1/2 cup (1 stick) unsalted butter, softened
2 pounds Homemade Goat Cheese
1 teaspoon coarse salt
3/4 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
2 cups Ron Suhanosky's Mint Pesto
2 cups prepared fig or plum jam
Crackers, for serving

Steps:

  • Line an 8 1/2-by-4 1/2-inch loaf pan with parchment paper; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter until smooth. Add goat cheese, in batches, and beat until well combined and no lumps of butter remain. Season with salt and pepper; beat until well combined.
  • Divide goat cheese mixture into 3 equal portions. Using an offset spatula, carefully spread one portion of the goat cheese mixture over the bottom of the prepared terrine mold; top with pesto, spreading evenly to cover.
  • Spread a second portion of goat cheese mixture on top of the pesto and top with jam, spreading evenly to cover. Top with remaining portion of goat cheese mixture; cover with plastic wrap. Transfer to refrigerator and chill until firm. Slice crosswise and serve with crackers.

6 ounces goat cheese
4 ounces cream cheese
8 garlic cloves, roasted, peeled, chopped
1/2 cup pesto sauce, fresh
1/2 cup sun-dried tomatoes, chopped fine with one tablespoon of marinade or 1/2 cup olive oil
1 teaspoon fresh ground black pepper
1 teaspoon coarse sea salt
fresh basil, cracked pepper garnish
sliced French baguettes or good cracker

Steps:

  • Mix goat cheese and cream cheese, add the garlic, add salt.
  • Line a small glass bowl (about 2 - 3 cups) with plastic wrap.
  • I always put a little oil in first to help hold it down.
  • Put about 1/3 of the goat cheese mix into the bowl.
  • Flatten with a well oiled spoon.
  • Top this with the pesto.
  • Put another 1/3 of the goat cheese mix on top of this.
  • Put the sundried tomatoes on this.
  • Top with the rest of the cheese.
  • Put plastic wrap over the top of this.
  • Refrigerate for at least 2 hours, and up to four days.
  • To serve, invert bowl on a serving dish. Carefully remove the plastic.
  • wrap. Serve with baguettes or crackers.

TOMATO AND GOAT CHEESE TART

The tomato tarts and quiches I've been eating in Provence are delightful. Spreading mustard on the crust before you top it with tomatoes is a new idea that makes perfect sense to me, as mustard is such a perfect condiment for tomatoes.

1 yeasted olive oil pastry (1/2 recipe)
3 tablespoons Dijon mustard
1 1/2 pounds ripe tomatoes
Salt and freshly ground pepper
2 to 3 tablespoons chopped fresh parsley, marjoram, basil or a combination, or 2 to 3 teaspoons fresh thyme or chopped rosemary
2 eggs
4 ounces goat cheese, crumbled
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 350 degrees. Oil a 10-inch tart pan and line it with the pastry. Keep in the refrigerator while you prepare the filling.
  • Brush the mustard over the bottom of the dough. Slice the tomatoes and arrange over the mustard in concentric circles, overlapping them slightly. Sprinkle with salt, pepper and the herbs.
  • Beat together the eggs and goat cheese. Season with salt and pepper and pour over the tomatoes. Drizzle on the olive oil. Place in the oven and bake 30 to 40 minutes, until the top is nicely browned. Remove from the heat and allow to cool for 10 minutes before serving. Serve hot, warm or at room temperature.

You can make this up to three days ahead; be sure to start at least one day in advance.

4 garlic cloves
1 1/2 cups (packed) fresh basil leaves
1/4 cup pine nuts
2 tablespoons extra-virgin olive oil
1 teaspoon fresh lemon juice
2 2/3 cups cream cheese, room temperature (about 21 ounces)
1/4 cup freshly grated Parmesan cheese
1 1/3 cups drained oil-packed sun-dried tomatoes
1/3 cup tomato paste
3/4 cup butter, room temperature
Nonstick vegetable oil spray
Fresh basil sprigs
Toasted pine nuts
Baguette slices, toasted

Steps:

  • Finely chop garlic in processor. Add basil, 1/4 cup pine nuts, oil and lemon juice. Process until well blended. Add 1/3 cup cream cheese and 1/4 cup Parmesan cheese. Using on/off turns, process just until blended. Transfer pesto to medium bowl.
  • Coarsely chop tomatoes in processor. Add tomato paste and process until mixture is almost smooth. Add 1/3 cup cream cheese and blend well.
  • Using electric mixer, beat 2 cups cream cheese and butter in large bowl until fluffy. Season with salt and pepper.
  • Spray 6-cup soufflé dish with nonstick spray. Line with plastic wrap, extending plastic over sides. Spread 3/4 cup cream cheese-butter mixture evenly over bottom of prepared dish. Top with half of tomato mixture, then 1/2 cup cream cheese-butter mixture, then half of pesto mixture. Repeat layering with 1/2 cup cream cheese-butter mixture, remaining tomato mixture, 1/2 cup cream cheese-butter mixture and remaining pesto. Top with remaining cream cheese-butter mixture. Cover and chill overnight. (Can be made 3 days ahead. Keep refrigerated.)
  • Invert torta onto platter. Peel off plastic. Garnish with basil sprigs and toasted pine nuts. Serve with baguette slices.

This is an easy recipe and a family favorite. I am always asked for the recipe when I take it to a gathering. I got this from my neighbor when I was living in married housing in college 20 yrs ago and I am still making it to this day. Absolutely a family tradition.

