Gluten-Free Peanut Butter and Jam Cookie Bars image

Grape jam sandwiched between peanut butter dough for delightful cookie bars - perfect for dessert.

1 1/4 cups gluten-free old-fashioned oats
1/2 cup white rice flour
1/2 cup almond flour
1/4 cup gluten-free oat flour
1/4 cup tapioca flour
1 teaspoon gluten-free baking powder
1/2 teaspoon baking soda
1 cup coarsely chopped salted peanuts
1/2 cup butter, softened
1/2 cup sugar
1/2 cup creamy peanut butter
2 eggs
1 jar (12 oz) gluten-free grape jam

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray (without flour).
  • In medium bowl, mix oats, flours, baking powder, baking soda and 3/4 cup of the peanuts with whisk; set aside. In large bowl, beat butter, sugar and peanut butter with electric mixer on medium speed until blended. Beat in eggs. Gradually add oat mixture, beating on low just until combined.
  • Press two-thirds (about 3 1/2 cups) of the dough in pan. Spread jam over crust. Drop heaping spoonfuls of remaining dough over jam. Sprinkle with remaining 1/4 cup peanuts.
  • Bake 25 to 30 minutes or until set and golden brown. Cool in pan on cooling rack 1 hour. Refrigerate 30 minutes. Cut into 6 rows by 4 rows. Store in refrigerator.

1 box Betty Crocker™ Gluten Free chocolate chip cookie mix
Butter, pure vanilla extract and egg called for on cookie mix box
1/3 cup light corn syrup
3 tablespoons butter, softened
3 tablespoons peanut butter
1 tablespoon plus 1 1/2 teaspoons water
1 1/4 teaspoons pure vanilla extract
Dash salt
3 1/2 cups gluten-free powdered sugar
1 bag (14 oz) caramels, unwrapped
2 tablespoons water
1 1/2 cups gluten-free dry-roasted peanuts
1 bag (11.5 oz) milk chocolate chips (2 cups)

Steps:

  • Heat oven to 350°F. Make cookie dough as directed on box, using butter, vanilla and egg. In ungreased 13x9-inch pan, press dough evenly. Bake 18 to 20 minutes or until light golden brown. Cool about 30 minutes.
  • In large bowl, beat all filling ingredients except powdered sugar with electric mixer on medium speed until creamy and smooth. Gradually beat in powdered sugar until well blended (filling will be thick). Press filling over cookie base.
  • In medium microwavable bowl, microwave caramels and 2 tablespoons water uncovered on High 2 to 4 minutes, stirring twice, until caramels are melted. Stir in peanuts. Spread evenly over filling. Refrigerate about 15 minutes or until caramel layer is firm.
  • In small microwavable bowl, microwave chocolate chips uncovered on High 1 to 2 minutes, stirring once, until melted. Spread evenly over caramel layer. Refrigerate about 1 hour or until chocolate is set. For bars, cut into 6 rows by 6 rows. Store covered at room temperature.

I did a combination of two recipes, peanut butter cookies with three ingredients and magic cookie bars. My brother-in-law loves magic cookie bars but is now gluten-free. I have been trying to come up with desserts for him so he doesn't feel left out. This is an amazing dessert and will stay fresh for days...if they last that long in your house! Perfect for Passover - no flour!

2 cups white sugar
2 large eggs
2 cups peanut butter
¾ cup semisweet chocolate chips
¾ cup dark chocolate chips
½ cup chopped raw pecans
½ cup chopped raw almonds
1 cup flaked coconut
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch glass baking dish with parchment paper.
  • Mix sugar and eggs together in a bowl until smooth; stir in peanut butter until well blended. Pour peanut butter mixture into the prepared baking dish.
  • Bake in the preheated oven until cookie base is partly cooked, 8 minutes.
  • Layer semisweet chocolate chips, dark chocolate chips, pecans, almonds, and coconut onto the cookie base. Slowly pour sweetened condensed milk evenly over the toppings.
  • Bake in the preheated oven until coconut is slightly brown, about 30 minutes.
  • Cool completely before removing cookie bars from pan. Peel away parchment paper and cut into small squares using a sharp knife.

1 ½ cups chopped pecans

Steps:
