One-Bowl Golden Glow Turmeric Flourless Muffins are packed with nourishing ingredients, like anti-inflammatory turmeric, and make a naturally sweet and healthy breakfast or snack anytime! Naturally gluten-free, dairy-free, grain-free and naturally sweetened.

⅓ cup melted coconut oil (plus more for greasing the pan)
2 large eggs
⅔ cup unsweetened applesauce
⅓ cup pure maple syrup
1 teaspoon vanilla extract
2 ⅓ cups almond or oat flour*
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon kosher salt
2 teaspoons ground turmeric
½ teaspoon cinnamon
½ teaspoon ground ginger
⅛ teaspoon freshly ground pepper**
⅓ cup dairy-free chocolate chips (plus more for sprinkling)

Steps:

  • Heat the oven to 350F.
  • In a large bowl, whisk together the coconut oil, eggs, applesauce, maple syrup, and vanilla extract.
  • Add the flour, baking soda, baking powder, salt, turmeric, cinnamon, ginger, and pepper. Stir until well incorporated.
  • Add the chocolate chips, stirring to combine.
  • Fill each section of a greased, 12-section muffin tin with roughly ¼ cup batter. Sprinkle the tops with chocolate chips, then bake for 15-20 minutes, or until the edges begin to pull away from the sides and a toothpick comes out clean.
  • Allow to cool in the pan for 5 minutes, then cool the rest on a cooling rack.

3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

1 cup unbleached all-purpose flour
1 cup whole-wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/2 cup pepitas, finely chopped
1/3 cup vegetable oil
1 cup packed dark-brown sugar
2 large eggs, room temperature
1/3 cup whole milk
1 large carrot, peeled and grated (2 cups)
1 Granny Smith apple, peeled, cored, and grated (1 1/4 cups)
1/2 cup unsweetened shredded coconut
1/2 cup golden raisins

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a large bowl, whisk together both flours, baking powder, baking soda, cinnamon, and salt. Reserve 1 tablespoon chopped pepitas; whisk the rest into flour mixture. In another bowl, whisk together oil, brown sugar, eggs, and milk until smooth. Stir in carrot, apple, coconut, and raisins. Make a well in flour mixture; pour in egg mixture and stir together until just combined (do not overmix). Divide batter evenly among muffin cups, filling each all the way. Sprinkle tops with reserved pepitas.
  • Bake until golden and a toothpick inserted in center of muffins comes out clean, 22 to 25 minutes. Let cool 5 minutes in tin, then transfer to a wire rack and let cool completely.

2-1/2 cups all-purpose flour
1-1/4 cups sugar
3 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt

3/4 cup applesauce
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrots
1 medium tart apple, peeled and grated
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

2 cups cake flour
3 teaspoons baking powder
1 teaspoon salt
1 1/4 cups white sugar
1/2 cup shortening (I use butter flavor)
1 cup milk
2 eggs
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees F.
  • Line muffin tins with paper cupcake liners.
  • Sift together the flour, baking powder, salt,and sugar.
  • Add the shortening and 3/4 cup of the milk and beat for 2 minutes.
  • Add the remaining 1/4 cup milk, the eggs and vanilla and beat for 2 minutes.
  • Pour the batter into muffin tins only filling half way up. Don't over-fill!
  • Bake for 18 minutes or until done.

1/2 cup seedless raisins

1 teaspoon vanilla extract
1 teaspoon grated orange peel
1 cup carrot shredded

Steps:

  • In large mixing bowl, combine flour, baking powder, cinnamon, salt, nuts and raisins. Set aside. In small bowl, blend together eggs, orange juice, oil, agave, vanilla and orange peel. 1 tablespoon baking powder
1/4 teaspoon salt

1 egg
1 cup milk
1 teaspoon grated orange rind
1/4 cup butter, melted

Steps:

  • Drain pineapple well.
  • Sift together flour, sugar, baking powder, salt and nutmeg.
  • Beat together egg and milk; stir in pineapple and orange rind.
  • Blend into dry ingredients, along with melted butter, mixing as little as possible until all particles are just moistened.
  • Spoon into lightly greased muffin pans.
