This is based on a Filipino stew recipe called caldereta. It is usually served with rice. I suggest marinating the meat for at least 6 hours. The serving size for this recipe is 2 to 4 depending on how much bone the meat has. Serve over rice. Masarap!

1 pound bone-in goat meat, cut into large chunks
¼ cup vinegar
¼ cup soy sauce
4 cloves garlic, crushed
1 tablespoon vegetable oil
1 onion, chopped
1 red bell pepper, cut into 1-inch squares
1 cup tomato sauce
2 cups beef stock
1 potato, peeled and cut into large chunks
2 carrots, peeled and cut into large chunks
½ cup green peas
½ teaspoon salt
¼ teaspoon pepper
1 pinch cayenne pepper

Steps:

  • Mix goat meat with vinegar, soy sauce, and garlic in a large bowl; cover and refrigerate from 1 to 8 hours. For best flavor, marinate at least 6 hours. Remove meat from marinade and pat dry with paper towels; reserve marinade and garlic cloves.
  • Heat vegetable oil in a large pot over medium-high heat and brown the goat meat, working in batches if necessary, 10 to 15 minutes. Set goat meat aside. Cook and stir onion, red bell pepper, and garlic cloves from the marinade over medium heat until onion is translucent, about 5 minutes; pour in tomato sauce and bring mixture to a simmer. Allow to cook down slightly, about 5 minutes.
  • Return goat meat to the sauce and pour in reserved marinade and beef stock. Bring to a boil, reduce heat to low, and simmer covered until goat meat is partially tender, 30 to 40 minutes. Stir in potato, carrots, and peas; season with salt, black pepper, and cayenne pepper. Simmer until goat meat is very tender and potato and carrots are cooked through, 20 to 30 more minutes. Adjust seasonings before serving.

Irish Lamb Stew with Herbed Goat Cheese Dumplings image

4 pound shoulder roast of lamb
Olive oil
10 cloves of garlic
1/4 pound bacon, cut into 1-inch pieces
Salt
Freshly ground black pepper
4 cups veal stock
4 ounces unsalted butter
1/2 cup flour
1 cup onion, diced
1/2 cup celery, diced
1/2 cup carrot, diced
Fresh sprigs marjoram for garnish
2 cups flour
1 1/2 tablespoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/4 cup soft goat cheese
2 teaspoons each of chopped parsley, marjoram and thyme
Freshly ground black pepper
3 cups veal stock

Steps:

  • Preheat the oven to 325 degrees.
  • Rub the lamb roast all over with olive oil. Make 10 small slits all over the roast. Insert the bacon and garlic cloves into the slits. Season with salt and pepper. Place the roast in a roasting pan and add the stock and cover. Place in the oven and slow roast for 3 hours, or until very, very tender. Remove the lamb from the oven and cut into 2-inch pieces. Set aside.
  • In a large pot, add the butter and melt. Stir in the flour and let cook for 3 minutes. Add the onion and saute until soft, about 5 minutes. Add the carrots and the celery and saute for another 10 minutes. Slowly whisk in the stock that the lamb was cooked in. Add the reserved lamb. Bring to a simmer. Season with salt and pepper.
  • For the dumplings: In a large bowl, combine the flour, baking soda and salt and mix well. In a small bowl, beat the eggs. Add the milk to the eggs. Add the egg mixture to the dry ingredients and mix well. Stir in the goat cheese and the herbs. Season with freshly ground black pepper. Have the stock boiling in a small saucepan. Using 2 tablespoons, drop the dumpling batter into the boiling stock. Cook for about 5 minutes, or until the dumplings float to the surface. Remove the dumplings from the stock and place on a plate.
  • To finish: Place the dumplings into the stew. Check for seasoning. Garnish with fresh marjoram.

2 medium onions, roughly chopped
2 cloves garlic, chopped
2 large carrots, diced
3 stalks celery, chopped
1/2 Scotch Bonnet pepper, seeded and chopped (while handling, protect hands and eyes and avoid breathing in fumes)
2 pounds boneless goat meat, cubed
Salt and freshly ground black pepper
1/4 cup canola oil
1/4 cup (1/2 stick) butter
1 (6-ounce) can tomato paste
1 cup vegetable stock, or red or white wine
2 tomatoes, chopped
2 tablespoons chopped parsley

Steps:

  • Combine onions, garlic, carrots, celery and pepper in a large bowl. Season the meat with salt and pepper, and toss meat with the vegetables. (Protect yourself from contact with Scotch Bonnet peppers.) Cover and marinate in the refrigerator for at least 2 hours, (the longer the better).
  • Heat the oil and butter in a large saucepan, and add the meat/vegetable mixture, browning all sides of meats and cooking for a few minutes to integrate flavors. Add the tomato paste and stock, cover and reduce heat. Simmer until meat is fork tender, at least 1 1/2 to 2 hours, checking occasionally to make sure there is adequate liquid in the pot. (This recipe is also great cooked slowly in a crock pot.) Once the meat is tender, add the chopped tomato and parsley and serve.

