While I was growing up on a farm in western Kansas, we always had lots of hungry men around during harvesttime. This salad is one we served often since it was easy to increase and we could prepare it ahead of time.

Number Of Ingredients 9

1 can (20 ounces) crushed pineapple
1 cup sugar
2 large eggs, beaten
Dash salt
1 cup chopped celery
2 medium red apples, chopped
1 cup chopped pecans
1 cup heavy whipping cream, whipped
Lettuce leaves, optional

Steps:

  • Drain pineapple, reserving the juice. Set pineapple aside. In a saucepan, combine juice with sugar, eggs and salt. Cook, stirring constantly, over medium-low heat until slightly thickened. Remove from the heat; cool. Stir in pineapple, celery, apples and pecans. Fold in whipped cream. , Pour into a 9-in. square pan. Cover and freeze until firm. Let stand at room temperature for about 15 minutes before cutting. Serve on lettuce-lined plates if desired.

A crunchy, sweet and hearty salad of apples, celery, nuts and mayonnaise. This salad can easily become a summer luncheon main dish by adding cooked, diced chicken. You will probably need to add a little more mayonnaise. Another nice variation is halved grapes in addition to the apples, or pears as a replacement for the apples.

4 medium red apples (or half of each for nice color) or 4 medium green apples, washed and diced (or half of each for nice color)
1/2 teaspoon brown sugar
1 tablespoon lemon juice
1 cup celery, chopped
1/2 cup pecans or 1/2 cup walnuts
2/3 cup mayonnaise

Steps:

  • Wash, core and dice unpeeled apples.
  • Sprinkle lemon juice over them and toss together gently to coat, then sprinkle brown sugar over the apples and toss again.
  • Chill for at least 20 minutes.
  • Add celery and nuts then stir in mayonnaise, adding only enough for desired consistency.
  • Serve on a bed of greens.

2 eggs, slightly beaten
1/2 cup sugar
1/2 cup pineapple juice
1/8 teaspoon salt
1/4 cup lemon juice
1/2 cup celery, finely chopped
1/2 cup crushed pineapple, well drained
1/2 cup broken walnuts or 1/2 cup pecans
2 apples, unpeeled and finely chopped
1 cup heavy cream, whipped

Steps:

  • In the top of a double broiler combine the eggs, sugar, pineapple juice, salt and lemon juice.
  • Cook stirring constantly until thick.
  • Cool and add celery, pineapple, nuts and apple.
  • Gently fold in heavy cream.
  • Freeze in one large or 12 individual molds.
  • Serve frozen on lettuce.
  • Garnish, if desired with mayonnaise.

Saw this on Food Network (Paula Deen) and it look interesting and tasty! This would be great for a light luncheon dessert. I found it took more than two hours to freeze. If you leave it in the freezer overnight, it will freeze too hard--so plan your time accordingly.

1/2 cup sugar
1/2 cup pineapple juice
1/4 cup fresh lemon juice
1/8 teaspoon salt
1 1/3 cups heavy cream
1/2 cup miniature marshmallow
1/2 cup red seedless grapes, cut in half
1/2 cup crushed pineapple, drained
2 medium apples, diced (leave skins on)
1/2 cup celery, diced
1/2 cup walnuts or 1/2 cup pecans, coarsely chopped
8 fresh cherries or 8 maraschino cherries
8 sprigs fresh mint leaves (to garnish)

Steps:

  • In saucepan, combine sugar, pineapple juice, lemon juice, and salt. Cook over medium heat, stirring constantly until thick. Remove from heat and let cool.
  • Whip cream and fold it into the cooled syrup mixture.
  • Stir in marshmallows, grapes, pineapple, apples, celery and nuts. Spread mixture into an 8 by 8-inch pan and freeze until frozen through (at least 2 hours).
  • Remove the salad from the freezer 5 minutes before serving.
  • Cut into 8 squares. Garnish each serving with a cherry and a spring of fresh mint.
