SHAKE N' BAKE BARBECUE CHICKEN

Crispy on the outside and moist and tender inside, if desired you may marinate the breasts in the BBQ sauce for up to 8 hours, for a little heat add in a pinch or more of cayenne to the dry coating mixture or the barbecue sauce :)

1/2 cup kraft original barbecue sauce (or use a different flavor of Kraft BBQ sauce)
1 tablespoon Dijon mustard
3/4 cup original Shake-n-Bake
3/4 cup dry breadcrumbs (use only dry breadcrumbs for this)
1 teaspoon garlic powder
1 teaspoon seasoning salt
1/2 teaspoon fresh ground black pepper
7 boneless skinless chicken breasts

Steps:

  • Set oven to 400 degrees F.
  • Set oven rack to lowest position.
  • Grease a 15 x 10-inch baking sheet.
  • In a small bowl combine the BBQ sauce with Dijon mustard until well combined.
  • In a shallow dish combine the Shake N' Bake coating mix with dry breadcrumbs, garlic powder, seasoned salt and black pepper.
  • Using a pastry brush coat the BBQ sauce mixture liberally all over the chicken breasts (using up all the BBQ sauce).
  • Coat the breast into the crumb mixture on both sides (discard any remaining crumb mixture).
  • Place in a single layer on the baking sheet.
  • Bake for about 25 minutes (baking time for regular size breasts should not take more than 25 minutes or they will become dry, for exta large thick breasts allow 5 minutes more cooking time).

1 tablespoon butter or margarine
1 cup Bisquick™ Gluten Free mix
1 teaspoon seasoned salt
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon pepper
2 eggs, beaten
1 cut-up whole chicken (3 lb)

Steps:

  • Heat oven to 400°F. Melt butter in 13x9-inch baking dish in oven.
  • In medium bowl, stir Bisquick mix, salt, paprika, garlic powder and pepper. Place eggs in shallow dish. Dip chicken into eggs, then coat with Bisquick mixture; repeat dipping in eggs and Bisquick mixture. Place skin side down in heated dish.
  • Bake 35 minutes. Turn chicken; bake about 15 minutes longer or until juice is clear when thickest part is cut to bone (165°F).

4 cups dry bread crumbs
⅓ cup vegetable oil
1 tablespoon salt
1 tablespoon paprika
1 tablespoon celery salt
1 teaspoon ground black pepper
½ teaspoon garlic salt
½ teaspoon minced garlic
¼ teaspoon minced onion
1 pinch dried basil leaves
1 pinch dried parsley
1 pinch dried oregano

Steps:

  • In a large resealable plastic bag combine the crumbs, oil, salt, paprika, celery salt, pepper, garlic salt, minced garlic, minced onion, basil, parsley and oregano. Seal bag and shake all ingredients together.

I found this recipe on a nice German website about American food. It has become my standard coating mix for meat, fish and tofu. And I use it instead of breadcrumbs in meat balls or meat loafs. According to the site I got the recipe from, you can use the mix without egg and then bake your coated foods in the oven. As I didn't try that yet, I can't guarantee it will work. The recipe called for raw sesame seeds, but I think they're nicer when toasted. Also it only says to crush the corn flakes. That's okay, too, but I find it stucks better to the meat when powdery, so I use to blend everything. And of course you can add more or other herbs or spices to your taste!

3 cups unsweetened corn flakes
1/2 cup sesame seeds
4 teaspoons dried parsley
2 teaspoons salt
1 teaspoon paprika
1 taespoon mustard powder
1 teaspoon celery salt
1 teaspoon onion salt (or powder)
1 teaspoon black pepper

Steps:

  • Toast the sesame seeds in an ungreased skillet. Allow to cool.
  • Place everything in a food processor or blender and process until powdery. Depending on your liking make it more or less powdery, but don't overmix because the sesame seeds will become tahini --
  • Store in airtight container.
  • To coat, beat two eggs, toss meat, fish or tofu (or veggies) in eggs, then in coating mix. Fry.
  • Shake'n bake works very well with this.
  • Or use it in recipes calling for breadcrumbs - it adds a very nice flavor.

It's healthy (and grain-free for those with allergies). Everyone asks me for the recipe...that's my cue to add it to Allrecipes!

½ cup almond meal
1 teaspoon ground paprika
1 teaspoon sea salt
1 teaspoon ground black pepper
4 skinless, boneless chicken thighs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine almond meal, paprika, sea salt, and black pepper together in a resealable bag. Put each chicken thigh into bag, 1 at a time; close bag and shake until evenly coated. Place chicken in a glass baking dish.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