1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
10 garlic cloves
1/4 lb bacon, cut into 1-inch pieces
1 sprig fresh rosemary
1 sprig fresh thyme
3 cups beef broth
4 ounces unsalted butter
1/2 cup flour
2 celery ribs, chopped
14 baby carrots, chopped
2 onions, chopped
3 cups beef broth (or veal stock)
2 cups flour
2 cups Bisquick
1 cup 2% low-fat milk
4 ounces goat cheese, crumbled
2 teaspoons parsley, chopped
2 teaspoons marjoram
2 teaspoons thyme
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 300°F Place the roast in a roasting pan and season with salt and pepper then rub all over with olive oil. Make 10 small slits all over the roast (If roast is tied, leave it tied).
  • Insert the garlic cloves into the slits. Add the bacon into the pot then gently add the stock over and around the roast. Place rosemary and thyme sprigs on top of roast. Cover and slow roast for 3 hours, or until very tender.
  • Remove from oven and let cool slightly. Remove roast and wrap tightly in foil then refrigerate. To the stock, strain into a pyrex bowl, cover with plastic wrap and refrigerate overnight.
  • Remove the fat from the stock (You should yield at least 4 cups of stock). Discard fat solids and set the stock aside. Remove the veal from the foil, cut it into 2" cubes, and set aside.
  • In a large pot or dutch oven over medium heat, add the butter and melt. Stir in the flour and let cook for 3 minutes. Add the celery and carrots and sauté about 5 minutes. Add the onion and sauté for another 10 minutes.
  • Slowly whisk in the stock that the lamb was cooked inches Add the cooked lamb, reduce heat to low, cover and let simmer 20-30 minutes until carrots are tender.
  • DUMPLINGS: In a 2 qt pot, heat beef broth to a simmer. Meanwhile, in a large bowl, add remaining dumpling ingredients and mix well.
  • Drop the dumplings by tablespoonfuls (a few at a time as to not overcrowd. They will poof up) into the simmering broth. Let simmer, turning occasionally, for 10-15 minutes or until the dumplings float to the surface and are cooked through.
  • As the dumplings cook, remove them from the broth and add to the stew. When the last batch of dumplings are cooked, add them and the remaining broth to the stew.

2 tbsp. Penzey's Jerk spice (chicken/fish variety)
1 tbsp. allspice, crushed
1 tbsp. cinnamon
3 tbsp. oil
4 tbsp. oil (for browning)
1 red onion, chopped into 3/4 inch pieces
1 green pepper, chopped into 3/4 inch pieces
4 small waxy potatoes, quartered
1 carton Trader Joe's Sweet Potato Bisque
1 can whole tomatoes, chopped with scissors (in can)
Salt and pepper
Optional: Hot Pepper Sauce (Scotch bonnet if available) to taste
If goat is not available, any game meat or lamb would work.

Steps:

  • Combine spices, goat, and 3 tbsp. oil in a zip-top bag; shake to blend and coat. Refrigerate overnight. Preheat oven to 325. Remove meat from refrigerator. Heat 4 tbsp. oil in a heavy-bottomed pan over high heat; add the meat in two or three batches, browning thoroughly. Add the remaining marinade from the bag to the final batch of meat. Add chopped vegetables, soup, and tomatoes. Stir to combine. Cover and bake at 300 degrees for 2.5 hours. Serve with bread.

