1 pint lime sorbet or 1 can lime ade from frozen juice section
8 shots light rum
1/2 cup mint leaves
1 tray ice cubes

Steps:

  • In a blender, combine 1/2 pint sorbet or 1/2 can of limeade with 4 shots of rum, 1/4 cup mint leaves and 1/2 tray of ice. Pulse, then blend on high until lime-mint slush is smooth. Pour drinks into 2 large cocktail glasses using a long handled spoon and repeat with remaining ingredients.

1 cup sugar
1 cup water
1/2 cup fresh lime juice, about 4 to 6 limes
1/4 cup fresh mint leaves, firmly packed
2 limes, zested
1/2 cup light rum
8 cups crushed ice
Mint sprigs and lime wedges, for garnish

Steps:

  • In a saucepan over medium heat, add the sugar and water. Cook for about 5 minutes, stirring often, until the sugar is dissolved and the syrup is clear. Set aside to cool.
  • Put the sugar syrup, lime juice, mint leaves, lime zest, and rum into a blender and blend until smooth. Add the ice and blend until slushy. Spoon into glasses; garnish with a sprig of mint and a lime slice.

We do a lot of RVing and camping and I am always on the look out for cocktails that can be made ahead and enjoyed on the go. After falling in love with mojitos, I knew I needed to find a way to make these easier to bring along with us...hope you enjoy!

1 cup mint leaf
1 (12 ounce) can limeade
3 cups water
2 limes
1/2 cup sugar
12 ounces bacardi rum
club soda

Steps:

  • Place sugar and 1 cup water in saucepan, bring to a boil and stir until sugar is dissolved. Remove from heat and cool.
  • Place mint leaves in a bowl with the juice of 1 lime and a sprinkling of sugar and using a muddler or the end of a wooden spoon/rolling pin/etc mash the leaves up until they are all mushed up.
  • Combine the sugar syrup, limeade, remaining water, mashed mint leaves/lime juice, the juice form the other lime and the rum in large bowl. Cut up the limes and toss into the mixture.
  • Pour the mixture into a resealable gallon size freezer bag and allow to freeze.
  • When ready to serve use a ratio of 1:1 of slush and club soda. You can add ice cubes to help it stay cool --
  • **Use the limeade can to measure out the rum**.

2 tablespoons tightly packed fresh mint leaves
1 small lime, cut into 4 wedges
1/2 cup light rum
4 tablespoons sugar
1 1/2 cups small ice cubes
1/2 cup club soda
Additional fresh mint leaves

Steps:

  • In each of 2 highball glasses, muddle (crush together) about 1 tablespoon mint leaves with juice squeezed from 2 lime wedges. Add lime wedges to glasses; muddle. Stir 1/4 cup of the rum and 2 tablespoons sugar into each glass. Mix well to dissolve sugar. Add about 3/4 cup ice to each.
  • Pour 1/4 cup club soda into each glass; stir well. Garnish with mint.

2 limes
1 1/2 lb assorted melons, cut into 1-inch cubes (about 5 cups)
1/3 cup sugar
1/3 cup dark rum, if desired
3 tablespoons finely chopped fresh mint leaves
12 bamboo skewers (5 or 6 inch)

Steps:

  • Grate 2 tablespoons peel from limes. Cut each lime in half crosswise; squeeze halves over small bowl to remove 6 tablespoons juice.
  • Place melon cubes in 1-gallon resealable food-storage plastic bag. Sprinkle lime peel and pour lime juice over melon. Add sugar, rum and mint. Seal bag; turn to coat melon.
  • Refrigerate at least 1 hour to blend flavors but no longer than 24 hours. To serve, thread 4 or 5 melon cubes on each skewer. Discard marinade.

1 package (3 ounces) lime gelatin
2 tablespoons sugar
1 cup boiling water
1 cup fresh mint leaves
2 cans (12 ounces each) frozen limeade concentrate, thawed
2 cups cold water
1 cup grapefruit soda
1 cup rum or additional grapefruit soda
EACH SERVING:
2/3 cup grapefruit soda
GARNISH:
Lime wedge and/or fresh mint leaves

Steps:

  • In a small bowl, dissolve gelatin and sugar in boiling water; add mint leaves. Cover and steep for 20 minutes. Press through a sieve; discard mint. Stir in the limeade concentrate, cold water, soda and rum. Pour into a 2-1/2-qt. freezer container. Freeze overnight or until set., For each serving, scoop 2/3 cup slush into a glass. Pour soda into the glass; garnish as desired.
