GOLD RUSH GRIDDLE COOKIES

These griddle-baked cookies are the closest I have come to the flavor of old fashioned Sunshine Golden Fruit Bar cookies, which are no longer sold. Yum!

Number Of Ingredients 9

3 1/2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup shortening
1 egg
3/4 cup milk
1 1/4 cups raisins

Steps:

  • Mix dry ingredients in your largest mixing bowl. Cut in shortening until mealy. Add beaten egg, milk, and raisins; mix until all ingredients are moistened and dough holds together. Dough will be very stiff.
  • Preheat pancake griddle to 350 degrees F. A few drops of water should dance on the surface when hot enough.
  • Roll out dough on floured board to ΒΌ" thick. Cut with pizza wheel, scissors, or 2" cookie cutter.
  • Lightly oil hot griddle. Place cookies on it without crowding. As the bottoms brown, the tops become puffy. Then turn with spatula and brown on the other side.
  • Cool on rack. Makes approximately 4 dozen.

This is my mother's recipe. These bring back so many good memories for me and my sisters. She used to make these on the weekend with a side of "Orange Julius" (another recipe I'll be posting soon). Enjoy!

1 cup(s) sugar
1 1/2 teaspoon(s) baking powder
1 teaspoon(s) salt
1/2 teaspoon(s) baking soda
1 cup(s) shortening
1 - egg
3/4 cup(s) milk
1 1/4 cup(s) raisins

Steps:

  • Mix Dry ingredients, cut in shortening
  • Add egg, milk & raisins (Dough will be stiff)
  • Roll out til 1/4" thick. Cut with 2" cookie cutter
  • Lightly oil griddle pan
  • Cook until tops are puffy and golden brown
  • Serve with butter on top

I was flipping thru channels one day when I came to our local Pbs station and one of my favorite cooks had this recipe he invented. It is so easy and so good, I thought I would share it with you in case you are looking for an elegant dessert that is easy to do.

1/2 gal vanilla ice cream
1 jar(s) caramel ice cream topping
1/2 c salted peanuts
1 container chocolate magic shell coating

Steps:

  • 1. Line a 9 x 9" cake pan with plastic wrap. Spread half the ice cream in the bottom and return to freezer for 15 minutes to harden. Spread the caramel and sprinkle with the nuts for the next layer. Freeze for another 15 minutes.
  • 2. Top with the remainder of the ice cream and freeze for another 15 minutes. Coat the top with the chocolate "Magic Shell" and return to the freezer until it is time to serve. Carefully remove the ice cream from the pan using the plastic wrap. Peel off the plastic wrap and serve on a flat platter or tray. Serves 9
  • 3. YOU can add other toppings if you like.

Found this recipe recently, but have not tested it yet. It was a recipe that was on the back of the Sunmaid Raisin box years ago. Sounds interesting. I'll post a picture as soon as I make these cookies.

Like the California gold rush, cowboys ride like the wind to get to JJ's wild & crazy explosions of flavor in these corncakes. So git ya a big spoon and come dig in! You can use full flavored ingredients, we just tried to lower the calories/fat with some ingredients.

1 (8 1/2 ounce) box Jiffy corn muffin mix
1/2 cup Bisquick
1 egg, beaten
3/4 cup 2% low-fat milk
8 slices extra lean bacon, cooked crisp and crumbled
1/4 cup chopped jalapeno (or to taste)
1 cup reduced-fat cheddar cheese (shredded)
1/4 cup butter, softened to room temperature
1/2 cup picante sauce (Pace)
1/2 cup light sour cream
1/2 cup sugar-free maple syrup

Steps:

  • BATTER: Mix all batter ingredients well (you should have about 2 cups).
  • Heat griddle to medium and grease lightly (or use spray butter). Pour 1/4 cup of batter onto hot griddle to total 8 pancakes (do in batches if necessary).
  • Top each equally with bacon, jalapenos, and cheddar. When bubbles begin to appear on the edges of the cakes (about 1-2 minutes and making sure the bottom is thoroughly cooked), Carefully flip them over and cook the other side (about 1-2 minutes). Do not pat down the pancakes!
  • Flip cakes topping side up onto serving plates. Top each with the butter, picante, & sour cream. Drizzle lightly with maple syrup, and serve.