1 large onion, finely chopped
1/2-1 teaspoon minced garlic (optional)
juice of one lemons or 2 dried limes
1 -2 tablespoon tomato paste
3 large tomatoes (or 6 small tomatoes, diced, original poster prefers Italian plum tomatoes)
1 lb okra (Original poster uses 16 oz frozen packages you find in grocery stores. The best okra to use is the s)
1 lb of stewing goat meat or 1 lb lamb
2 teaspoons khaliji mixed spice (Gulf Spices (Ibzar))
salt and pepper, to taste
oil (for frying)

Steps:

  • Rub meat with ibzaar mixture.
  • Heat oil in a medium sized saucepan or pot. Add meat with spices. Add some salt to meat. Fry until brown.
  • Heat oil in seperate sautee/frying pan. Add tomatoes, onions, okra and garlic. Fry until onions are soft and slightly golden and until okra starts to slightly change color. It is best to add the garlic at the end of the frying process as garlic burns easily.
  • Add above mixture to meat.
  • Add water (make sure that meat is completely covered by at least 1 inch).
  • Add tomato paste, lemon (or dried limes) and salt to taste.
  • Bring to boil. Cover pot and reduce heat to medium for around 45 min and then low for maybe 10 to 15 minute
  • Serve with Basmati rice.

¼ teaspoon salt, or more to taste

1 onion, chopped
1 (1 pound) butternut squash, peeled and cut into 1/2-inch cubes
4 cloves garlic, minced
1 (14 ounce) can diced tomatoes
1 ½ cups water
1 cinnamon stick

Steps:

  • Mix cumin, coriander, ginger, sweet paprika, smoked sweet paprika, smoked hot paprika, and chile powder together in a bowl.
  • Rub goat shank with about 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Heat coconut oil in a large Dutch oven over medium-high heat until melted and shimmering. Cook goat shank in hot oil until browned as completely as you can get it, 2 to 3 minutes per side. Remove shank to a bowl, reserving oil in the skillet.
  • Reduce heat under the skillet to low. Cook and stir onion in the retained oil until soft, 7 to 10 minutes. Add butternut squash and garlic; cook and stir until the garlic is fragrant, about 1 minute. Sprinkle the cumin mixture over the squash mixture; cook and stir 1 minute more.

  • Remove shank from Dutch oven to a cutting board. Strip meat from the bone and cut into bite-size pieces. Discard bone. Stir meat into the squash mixture, season with salt and pepper, and cook until the meat is reheated, about 5 minutes.

1 cup boiling water
8 tomatillos, cored
5 cloves garlic
1 medium white onion, one half minced
1 serrano
1/4 cup cider vinegar
2 teaspoons oregano
1/2 teaspoon cinnamon

1/4 teaspoon pepper
2 inches ginger, sliced
2 tablespoons canola oil
3 pounds goat or beef
1 1/2 cups chicken stock
1/2 cup chopped cilantro

Steps:

  • Heat a 6-qt. Dutch oven over medium-high. Add guajillo chile; cook, flipping once, until lightly toasted, 3-4 minutes. Transfer to a blender, add water, and let sit until soft, about 30 minutes. Remove chile, discard stem and seeds, and return to blender; set aside.
  • Return pot to medium-high; cook tomatillos, garlic, whole onion half, and serrano, turning as needed, until blackened all over, 12-15 minutes. Peel garlic and transfer to blender with remaining charred vegetables. Add vinegar, oregano, cinnamon, cumin, pepper, and ginger; purée until smooth.
  • Add oil to pan; heat over medium-high. Season goat with salt and, working in batches, cook, turning as needed, until browned, 18-20 minutes. Transfer goat to a bowl; set aside. Add minced onion; cook until soft, 2-3 minutes. Add reserved chile sauce; simmer until thickened, 4-6 minutes. Return goat to pan and add stock; boil. Reduce heat to medium; simmer, covered and stirring occasionally, until goat is tender, about 2 hours. Using a slotted spoon, transfer goat to a cutting board. Let cool slightly; shred meat, discarding bones, and return to pan. Stir in cilantro; serve with tortillas and lime wedges.

Night time temps to 25 degrees F and big sale at new supermarket with goat at $1.79/lb prompted this stew. Goat is tasty, lean, high in protein & thusly benefits from slow cooking/braising. This stew is mildy spicy from the black pepper & peppers in the Rotel (canned diced tomato/green chili) & one can pick the Rotel (mild, regular, hot) for preferred degree of heat. 1 tablespoon olive oil
1 onion, chopped
5 shallots, chopped
2 garlic cloves, chopped

48 ounces water
28 ounces Rotel tomatoes & chilies
1 tablespoon adobo seasoning
3 cups dried navy beans, presoaked
1 potato, roasted & diced

Steps:

