GOLDEN LEEK AND POTATO SOUP
Most potato leek soups are smooth, creamy and decidedly on the richer side. This one doubles the ratio of leeks to potatoes, giving you something sweeter, chunkier and homier, brimming with soft pieces of potato and browned slivers of leeks. A tablespoon or two of heavy cream, drizzled into the soup just before serving, is an optional luscious touch.

Steps:
- Halve the leeks lengthwise and rinse away any grit. Thinly slice the leeks crosswise. In a small square of cheesecloth, tie together bay leaves, thyme, sage, parsley and celery leaves if using.
- Melt the butter or heat the oil in the bottom of a large pot over medium-high heat. Stir in the leeks and cook, stirring frequently, until leeks are soft and dark golden brown, 10 to 15 minutes. Stir in the garlic for the last 3 minutes of cooking.
- Stir in stock or water, the sachet of herbs, the salt and pepper. Bring to a boil over high heat, then reduce immediately to medium-low; simmer for 5 minutes.
- Add the potatoes and simmer soup until potatoes are very tender and falling apart, about 45 minutes. Taste and adjust seasoning. If desired, drizzle a small amount of cream into each bowl when serving, and top with parsley for garnish.

Steps:
- In a large stock pot add potatoes, celery, onion, chicken bouillon, water and parsley flakes. Season with salt and pepper and simmer until vegetables become tender.
- In a separate bowl mix flour and milk. Once it is well blended, add to soup mixture and cook until soup becomes thick.
- Stir in cheese, cooked ham or hamburger and simmer until cheese is melted.

MOOSEWOOD GOLDEN SPLIT PEA AND SWEET POTATO SOUP
I wanted to save this before I tried it. It is a bit different from the other Moosewood Golden Split Pea Sweet Potato Soup already posted on Zaar. This came from a January 1992 Bon Appetit article on the Moosewood Restaurant.

Steps:
- Heat oil in large saucepan over medium high heat. Add onion and jalapeno and saute until tender, about 3 minutes.
- Stir in ginger and next 4 ingredients and cook 1 minute.
- Mix in 7 cups water, sweet potatoes and split peas.
- Bring to a boil, reduce heat to medium low, cover and simmer about 1.5 hours until potatoes and peas are very tender.
- Whisk soup vigorously for a smoother texture and thin with additional water if needed.
- Season with salt and pepper.
- Top each serving with a tablespoon of yogurt, a lime slice and some cilantro to serve.

SAVORY GOLDEN LENTIL AND SWEET POTATO SOUP
The combination of sweet, savory, and spicy flavors makes this hearty (check out that protein and vitamin A content!) but healthy soup a perfect choice for whatever you happen to be in the mood for. The spices I chose gives it almost an Indian or Moroccan feel; whichever gastronomic prefix sounds tastier to you. It serves well both hot and cold and is delicious over some steamed rice or any other starchy filler.

- Soak the lentils in roughly 1 cup of cold water or green tea for at least 30 minutes.
- In a medium-sized stock pot over medium-high heat, sauté the diced onions and garlic in 1/4 cup of the chicken broth until the onions become translucent (around 5 minutes).
- Add the carrots, sweet potatoes, and red wine. Cook for around 1 minute or until the wine becomes very fragrant.
- Add the lentils, water, and chicken broth. Bring to a rolling boil, stirring the mixture occasionally.
- Reduce the heat. Add the red pepper flakes and fennel seed and cover, allowing the soup to simmer for about 20 minutes or until the lentils and sweet potatoes begin to fall apart.
- Remove the lid and add the spices. If you would like to get a thicker consistency, kick the heat back up and reduce until it hits the desired thickness. You may want to adjust the amounts of salt and pepper, depending on your own tastes.
- Serve the soup either on its own or over a starch with a dollop of raita (thick yogurt mixed with vegetables) or sour cream. Garnish with whatever you like (Featured in the photo is yogurt, carrot, and a dash of paprika.).

This is a warm, comforting soup. Perfect as a side or the main event. I like to double this recipe if I am serving more than two. I also like extra cheese. If you desire a little extra spice, add some chili powder or cayenne. I obtained this from a traveler's internet cookbook.

- Place potatoes, onion, carrots, water, bullion, salt, and pepper in medium sized pot and boil until potatoes are done, about 15 minutes, depending on the size of your potato pieces, stirring occasionally.
- Remove from heat. Carefully mash contents of pot until only some potatoes remain in tact.
- Add milk and sour cream, reserving 4 teaspoons of sour cream for garnish, if desired.
- Return to low heat and stir until soup is warm and sour cream is broken up. Do not boil.
- Serve immediately, with dollops of reserved sour cream and chives.

- Preheat oven to 375 degrees. To prepare soup, melt butter in a Dutch oven over meduim heat. Add leek; cook 10 minutes or until tender, stirring occasionally (do not brown). Add potatoes, water, salt, broth, and 2 thyme sprigs. Bring to a boil; reduce heat, and simmer, uncovered, 20 minutes or until potatoes are very tender. To prepare cheddar toasts, place baguette slices in a single layer on a baking sheet. Bake at 375 degrees for 7 ninutes or until toasted. Turn slices over; coat with cooking spray, and sprinkly 1 tablespoon cheese over each sliced. Bake 5 minutes or until cheese melts. Sprinkle evenly with red pepper. Remove pan from heat; discard thyme sprigs. Partially mash potatoes with a potato masher; stir in cream. Sprinkle with black pepper. Serve with cheddar toasts. Garnish with Thyme sprigs, if desired.
