2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
2 cups light brown sugar, packed
2 eggs
1/2 cup butter or 1/2 cup margarine, softened
1 teaspoon vanilla extract
1 1/2 cups golden delicious apples, diced
3/4 cup raisins

Steps:

  • Heat oven to 350 degrees.
  • Liberally coat a 13x9x2-inch baking pan with nonstick cooking spray; set aside.
  • In medium-sized bowl, whisk together flour, baking powder, cinnamon and salt; set aside.
  • In large bowl, with an electric mixer on medium speed, blend together sugar, eggs, butter and vanilla for 3 minutes or until smooth.
  • Reduce speed to low and gradually add flour mixture; mix for 2 minutes or until just incorporated.
  • Stir in diced apples and raisins and spread into prepared pan.
  • Bake at 350 degrees for 35 minutes or until toothpick inserted in center comes out clean.
  • Cool completely before cutting into bars and serving.

1 1/2 cups old fashioned oats
1 cup packed brown sugar
1/4 cup all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 cup butter, softened
3/4 cup sun-maid golden raisin
1/4 cup sun-maid dried apricot, chopped

Steps:

  • Heat oven to 325°F.
  • Combine.oats, brown sugar, flour, cinnamon and baking powder in a large bowl.
  • Mix. in butter with fingers or a pastry blender until mixture is crumbly.Add golden raisins and apricots.
  • PAT mixture firmly into a ungreased 9x13-inch baking pan.
  • Bake 20-25 minutes until golden brown. Cool in pan 30 minutes. Cut into bars and cool completely. Remove from pan with metal spatula.
  • For a quick dessert. serve with vanilla ice cream or sandwich two cookies with ice cream and freeze.
  • Serve frozen.

8 tart apples, your preference, peeled and diced
1 teaspoon lemon juice
1/4 cup butter

1 egg, lightly beaten

1 teaspoon baking powder

Steps:

  • Heat oven to 350 degrees.
  • For the cookie layer:.
  • In a large bowl, cream the butter and brown sugar.
  • Beat in flour.
  • Grease a 9″ x 13″ baking pan. Press dough evenly over bottom and 1″ up the sides of the pan.

½ cup brown sugar
½ cup butter
½ cup all-purpose flour
¾ cup rolled oats
2 eggs
1 cup brown sugar
½ cup all-purpose flour
¼ teaspoon salt
½ teaspoon baking powder
1 teaspoon vanilla extract
¾ cup raisins
½ cup flaked coconut
½ cup pitted sour cherries, drained with liquid reserved

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together 1/2 cup of brown sugar, butter, 1/2 cup of flour and oats until crumbly. Press into the bottom of a 9 inch square pan. Bake for 15 minutes in the preheated oven.

Cinnamon-spiced apple slices are layered between a soft golden crust and a crumb topping, drizzled with icing. Tastes exactly like apple pie, only in bar form! This recipe is my most famous of all!

2 cups all-purpose flour
½ cup white sugar
½ teaspoon baking powder
½ teaspoon salt
2 large egg yolks, beaten
1 cup unsalted butter, cubed
4 medium baking apples, peeled and sliced
¾ cup white sugar
¼ cup all-purpose flour
1 teaspoon ground cinnamon
½ cup powdered sugar
1 tablespoon milk
¼ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, sugar, baking powder, and salt for crust in a bowl. Cut butter into the mixture with 2 knives or a pastry blender until crumbly; do not overmix. Stir in egg yolks. Press 1/2 of the mixture into a 9x13-inch baking pan, and set the remainder aside for the topping.
  • Prepare filling: Mix apple slices with sugar, flour, and cinnamon until coated. Layer apples overlapping evenly on top of the crust. Drizzle any remaining juices from the apple mixture over top for added sweetness. Crumble the remaining crust mixture over the apples.
  • Bake in the preheated oven until sides are bubbly and top is golden brown, about 40 minutes.