  • The day before, presoak 8 ounces of dried navy beans.
  • Finely chop onions, shallots & garlic. Set aside.
  • In a nonreactive dutch oven or heavy pot, add 1 tablespoon olive oil & brown goat meat on all 4 sides over medium heat.
  • Add onions, shallots & garlic - Lower heat & stir until translucent & slightly caramelized.
  • Add beef base & tomato paste, stir occasionally & let tomato paste caramelize mildly. Avoid burning by turning down heat if needed.
  • Add water, canned tomato/chilis & Adobo seasoning, gently stirring with wooden spoon to loosen any adherants.
  • Simmer 45 minutes covered.
  • Add navy beans & peeled diced roasted russet potato. Simmer 45 minutes uncovered, stirring occasionally, until meat is falling off bones. Remove meat from stew - remove any bones & return meat to stew. Serve with romaine salad and hot crusty baquette.

4 LBS 1.5 inch cubes boneless goat meat (such as leg) or boneless beef chuck
3 TBSPs curry powder
1 TBSP turmeric
1.5 TSP salt
2 large onions, chopped
8 garlic cloves, chopped
5 fresh thyme sprigs
1 TBSP finely chopped peeled fresh ginger
1 bay leaf
1/4 TSP minced seeded Scotch bonnet or habanero chile
2 CUPs (or more) beef broth
1.5 LBS white-skinned potatoes, peeled, cut into 1/2-inch cubes
1 CUP chopped green onions, divided

Steps:

  • Place meat in heavy large pot. Stir curry powder, turmeric, and salt in small bowl. Sprinkle over meat; toss to coat. Let stand at least 2 hours or chill up to 4 hours. Mix onions, garlic, thyme, ginger, bay leaf, and chile into meat. Add 2 cups broth; bring to boil. Reduce heat to medium-low, cover, and simmer 1 hour 15 minutes. Add potatoes; simmer uncovered until meat and potatoes are tender, adding more broth to moisten if dry, about 15 minutes longer. Season with salt and pepper. (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and keep chilled. Rewarm before continuing.) Mix 1/2 cup green onions into stew; ransfer to bowl. Sprinkle with remaining 1/2 cup green onions.

NEVIS CURRIED GOAT STEW

This is the national dish in Nevis, West Indies. Delicious curried goat stew. It's really good and every restaurant on the island has it on the menu. Now I doubt this recipe will be reviewed by many, if at all. I just want to post it in case someone is looking for it and so I don't forget how to make it. If you do happen to make it, be sure to serve it over steaming hot white rice and with corn bread and ice cold beer!

1 teaspoon salt
1 teaspoon fresh ground black pepper
3 tablespoons curry powder (preferably Madras style)
2 garlic cloves, minced
1 onion, diced finely
2 scallions, diced finely

2 scotch bonnet peppers, minced
2 fresh thyme sprigs
3 cups vegetable stock

Steps:

  • Wash & cut meat into bite sized pieces. Combine ingredients & rub into meat.

  • Cover pot & cook slowly over medium heat, stir occasionally.

  • Add more stock if necessary.
  • Remove bay leaves before serving.
  • Serve over Basmati rice, accompanied by roti bread or corn muffins for sopping up the gravy.

1 medium onion, finely diced
1 pound goat stew meat, cut in 1" cubes
2 cloves garlic, minced
1 can (28 ounces) plum tomatoes, chopped
1 cinnamon stick
1 ounce dried apricots, roughly chopped
pinch saffron
2 cups chicken stock, preferably homemade
Spice Mixture
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground ginger
1 1/2 teaspoon smoked paprika
1 teaspoon turmeric
1/2 teaspoon chili powder
1 teaspoon kosher or sea salt
few grinds of black pepper
Garnish
1 cup baby arugula or other young spring green
1 cup cubed roasted butternut squash

Steps:

  • Melt the ghee in a Dutch oven over medium heat. Cook the onion until soft and transparent, about 5 minutes. Place the spices for the spice mixture in a medium bowl and whisk to combine thoroughly. Toss the goat in the mixture until well-coated. Add the goat and garlic to the Dutch oven with the onions; increase the heat to medium high and cook, stirring frequently, until the goat is browned. Stir the tomatoes, cinnamon stick, apricots, saffron and chicken stock into the Dutch oven with the spiced goat. Increase the heat to high and bring to a boil; cover, reduce heat to low and simmer for 1 1/2 hours, stirring occasionally. Remove the cover and continue cooking until the sauce has thickened and the goat becomes fork tender, about another half hour. At this point, the stew can be refrigerated and reheated later. Divide the stew between four bowls and top with the greens and roasted squash. Serve immediately. 2 pounds goat stew meat, cut into 1-inch cubes
2 tablespoons vegetable oil
1 onion, diced
1 red bell pepper, diced

