CRUNCHY GOLDEN TROPICAL GRANOLA
I love tropical fruits for many reasons-they are sweet and juicy, have a luscious texture and fragrance, can be used in both savory and sweet dishes and they store well in the freezer. When tropical fruits are not in season, I buy them dried to make a granola that I can enjoy any time of the year. Coating the granola with finely ground banana chips is one way I ensure every bite has that punch of tropical flavor!

Steps:
- Preheat the oven to 325 degrees F. Line a rimmed baking sheet with parchment paper.
- Put half of the broken banana chips in a food processor. Process until finely ground to the consistency of breadcrumbs. Alternatively, crush the chips in a resealable plastic bag with a rolling pin. Set aside.
- Combine the remaining broken banana chips with the oats, dried pineapple and mango, macadamia nuts, coconut chips and sesame seeds in a large heatproof bowl. Set aside.
- Stir to combine the coconut oil with the maple syrup, vanilla extract, cinnamon, ground ginger and salt in a small saucepan. Cook over medium heat until just warm, about 2 minutes. Pour into the large bowl and stir to combine, ensuring everything is evenly coated. Sprinkle with the ground banana chips and stir again to evenly coat the granola.
- Spread the granola on the prepared baking sheet in an even layer. Bake until evenly golden brown, 35 to 40 minutes, stirring 3 times (about every 10 minutes), to ensure it toasts evenly. Remove from the oven and let cool completely before storing.
- Enjoy the granola as is, in milk or as a topping for yogurt, parfaits, smoothie bowls, ice cream or fruit salad.
GOLDEN CINNAMON GRANOLA
Steps:
- In a small bowl, stir the butter, honey, cinnamon and salt until well blended. Combine the oats, coconut and walnuts in a greased 13-in. x 9-in. baking pan. Drizzle with butter mixture; stir to coat evenly. , Bake at 275° for 50-60 minutes or until golden brown, stirring every 15 minutes. Add raisins. Cool, stirring occasionally. Store in an airtight container.

- In a large bowl, combine the first eight ingredients. In a saucepan, cook and stir the oil, brown sugar, honey, water and vanilla until sugar is dissolved. Pour over dry ingredients and mix well. , Transfer to a greased 13-in. x 9-in. baking pan. Bake at 275° for 1 hour or until golden brown, stirring every 15 minutes. Cool completely. Stir in raisins or apricots.

- Preheat the oven to 250 degrees.
- In a large bowl, toss together the oats, coconut, almonds, sesame seeds, wheat germ, and salt. Separately whisk together the oil, honey, water, and vanilla; stir it into the oat mixture.
- Spread the granola on 2 rimmed baking sheets. Bake for 1 to 1 1/2 hours, or until golden brown. Stir after 10 minutes and again after 30 more minutes. Remove from the oven and toss with the raisins and cranberries. Cool completely and store in an airtight container. Serve with sliced bananas or berries and milk or plain yogurt.

- Preheat oven to 300°F. Place oats on large rimmed baking sheet. Bake until oats are lightly toasted, stirring occasionally, about 15 minutes. Transfer baked oats to large bowl.
- Increase oven temperature to 350°F. Spray same rimmed baking sheet with nonstick spray. Mix shredded coconut, all nuts, and sesame seeds into baked oats. Whisk maple syrup, vegetable oil, dark corn syrup, and light molasses to blend in small bowl. Pour over oat mixture; toss to coat evenly. Spread granola on prepared rimmed baking sheet. Bake 12 minutes. Mix in raisins. Bake until deep golden, about 12 minutes longer. Cool granola on sheet.

- Preheat the oven to 300 degrees F. In the container of a blender, put in the oil, honey, syrup, peanut butter, apple juice, cinnamon, ginger and cloves. Mix well. Remove the mixture to a large mixing bowl and add the oats, bran, both types of pecans, almonds and cashews. Mix thoroughly.
- Spread the coconut on a jelly-roll pan and bake in the oven for 20 minutes. Stir once halfway through the cooking time. Let cool and reserve. Use two metal baking pans that measure 19"x12"x1 3/4" and line each with a piece of parchment paper. Divide the granola equally between the pans and toast for 1 hours, stirring occasionally, until the granola has an allover golden color. Remove from the oven and add the toasted coconut. When the granola has cooled completely, store it in an airtight container for future use.

Thinking of "Starting our mornings of right" I just recently developed this granola recipe. All natural, I believe it gets your "WHOLE BODY" off to a GREAT start!! - Preheat oven to 300 degrees, I use a large turkey roaster for this recipe, you will need to have plenty of room to mix well.
- In a large GLASS mixing bowl pour in orange juice then the orange peel, stir & set aside.
- Put in the first 9 ingredients into the lg. roaster, I use my hands to mix, you want to separate all the fruit & rubbing with the flour keeps them from sticking back together, but more importantly it will allow the wet ingredients to fully coat all the fruit & nuts.
- Returning to the lg. glass bowl, add the remaining ingredients. Using a wire whisk beat until emulsified. They will start to take on a cloudy appearance. Pour over the dry ingredients in the roaster. using a large metal spoon stir together very well, I will usually spend at least 5 minutes or more on this, it does make a difference.
- Using glass (5-6 pcs)or metal baking pans with sides (4-5 pcs) pour mix into required pans to keep mix less than an inch in the height of the pans. Bake in center position for a hour, mixing bottom to top every 15 minute. Remove from oven & stir once more, leave in pans to cool. Do not over bake, it will continue to crisp as it cools.
- Will keep in air tight containers for 2 weeks or in freezer for 4 weeks.

- Preheat oven to 140C. Find a large shallow baking tray or two normal sized ones (whatever fills the top shelf of your oven).
- Combine the oats, honey and oil in a mixing bowl until small clusters form.
- Tip the mix into the baking tray(s) and spread it out (but don't press it down).
- Bake for about 15 - 20 mins, until golden brown, giving it a shuffle and a turn half way through.
- The dried fruit / nuts / seeds mix can be added in 5 mins before the end of cooking, or as soon as the mix is out of the oven.
- Leave in the tin to cool completely before transferring to an airtight container such as a cereal dispenser.
