Five-Bean Soup Mix in a Jar image

This five-bean soup mix in a jar requires minimal effort and minimal cost and is absolutely delicious, which basically makes it the perfect gift! Don't forget the printable gift tag--it has the directions for making the soup! Makes 3 quart-size mason jar soup mixes.

1 (16-oz) package pinto beans
1 (16-oz) package split green peas
1 (16-oz) package great northern beans
1 (16-oz) package black beans
1 (16-oz) package red beans or red lentils
1 T black pepper
1 T paprika
1 T dry mustard
2 T dried minced onion
2 T sea salt
2 T garlic powder
2 T dried oregano
1 tsp dried rosemary
1 tsp dried basil
6 bay leaves
3 vegetable bouillon cubes
3 quart-size mason jars with lids
Printable gift tag with directions

Steps:

  • Layer 3/4 cup pinto beans in jars; shake gently to level beans. Repeat with 3/4 cup of peas, northern beans, black beans and red beans. Set jars aside.
  • Combine pepper, paprika, dry mustard, minced onion, salt, garlic powder, oregano, rosemary and basil in a small bowl.
  • Place 3 T of spice mix in a snack-size ziploc bag. Add 2 bay leaves and 1 bouillon cube. Gently shake contents to one side of bag and close. Fold bag around spices and place in top of each jar.
  • Place lids on jars, sealing tightly. Tie with ribbon and attach printable gift tag with instructions.

This recipe is from a bean soup gift pack I developed as a fund-raiser for our church. We provide it along with the beans and a packet containing all the spices. The recipient just adds water and a can of tomatoes for a delicious pot of savory soup. -Doris Cox, South Orange, New Jersey

1/4 cup each dried yellow split peas, lentils, black beans, great northern beans, pinto beans, baby lima beans and kidney beans
1/2 cup each dried green split peas, black-eyed peas and navy beans
8 cups water
1/3 cup dried minced onion
1 tablespoon salt
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1 teaspoon garlic powder
1/2 teaspoon celery seed
1/2 teaspoon dried basil
1/4 to 1/2 teaspoon crushed red pepper flakes
2 bay leaves
1 can (28 ounces) crushed tomatoes

Steps:

  • Sort beans and rinse with cold water. Place the split peas, lentils and beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., Drain and rinse, discarding liquid. Add water and seasonings; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender., Stir in tomatoes; increase heat to medium. Cook, uncovered, for 15-30 minutes. Discard bay leaves.

This brings much luck and never to go hungry and always wanting to share with those in need or want. I make 12 pint jars and give for Christmas gifts. Oh So So so perrrfect for the cold weather to come......................

1/2 cup dried split yellow peas or 1/2 cup dried split green peas
1/3 cup chicken bouillon granules or 1/3 cup vegetable bouillon granules
1/4 cup pearl barley
1/2 cup dry lentils
1/8 teaspoon red pepper flakes
1/2 teaspoon black pepper
1 teaspoon basil
1 teaspoon garlic powder
1/4 cup dried onion flakes
1 pinch saffron (but really good) (optional)
1/2 tablespoon dried Italian seasoning
1 -2 tablespoon sun-dried tomato, diced very fine
2 tablespoons dehydrated mixed vegetables
1/2 cup wild rice, uncooked (I used Lundberg wild rice blend consisting of Long grain brown rice, sweet brown rice, wild rice bit)
2 bay leaves
1/2 cup alphabet pasta
1 lb ground chicken, beef or 1 lb turkey
2 garlic cloves, minced
1 (28 ounce) can diced tomatoes
6 ounces tomato paste
2 1/2 quarts hot water

Steps:

  • In a 1 1/2 pint jar, layer the bouillon, to the Bay leaves. Tap jar so ingredients settles. Wrap the pasta in a baggie, and place in the jar. Seal tightly.
  • Attach a label to the jar with the following instructions:.
  • TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef and drain excess fat add garlic to brown slightly. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 minutes, or until the pasta, peas, lentils and barley are tender.
  • Season with salt and pepper if needed.
