Gluten Free Ham & Cheese Quiche Bites image

These delicious mini-quiches are both satisfyingly sweet and savory. Fresh earthy spices and savory Colby-Jack cheese are perfectly balanced with the crust made from Pamela's Gluten Free Pecan Shortbread cookies. This recipe is easily doubled to make 36-40 mini quiches or one 9-inch pie (***see baking notes at bottom of recipe for whole pie.).

0.5 (7 1/4 ounce) package pecan shortbread cookies (Pamela's Gluten-Free brand recommended)
1 tablespoon butter, melted
2 eggs, slightly beaten
1/2 cup milk
2 ounces colby-monterey jack cheese, shredded
1/4 cup green bell pepper, finely diced
1/4 cup yellow onion, finely diced
1/8 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon fresh thyme
1/2 teaspoon fresh tarragon
1/2 cup ham, finely chopped (gluten-free deli slices or leftover cooked ham)

Steps:

  • Crush the cookies in food processor or large Ziplock bag, then stir in melted butter.
  • Put 1 teaspoon cookie mixture into 18-22 mini tart or mini muffin cups. Tamp down with thumb or tart press to create a bottom crust.
  • Combine the rest of the ingredients except the ham.
  • Spoon about 1-2 Tablespoons of the mixture into each mini tart cup.
  • Sprinkle chopped ham over the tops of each quiche.
  • Bake at 350° for 15-20 minutes or until knife inserted in center comes out clean.
  • If desired, broil 2 minutes or until lightly browned on top.
  • ***To bake a full pie: Cover with foil and bake at 350° for 50-60 minutes or until knife inserted in center comes out clean.
  • Remove foil and broil 2-5 minutes or until lightly browned on top.

These mini quiches are perfect for parties and events. Cooking time is time to cook ONE round of mini quiches in the oven. It will take more than one round to cook ALL of them. Recipe can be halved very easily

2 lbs small curd cottage cheese
1/2 lb ricotta cheese
6 tablespoons sour cream (Heaping)
1 cup baking mix, such as bisquick
6 eggs, beaten
1/2 lb butter, melted
1 lb swiss cheese, shredded (can choose to use other cheeses as well)

Steps:

  • Heat oven to 350 degrees F.
  • Spray mini muffin tins with cooking spray.
  • In very large bowl, mix all ingredients together.
  • You may also divide ingredients EVENLY and mix in two seperate large bowls.
  • Using a pastry bag, fill mini muffin tins (recipes makes approx. 96 mini quiches; recipe halves very easy) almost full with quiche mixture.
  • Bake for approximately 30 minutes.
  • You may serve these at once, or freeze for later use.
  • If frozen, they can easily be reheated in a microwave for 1-2 mins, serving immediately.

These are wonderful to serve as an appetizer and I have done so many times at my get togethers, everone loves these! to save even more time you can purchase the ready-made small tart shells and the recipe may be doubled if desired.

Number Of Ingredients 9

2 frozen 9-inch pie shells (thawed)
3 slices bacon
1/4 cup chopped green onion
2 eggs
1/2 cup half-and-half cream
1/3 cup grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 (9 ounce) package frozen spinach, thawed and well drained (use your hands to squeeze out any extra moisture)

Steps:

  • Set the oven to 375 degrees.
  • On a lightly floured surface, with a 1-1/2-inch biscuit cutter, cut out 12 rounds from the thawed pie crust.
  • Press each of the rounds into the bottom, and up the sides of ungreased mini muffin cups.
  • Repeat with the second pie crust.
  • In a skillet, cook the bacon until brown and very crisp; drain.
  • Add in the onions to the same skillet with the bacon drippings, cook for 5 minutes, or until tender, stirring constantly; drain.
  • Place the onions in a medium bowl.
  • Crumble the bacon into small pieces, and add in with the cooked green onion.
  • Add in the eggs to the bacon and onions; beat well.
  • Stir in the cream, salt, nutmeg and the Parmesan cheese.
  • Add in the squeezed spinach; mix well to combine.
  • Divide the mixture evenly into crust-lined cups.
  • Bake for 20-25 minutes, or until puffed and golden brown.
  • Cool in pan on wire rack for 10 minutes.
  • Loosen quiches from pan with tip of knife.
  • Serve warm or cool.
  • Store in the refrigerator.

You can serve this classic French egg dish, featuring bacon and Swiss, as a main course anytime of day.

1 cup Bisquick™ Gluten Free mix
1/3 cup plus 1 tablespoon shortening
3 to 4 tablespoons cold water
8 slices bacon, crisply cooked, crumbled (1/2 cup)
1 cup shredded Swiss cheese (4 oz)
1/3 cup finely chopped onion
4 eggs
2 cups whipping cream or half-and-half
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • Heat oven to 425°F. In medium bowl, cut shortening into Bisquick mix, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. In ungreased 9-inch quiche dish, press pastry evenly in bottom and up sides. Bake 12 to 14 minutes or until pastry just begins to brown and is set.
  • Reduce oven temperature to 325°F. Sprinkle bacon, cheese and onion into crust. In medium bowl, beat eggs slightly; beat in remaining filling ingredients. Pour into crust.
  • Bake 45 to 50 minutes or until knife inserted in center comes out clean. Cool 10 minutes before serving.
