KOREAN STYLE BARBECUE SHORT RIBS

1 cup soy sauce
1/2 cup sugar
1/8 cup sliced green onion
1 tablespoon white sesame seeds
2 tablespoons sesame oil
2 tablespoons ko chu jang (Korean hot pepper sauce)
1 1/2 pounds short ribs (have your butcher cut 1/8-inch thick slices of short ribs, bone attached)

Steps:

  • Preheat a grill.
  • Combine soy sauce, sugar, green onions, sesame seeds, sesame oil, and ko chu jang with ribs and marinate for 30 minutes to 1 hour. Grill over charcoal barbecue grill.
  • Note: Adjust sweetness or spiciness by adding more or less of either sugar or ko chu jang sauce.

After trying many recipes for homemade-style Korean BBQ, I finally found a great recipe from a friend who learned it from his mom. It's sweet, salty, spicy, and very tender (Thanks to the Coke®). I use this same recipe to make Bulgogi and Dae Ji Bool Gogi (Spicy Pork) and simply change the onions to sliced bulbs for the bulgogi.

¾ cup cola-flavored carbonated beverage (such as Coca-Cola®)
¼ cup white sugar
¼ cup soy sauce
¼ cup water
2 green onions, chopped
3 tablespoons sesame oil
1 tablespoon minced garlic
1 ½ teaspoons sesame seeds
1 teaspoon ground black pepper
2 pounds short ribs

Steps:

  • Combine cola beverage, white sugar, soy sauce, water, green onions, sesame oil, garlic, sesame seeds, and black pepper in a bowl until marinade is well-mixed.
  • Place short ribs in a resealable plastic bag and pour in marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator for at least 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove short ribs from marinade, discarding marinade.
  • Cook short ribs until browned and cooked to desired doneness, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

GOCHUJANG BARBEQUE SAUCE

This is a unique barbeque sauce I made using heirloom tomatoes from my backyard. For longer storage, can the sauce in a water bath. Make sure the water completely covers Mason jars, and the water reached a rolling boil for 15 minutes. If using the sauce within the next week, store it in the refrigerator.

½ white onion, chopped
3 pounds heirloom tomatoes, chopped
½ cup apple cider vinegar
¼ cup firmly packed light brown sugar
3 tablespoons Worcestershire sauce
3 tablespoons gochujang (Korean hot pepper paste)
2 tablespoons soy sauce
1 tablespoon molasses
4 cloves garlic, crushed
1 ½ teaspoons lime juice

Steps:

  • Heat a large saucepan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add tomatoes, vinegar, brown sugar, Worcestershire sauce, gochujang, soy sauce, molasses, garlic, and lime juice. Bring to a simmer. Remove from heat and allow sauce to cool for at least 15 minutes.
  • Fill a blender with the sauce. Puree until smooth.
  • Strain sauce through a sieve and pour into sterilized Mason jars.

Go-Chu-Jang BBQ Short Ribs image

1 kg Beef Short Ribs
3 tablespoons Oil
5 tablespoons Sliced Garlic
2 pinches Salt
2 pinches Pepper
1 piece Whole Pepper
2 tablespoons Rosemary
6 tablespoons BBQ Sauce
3 tablespoons Go-Chu-Jang

Steps:

  • Soak the ribs in cold water for 1 hour to remove the blood
  • Marinade the ribs with rosemary (herbs), oil, salt and pepper
  • Start grilling the ribs
  • Baste the ribs with the mixture of BBQ and Gochujang sauce, flip and baste again
  • Garnish with fried garlic and whole pepper. Serve with grilled/fresh vegetables if wanted
