"So I fooled them with this casserole that looks just like stuffing when it comes out of the oven. Now that they're grown, they sill ask for 'broccoli stuffing' when they come for dinner."

3 cups frozen chopped broccoli, thawed
1 can (14-3/4 ounces) cream-style corn
1 egg
1-1/2 cups stuffing mix
1/2 cup butter, melted

Steps:

  • In a large bowl, combine the broccoli, corn and egg. Transfer to a greased 1-qt. baking dish. Sprinkle with stuffing mix and drizzle with butter. Bake, uncovered, at 350° for 30-35 minutes or until golden brown and bubbly.

1 1/2 lbs broccoli, cooked and cut up
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1/4 cup light mayonnaise
1/4 cup sharp cheddar cheese, shredded
1 tablespoon chopped pimiento
1 1/2 teaspoons lemon juice
2/3 cup Frito corn chip, crushed and divided (I sometimes use the chili cheese flavored ones)

Steps:

  • Combine soup, mayonnaise, cheese, pimento and lemon juice.
  • Put broccoli in a casserole and top with half the corn chips.
  • Pour cheese mixture over and then top with other half the corn chips.
  • Bake at 350 for 35 minutes.

1 egg, slightly beaten
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter, melted
¾ cup crushed buttery round crackers (such as Ritz®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix broccoli, corn, egg, salt, and pepper in a 3-quart casserole dish.
  • Mix crushed crackers and butter together in a small bowl; sprinkle over the broccoli mixture.
  • Bake in preheated oven until the crackers are golden brown, 30 to 40 minutes.

I had this dish at a barbecue where everyone raved about how good it was. This is my best attempt to re-create it.

2 (14 1/2 ounce) cans whole kernel corn, drained
1 (4 ounce) can green chilies, drained
4 ounces reduced-fat cream cheese (you can use regular cream cheese if you prefer)
1 cup shredded cheddar cheese
1 (6 ounce) can French fried onion rings

Steps:

  • Preheat over to 350°F.
  • In a saucepan, combine both cans of corn, green chilies, cream cheese and cheddar cheese and cook over medium high heat until cheeses are melted. Stir frequently.
  • Once the cheese are melted pour the mixture into a greased casserole dish and bake for 20 minutes.
  • Top the casserole with the dried onion rings and bake for another 5 minutes.

1 can (14-3/4 ounces) cream-style corn
