2 cups mashed potatoes (cooled)
1 egg (beaten)
1 onion (minced)
1/4 cup all-purpose flour
1/2 cup Parmesan cheese (grated)
1/4 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Gather the ingredients.
  • Mix together the mashed potatoes, beaten egg, and onion in a medium bowl.
  • Add the flour, cheese, salt, and pepper, and stir well with a wooden spoon.
  • In a large nonstick skillet over medium heat, heat the olive oil and butter together until the butter melts and the mixture starts to sizzle.
  • Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 3-inch circles that are about 1/2 inch thick. Cook the potato patties until the bottom is browned and crisp, which will take about 3 to 4 minutes.
  • Carefully turn each patty over with a spatula and cook the second side until it is brown and crisp, about 3 to 4 minutes longer.
  • Remove the patties from the pan and drain briefly on paper towels.
  • Serve the patties immediately with ketchup or salsa or any other sauce you'd like. Enjoy.

My family loves it and I make potato patties with meatloaf for dinner. It is so easy to make patties and it is so delicious and tasty.

3 lb potatoes, peeled and chopped
4 large eggs, divided
1/2 c grated parmesan cheese
1 Tbsp fresh chopped parsley
2 tsp salt
2 Tbsp water
1 c all purpose flour
2 c seasoned bread crumbs
vegetable oil for deep-frying

Steps:

  • 1. Combine potatoes and enough water to cover in a large saucepan. Cook over medium-high heat until potatoes are tender, about 20 to 25 minutes; drain. Beat potatoes until slightly cooled. Beat 2 eggs in a small bowl. Add to potato mixture and mix well. Stir in Parmesan, parsley and salt. Shape into 15 (3-inch) patties. Combine remaining eggs and the water in a small bowl and mix well. Coat potato patties with flour, then dip in egg mixture. Coat with bread crumbs. Arrange in a single layer on a baking sheet. Chill, covered, for 1 hour. Preheat the oven to 275ºF. Preheat vegetable oil in a deep fryer. Deep-fry potato patties in hot oil until golden, about 3 minutes; drain on paper towels. Remove to a baking sheet. Bake for 10 minutes. Serve with spicy mustard, if desired.

1 cup all-purpose flour
1 onion, diced
1 egg
½ teaspoon ground black pepper
½ teaspoon salt
½ cup vegetable oil, or as needed

Steps:

  • Mix mashed potatoes, flour, onion, egg, black pepper, and salt together in a bowl until batter consistency.
  • Heat vegetable oil in a skillet over medium heat. Drop 4-inch circles of batter into hot oil. Cook until golden brown, about 5 minutes per side. Remove with a slotted spoon and drain on paper towels. Repeat with remaining batter.