1 tablespoon distilled white vinegar
1 tablespoon sweet soy sauce
1 teaspoon nutmeg

  • Heat the canola oil in a large skillet until smoking over medium-high heat. Add the drained goat meat, and cook until browned all over, about 7 minutes. Stir in the onion and bell pepper, cook until the onion has softened, about 3 minutes, then stir in the tomato paste. PERUVIAN LAMB OR GOAT STEW



Peruvian Lamb or Goat Stew image

I ate this stew with a mountain guide named Chi Chi on my way to explore some ruins in the Andes. I was sworn to secrecy as to exactly where these ruins were, but you can surmise from this recipe that it was near a place that had cheap Mexican beer and fresh cilantro. To make this goat stew, simply replace the word 'lamb' with 'goat' when you are making it.

5 garlic cloves
2 teaspoons ground annatto seed
3 lbs lamb chops
1 lb lamb rib
3 teaspoons coarse grain mustard
1/2 teaspoon salt
1 1/2 teaspoons ground black pepper
1 (12 ounce) bottle mexican pilsner beer
1 bunch cilantro
1/4 bunch parsley
1 tomatoes
1 onion
1 1/2 teaspoons cumin
1 (8 ounce) can chicken broth
1/2 cup oil
1 1/2 lbs yucca root

Steps:

  • Slice lamb into about 4 ounce size pieces, place the bones aside, but do not dispose of them.
  • Lay lamb chunks flat in a flat bottom bowl or pie dish.
  • Mix together 2 cloves diced garlic, 1 tspn. annatto, 1/2 tsp salt, 1/2 tsp pepper, 1/2 cup of the beer and 2 tsp of the mustard.
  • Pour evenly over your lamb.
  • Spread the last tsp of mustard over the top of the lamb meat.
  • Let stand for 2-4 hours.
  • Place in blender 1/2 tomato, the onion coarsely chopped, the cilantro, parsley, 1 tsp of the cumin and 1/4 cup of broth/stock.
  • Mix until well blended.
  • Peel yucca root and slice into 1 inch cubes.
  • Place cubes in a pot full of water and bring to a boil.
  • Boil until yucca is easily penetrated with a fork, then set aside.
  • Once the meat is marinated, place oil in pan and heat.
  • When oil is warm, add the meat without the marinade.
  • Sear the outside evenly and place aside. Now add the vegetable blend to the pan and fry for about 1 minute.
  • Add the meat back in, stir and cook for another 5 minutes over medium high heat. Add the marinade left over, the bones you set aside before and the rest of the broth/stock.
  • When stew comes to a boil, reduce heat to medium, add the rest of the chopped tomato and leave to simmer for about 1 hour or until meat is very tender.
  • Stir occasionally. At this time, add the rest of the cumin, annato, pepper and beer.
  • Bring heat back up to med-high and bring to a boil. Leave boiling for 2 minutes, then reduce heat to low.
  • Add yucca root and stir.
  • Let sit for 5 more minutes, then remove from heat.
  • Serve with spiced rice.

2-3 lbs goat meat pieces with bone
canola oil
1/2 c flour
1 tsp + adobo
3 cloves garlic, minced
4-5" leek, chopped
1/2 onion, chopped
1 tsp thyme
1 tsp oregano
1 tsp + salt
1 tsp freshly ground pepper
1 tsp marjoram
1 tsp curry powder
1 dried chile ancho
1 dried chile pasilla
1 can diced tomatoes
1/2 c. red wine
handful parsley, chopped
2 bay leaves
4 cloves

Steps:

  • Combine flour and adobo in plastic bag, add goat meat and shake to coat. Remove core & seeds from dried chiles, soak in very hot water until soft. Blend chiles with a little cold water and tomatoes. Heat canola oil in large skillet; add goat pieces and brown for 5 minutes or so. Add garlic, leek, onion, and seasonings; sauté until golden. Add puréed chile/tomato mixture, wine, bay leaves, parsley, and cloves. Simmer 1 3/4 hrs.