1 cup lard, room temperature
3 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon salt
3 teaspoons baking powder
1 large whole egg
1 teaspoon vanilla
milk
flour, for rolling dough
3 cups boiling water
3 1/2 cups raisins, washed
1 cup granulated sugar
4 tablespoons flour
1/2 teaspoon salt
1/4 cup fresh lemon juice

Steps:

  • Wash raisins.
  • Add to the boiling water on low heat in saucepot.
  • Add remaining filling ingredients, salt, sugar, flour, juice, and cook just until thick.
  • Remove from heat and let cool well.
  • Crust:.
  • Mix egg with vanilla and add enough cream or whole milk to make one cup of liquid.
  • Combine remaining ingredients flour, sugar, salt, and lard and lifting to air and rub to make a coarse pea size crumb.
  • Add in liquid and just combine to make a ball of pastry.
  • Divide pastry into two .
  • Dust a board with the flour for rolling and roll one section to fit a 17 x 14 sided ungreased cookie sheet.
  • Spread on cooled raisin filling, or canned apple filling.
  • Roll second half of dough, and place nicely on the top, sealing edges.
  • Prick all over top with a fork and brush with more cream.
  • Sprinkle with granulated fine or coarse sugar over evenly.
  • Bake 350° for 25 minutes until golden.

1 1/2 cups all purpose flour
1/2 cup cake flour
1 tablespoon plus 1 1/2 teaspoons sugar
3/4 teaspoon salt
9 tablespoons (1 stick plus 1 tablespoon) chilled unsalted butter, cut into pieces
3 tablespoons chilled solid vegetable shortening, cut into pieces
6 tablespoons (or more) ice water
Filling
3 1/4 pounds Golden Delicious apples, peeled, quartered, cored, each quarter cut crosswise into 1/4-inch-thick slices
3 tablespoons plus 2 teaspoons sugar
3 tablespoons unsalted butter, melted
2 teaspoons fresh lemon juice
1 cup golden raisins (about 5 ounces)
2 tablespoons (packed) dark brown sugar
1 large egg yolk beaten to blend with 1 tablespoon whipping cream (for glaze)

Steps:

  • For crust:
  • Blend flour, cake flour, sugar and salt in processor. Add butter and shortening and cut in using on/off turns until mixture resembles coarse meal. Add 6 tablespoons ice water and process just until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; divide into 2 pieces, 1 slightly larger than the other. Flatten larger piece into disk and smaller piece into rectangle; wrap each in plastic and refrigerate 1 hour. (Can be made 1 day ahead. Keep refrigerated. Let soften slightly at room temperature before rolling out.)
  • For filling:
  • Position rack in bottom third of oven and preheat to 375°F. Spread apple slices on large rimmed baking sheet. Sprinkle 3 tablespoons sugar over apples, then drizzle with 2 tablespoons melted butter and lemon juice; toss to coat. Bake just until apples begin to soften, stirring once, about 15 minutes. Cool apples completely on baking sheet. Maintain oven temperature.
  • Transfer apples and any accumulated juices to large bowl. Mix in raisins and brown sugar.
  • Butter 9-inch-diameter glass pie dish. Roll out dough disk on floured surface to 12-inch round. Transfer crust to prepared pie dish. Spoon apple filling into crust. Drizzle remaining 1 tablespoon melted butter over. Roll out dough rectangle on floured surface to 11x7-inch rectangle. Cut lengthwise into twelve 1/2-inch-wide strips. Place 6 strips 1 inch apart atop apple filling. Place remaining 6 strips diagonally atop first 6 strips, forming diamond lattice pattern. Trim strips even with bottom crust. Fold dough overhang in, pressing onto edge of pie dish. Press dough edge decoratively with fork to seal.
  • Brush dough strips with egg glaze. Sprinkle strips with 2 teaspoons sugar. Bake 15 minutes. Reduce oven temperature to 350°F. Continue to bake pie until crust is golden and apples are tender, covering crust edges with foil if browning too quickly, about 1 hour 15 minutes longer. Cool pie at least 2 hours. Serve slightly warm or at room temperature. (Can be made 1 day ahead. Cool completely, then cover and store at room temperature.)
