbled Gorgonzola cheese

Steps:

  • In large bowl, mix 1 1/2 cups of the flour and the yeast. Add warm water. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Cover tightly with plastic wrap; let stand about 1 hour or until bubbly.
  • Stir in salt and enough remaining flour to form a soft dough. On lightly floured surface, knead dough 5 to 10 minutes or until dough is smooth and springy (dough will be soft). Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Sprinkle walnuts and cheese over dough. Cover bowl loosely with plastic wrap; let rise in warm place 1 hour to 1 hour 15 minutes or until double in size. Dough is ready if indentation remains when touched.
  • Grease large cookie sheet with shortening or cooking spray. On lightly floured surface, knead dough until nuts and cheese are worked into dough. Sprinkle top of dough with flour. Divide dough in half. Gently shape each half into a narrow loaf, about 12 inches long. Place about 4 inches apart on cookie sheet. Using spray bottle with fine mist, spray loaves with cool water. Let rise uncovered in warm place about 1 hour or until double in size.
  • Place 8-inch or 9-inch square pan on bottom rack in oven; add hot water to pan until about 1/2 inch from top of pan. Heat oven to 425°F.
  • Carefully cut 1/4-inch-deep slashes diagonally across loaves at 2-inch intervals with sharp serrated knife. Spray tops of loaves with cool water. Place loaves in oven and spray again.
  • Bake 15 to 20 minutes or until loaves are deep golden with crisp crust and sound hollow when tapped. Remove from cookie sheet to cooling rack. Cool completely, about 1 hour.

A nice ending to dinner. Creamy cheese with a little tang and the sweetness of a combination of dried and fresh pears makes this just a wonderful "different" dessert. My friends ask for this every time I have a dinner party. It is just that dessert that is completely unique and stands of its own. Now I take some short cuts. I use wonton wrappers, I make them the day before and you can actually boil them the day before, so dessert is 3 minutes in a saute pan and you can have them on the table. Don't think you have to do it all in one night

3/4 cup dried pears, fine chopped
1 1/2 cups Anjou pears, fine chopped
7 ounces gorgonzola, crumbles
3 1/2 ounces ricotta cheese (not low fat, use the good stuff)
2 tablespoons shallots, fine chopped
1 teaspoon ground black pepper
wonton wrapper
4 tablespoons butter
2 tablespoons white wine
1 teaspoon fresh rosemary, fine chopped
1/2 cup chopped fine chopped walnuts
salt
pepper

Steps:

  • Filling -- In a medium non stick sauce pan on medium heat add the pears, dried and fresh, shallots and cook until the pears start to break down. The pears should give enough moisture so no oil or butter is needed. Cook until they are soft but not "mush." You still want a little texture to it. Remove and let cool.
  • Add the cooled pear mix to the gorgonzola, ricotta and pepper and mix well. I like to chill this before I use this as a filling.
  • Make the ravioli -- take a wonton wrapper and wet the edges just using water and your finger and then add a teaspoon of the filling to the wonton and press corner to corner to make a triangle. Press well to make sure the edges are sealed and get all the air out around the center around the filling. Once done, move to a cookie sheet lined with parchment or wax paper until you finish making the rest of the raviolis.
  • In a large pot of boiling water it is time to cook the ravioli. I like to cook this on a medium boil. NOT on high. To high of heat will just cause the raviolis to bread up. Add the raviolis 6 or 7 at a time, don't over crowd the pot and boil 1-2 minutes until they float to the surface. Once they float -- they are done. Remove and set on a cookie sheet until cooled.
  • Now you can pan saute and serve them now or you store them in a ziplock for a day or so until ready.
  • Saute -- In a medium non stick pan add 1 teaspoon of the butter and heat to medium. Add the ravioli and lightly pan sear. You just want to lightly brown and slightly crisp up, just a minute or so per side is all they need, and to heat up. Remove the ravioli to a serving bowl and cover.
  • Sauce -- Add the wine to the pan and then the remaining butter, rosemary and walnuts, a little salt and pepper to taste. Cook another minute and pour over the ravioli.
  • Enjoy them! They are a treat.

10 rosemary and olive oil Triscuit crackers
50 g gorgonzola
2 pears
10 walnuts
honey, for drizzling

Steps:

  • Slice a pear along the side and place a piece on the cracker. Put a piece of the gorgonzola cheese on top of the pear slice.
  • Breakup the walnuts into smaller pieces and place them on top of the cheese. The cheese should hold them to the canape.
  • Drizzle some honey to sweeten. Tip: You can also add a slice of date instead of honey.

2 12-inch baguettes
2 ripe pears, sliced thinly
1/2 cup walnuts
12 ounces gorgonzola

Steps:

  • Cut each baguette in half lengthwise and then in half widthwise (you will now have 4 top and 4 bottom slices). Distribute pear slices evenly over the 4 bottom slices of bread. Crumble walnut pieces evenly over the pears. Crumble gorgonzola evenly over the pear-walnut combination. Place top half of bread on each of the bottom halves. Wrap in foil and place in 350°F. oven for 3-5 minutes or until cheese melts.
