3/4 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1-1/2 cups Golden Grahams, crushed
3/4 cup plus 2 tablespoons quick-cooking oats, divided
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup salted peanuts, divided
1 cup semisweet chocolate chips, divided

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cereal, 3/4 cup oats, baking soda, baking powder and salt; gradually add to creamed mixture and beat well. Stir in 3/4 cup peanuts and 2/3 cup chocolate chips., Spread into a greased 13-in. x 9-in. baking pan. Coarsely chop remaining peanuts; sprinkle over the top with remaining oats and chips. , Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

3/4 cup butter, softened (no substitutions)
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 cups Golden Grahams cereal, crushed
3/4 cup quick-cooking oats, plus
2 tablespoons quick-cooking oats, divided
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup peanuts, divided
1 cup chocolate chips, divided

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-in baking sheet.
  • In a mixing bowl, cream butter and sugars.
  • Add eggs, beat well.
  • Beat in vanilla.
  • Combine flour, cereal, 3/4 cup oats, baking soda, baking powder and salt.
  • Gradually add to creamed mixture.
  • Stir in 3/4 cup peanuts, and 2/3 cup chocolate chips.
  • Spread in prepared baking dish.
  • Coarsely chop remaining peanuts; sprinkle over top with remaining oats and chocolate chips.
  • Bake for 25-30 mins, or until golden brown.

8 cups Golden Grahams™ cereal
1 bag (10 oz) miniature marshmallows (5 1/2 cups)
1 1/2 cups milk chocolate chips (9 oz)
5 tablespoons butter or margarine
1/4 cup sugar
1 tablespoon water
1 teaspoon vanilla

Steps:

  • Grease 13x9-inch pan with butter. Measure cereal into large bowl.
  • Reserve 1 cup of the marshmallows. In 3-quart saucepan, heat remaining 4 1/2 cups marshmallows, the chocolate chips, butter, sugar and water over low heat, stirring occasionally, until completely melted. Remove from heat; stir in vanilla. Pour marshmallow mixture over cereal in bowl; stir until evenly coated. Stir in remaining 1 cup marshmallows.
  • Press firmly in pan. Cool at least 1 hour until firm. For bars, cut into 6 rows by 4 rows. Store loosely covered at room temperature.

This is a quick and luscious recipe. It is so easy that my girls used to enter them in the county fair every year when they were young. They were a guaranteed blue ribbon! A very good combination of flavors. Makes me hungry just remembering them.

3 cups fine graham cracker crumbs (24 double, crushed)
1 cup evaporated milk
1 cup sugar
1 (6 ounce) package semi-sweet chocolate chips
1/4 cup soft margarine
1/2 cup broken nuts
1/2 teaspoon vanilla

Steps:

  • Mix altogether and spoon mixture into a well greased 9 inch square pan.
  • Bake at 350 degrees for 35 minutes or until cookie pulls away from the side of the pan. Cool before cutting.
  • Makes 18 bars that will disappear fast.

3 cups semisweet chocolate chips
1/4 cup white vanilla baking chips
1 cup Golden Grahams™ cereal
1/2 cup miniature marshmallows

Steps:

  • Spray large cookie sheet with cooking spray; line with cooking parchment paper or waxed paper. In large microwavable bowl, microwave chocolate chips uncovered on High 2 minutes, stirring after each minute. Continue microwaving and stirring in 15-second intervals until melted and smooth.
  • Pour melted chocolate onto cookie sheet. Use spatula to spread evenly into 10x13-inch rectangle, about 1/4 inch thick.
  • In small microwavable bowl, microwave white vanilla baking chips uncovered on High 30 to 60 seconds, stirring every 15 seconds, until melted and smooth. Drizzle over chocolate layer on cookie sheet.
  • Immediately sprinkle cereal and marshmallows over top; press into melted chocolate to help pieces stick. Refrigerate uncovered about 30 minutes or until firm. Break into pieces. Store covered in refrigerator.