2 (8 ounce) packages crescent rolls
2 (8 ounce) packages cream cheese
1 egg
1 teaspoon vanilla
3/4 cup sugar
1/2 cup sugar, keep separate
1 cup walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Spray bottom of 9x13 pan with cooking spray.
  • Mix 2 pkgs softened cream cheese, egg yolk, 3/4 cup sugar and 1 tsp vanilla with mixter until creamy.
  • Roll out 1 pkg. of crescent rolls in bottom of 9x13 pan pinching seams together to cover bottom of pan.
  • Empty cream cheese mixture onto top of crescent roll base. Unroll other pkg of crescent rolls again pinching seams together.
  • Beat egg white with fork until frothy. Spread egg white over crescent roll making sure to cover entire top.
  • Mix 1/2 cup sugar and 1 cup chopped walnuts. Sprinkle on top of crescent roll top.
  • Bake at 350 for about 27 minutes or until golden brown. Cool then chill in fridge, great made the day before. Cut in squares.

  • Mix thoroughly, using an electric mixer.
  • Place a layer of thinly sliced fontina cheese in the bottom of the prepared pan.

1 (8 ounce) package cream cheese, room temperature
4 ounces goat cheese, room temperature
1 garlic clove, minced
2 teaspoons dried oregano
1/4 teaspoon pepper
1/4 cup prepared pesto sauce
1/4 cup sun-dried tomato packed in oil
1 -2 tablespoon slivered almonds (to garnish)
fresh oregano (to garnish) or parsley sprig (to garnish)

Steps:

  • Line a 8 x 3 loaf pan, soufflé pan or decorative mold with plastic wrap.
  • In a large bowl, with a hand mixer or by hand, combine cream cheese, goat cheese, garlic, oregano, and pepper; stir until well blended.
  • Spread 1/3 of the cheese mixture onto the bottom of prepared pan (I use wet fingers to spread the cheese). Top with pesto, spreading evenly.
  • Layer with another 1/3 of the cheese mixture.
  • Drain sun-dried tomatoes and finely chop; spread evenly over cheese mixture in pan. Top with remaining cheese.
  • Cover with plastic wrap and press gently to pack. Refrigerate overnight.
  • Uncover and invert onto a serving plate, carefully removing the remaining wrap.

Vegetable oil for brushing pan
1/4 cup finely chopped rinsed drained bottled roasted red peppers
20 oz soft mild goat cheese, softened at room temperature (2 cups)

a 2 1/4-cup loaf pan (5 3/4 by 3 1/2 by 2 1/4 inches)

Steps:

  • Drain pesto in a small fine-mesh sieve set over a bowl 15 minutes, then discard excess oil.
  • Lightly oil loaf pan and line with a sheet of plastic wrap large enough to allow a generous overhang on all 4 sides.
  • Blot peppers well between paper towels to remove excess liquid.
  • Spread about one fourth (1/2 cup) of cheese evenly over bottom of loaf pan and top with all of pesto, spreading evenly. Drop 1/2 cup cheese by tablespoons over pesto and spread gently to cover pesto.

Steps:

  • Mix goat cheese and cream cheese in a bowl. Season with salt and pepper to taste.

For crust:
1 1/2 sticks (3/4 cup) cold unsalted butter
1 cup all-purpose flour
3/4 cup yellow cornmeal
1 teaspoon salt
3 tablespoons ice water
pie weights or raw rice for weighting crust
For custard:
1/2 cup packed fresh basil leaves
7 ounces mild soft goat cheese, softened
3/4 stick (6 tablespoons) unsalted butter, well softened
1/2 cup sour cream
2 large eggs
3/4 pound vine-ripened cherry tomatoes (preferably red)

Steps:

  • Make crust:
  • Cut butter into pieces.
  • In a food processor pulse together flour, cornmeal, and salt. Add butter and pulse until mixture resembles coarse meal. Add ice water and pulse until incorporated and mixture just forms a dough. Press dough evenly into bottom and up sides of a 10 1/2- by 7- by 1-inch rectangular tart pan with a removable fluted rim (see note, above) and roll a rolling pin over rim of pan to trim dough flush with rim. Chill crust about 20 minutes, or until firm.
  • While crust is chilling, preheat oven to 375°F.
  • Line crust with foil and fill with pie weights or raw rice. Bake crust in lower third of oven until edge is set, 10 minutes. Carefully remove foil and weights or rice and bake crust 5 minutes more, or until just dry. Leave oven on and cool crust in pan on a rack (crust may crack slightly). Crust may be made 1 day ahead and kept, loosely covered with plastic wrap, at room temperature.
  • Make custard:
  • Chop basil. In a bowl whisk together basil and remaining custard ingredients and season with salt and pepper.
  • Pour custard into crust, spreading evenly. Halve tomatoes and arrange, cut sides up, in one layer on custard, pressing lightly into custard. Season tomatoes with salt and pepper and bake tart in lower third of oven until custard is just set, about 25 minutes. Cool tart to warm in pan on rack. Tart may be made 1 day ahead and cooled completely before being chilled, covered, in pan. Reheat tart, uncovered, in a 350°F. oven or bring to room temperature before serving.
  • Carefully remove rim from pan. Cut tart into roughly 2-inch pieces and serve warm or at room temperature.
