3 cups gluten-free all purpose baking flour
2 cups white sugar
⅓ cup cocoa powder
2 ¼ teaspoons baking powder
1 ½ teaspoons baking soda
1 ½ teaspoons xanthan gum
1 ½ cups mayonnaise
1 ½ cups hot water
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray two 9-inch cake pans with cooking spray.
  • Combine flour, sugar, cocoa powder, baking powder, baking soda, and xanthan gum in a bowl; stir in mayonnaise until well mixed. Gradually pour in hot water and vanilla extract; stir until smooth. Spoon batter into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean and the cake slightly pulls away from the sides of the pan, about 30 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 (19 ounce) can garbanzo beans, rinsed and drained
4 eggs
¾ cup white sugar
½ teaspoon baking powder
1 tablespoon confectioners' sugar for dusting

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
  • Place the chocolate chips into a microwave-safe bowl. Cook in the microwave for about 2 minutes, stirring every 20 seconds after the first minute, until chocolate is melted and smooth. If you have a powerful microwave, reduce the power to 50 percent.
  • Combine the beans and eggs in the bowl of a food processor. Process until smooth. Add the sugar and the baking powder, and pulse to blend. Pour in the melted chocolate and blend until smooth, scraping down the corners to make sure chocolate is completely mixed. Transfer the batter to the prepared cake pan.
  • Bake for 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean. Cool in the pan on a wire rack for 10 to 15 minutes before inverting onto a serving plate. Dust with confectioners' sugar just before serving.

This deliciously moist and fudgy chocolate cake is made with a gluten-free twist that nobody ever suspects: quinoa! I've also made a vegan option of this by using egg substitute and replacing the milk with almond milk. The taste and texture was identical to my non-vegan original! Either version stores well in a sealed container in the refrigerator for up to 1 week or in the freezer for up to 1 month. My favorite frosting for this cake is coconut cream cheese.

150ml vegetable oil, plus extra for the tins
175g plain gluten-free flour
1 tsp xanthan gum
50g cocoa powder
1 tbsp baking powder
½ tsp bicarbonate of soda
75g dark brown soft sugar
75g caster sugar
2 tbsp golden syrup
2 eggs
100g Greek yogurt
100ml milk
2 tbsp instant coffee, dissolved in 4 tbsp hot water
300g icing sugar
25g cocoa powder
150g soft salted butter
3 tbsp milk
65g dark chocolate, melted

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil the base of two 18cm sandwich tins and line with baking parchment. Mix the flour, xanthan gum, cocoa, baking powder, bicarbonate of soda, a large pinch of salt and both sugars together in a large bowl.
  • Whisk the golden syrup, eggs, oil, yogurt, milk and coffee together in a jug. Gradually whisk the wet ingredients into the dry until you have a smooth mixture.
  • Pour the mixture into the prepared tins and bake for 30-35 mins until risen and firm to the touch. Remove from the oven and leave to cool for 10 mins in the tins before turning out onto a cooling rack.
  • While the cakes are cooling, make the icing. Beat the icing sugar, cocoa powder, butter and milk together for 5 mins until smooth and fluffy. Gradually pour in the melted chocolate while beating, scraping down the sides of the bowl to make sure everything's included.
  • Spread half the icing over the middle of one sponge using a small palette knife. Sandwich the other sponge on top, with the flat bottom-side facing up. Spread the remaining icing around the top and sides of the cake, smoothing over with a palette knife. If you have any icing left, you can pipe some rosettes on top of the cake.

8 ounces semisweet chocolate (1 1/2 cups chocolate chips)
1/4 lb butter (1 stick)
4 eggs
4 tablespoons brown sugar
2 teaspoons vanilla
1 tablespoon cocoa powder
1/8 teaspoon salt

Steps:

  • 4- 6 ounce ramekins or creme brulee dishes.
  • Melt the chocolate & Butter together in a double boiler. In the meantime, whisk together the rest of the ingredients in a separate bowl. Prepare the ramekins by covering the insides with a thin film of butter, then add enough white sugar to coat the film of butter. Remove excess sugar.
  • When the chocolate and butter have melted, pour them into the egg mixture and whisk together. The batter will thicken as you whisk it together. Fill the ramekins 3/4 full, leaving enough room for the cake to raise. Because this desert is served straight out of the oven, refrigerate until just before you need them. Preheat the oven to 400 degrees F and then put them in on a cookie sheet or tray.
  • You'll want to under bake them so that the center stays soft. If you've refrigerated them beforehand, it will take a little longer, about 15 to 20 minutes. If you are baking them right away, 10 to 15 minutes should do it.
  • Check them every 5 minutes or so, and more often near the end. You don't want to overdo it, because then the center isn't soft and runny.
  • To serve, gently invert the ramekin onto a plate and dust with powdered sugar. Vanila ice cream goes really well with this rich chocolate dessert.
  • You can use any 6 ounce oven ware containers to make these if you don't have ramkins.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan and set aside.
  • In a medium bowl, sift together the sorghum, tapioca, and rice flours with the cocoa powder, xanthan gum, baking powder, and baking soda.
  • In a large mixer bowl, cream the butter until light and fluffy. Slowly beat in the brown and white sugars; whip until fluffy. Beat in the eggs and egg yolks one at a time. Add the vanilla. On low speed, alternately combine the buttermilk with the flour mixture. Pour batter into prepared pan.

1/2 cup gluten-free flour (King Arthur)
1/2 cup sugar
1/4 cup cocoa powder
1 pinch salt
6 tablespoons sour cream
6 tablespoons vegetable oil
6 tablespoons cream or 6 tablespoons milk
1 dash vanilla
1/4 cup vegetable oil
6 -8 tablespoons chocolate chips (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Spray 4 medium ramekins with cooking spray; set aside. If microwaving, spray mugs with cooking spray.
  • In a medium bowl, whisk together flour, sugar, cocoa powder, and salt until no streaks remain.
  • Add in sour cream and 6 tablespoons of vegetable oil, and mix with a spoon until a thick paste forms.
  • Mix in cream and vanilla until completely combined.
  • Whisk in your remaining 1/4 cup of vegetable oil until thoroughly combined.
  • Fold in chocolate chips.
  • Scoop an equal amount of batter into each ramekin, using about 1/3 of cup for each cake.
  • Bake for 17-20 minutes for a lava cake, or 23-26 minutes for a fully cooked cake. If microwaving, cook for 2-4 minutes in mugs.
  • Allow to cool for 5 minutes, and turn the cakes out onto a plate or platter.
  • Serve warm with a dusting of powdered sugar, and a scoop of ice cream. Enjoy!

Steps:

  • Melt chocolate and butter in a double boiler. Set aside.
  • Preheat the oven to 350°F/360°C degrees.
  • Whip egg whites until a stiff peak forms. Set aside.
  • In another bowl, mix egg yolks and sugar. Add the chocolate and butter mixture and mix.
  • Mix in the hazelnut meal, cocoa powder, and liquor (if using) and mix.
  • Fold in the egg whites and mix. Pour in a 7-inch springform pan.
  • Bake for 30 minutes.
  • Cool and refrigerate for several hours or overnight. Sprinkle powdered sugar on top using a small strainer.

1 pound plus 3 ounces bittersweet chocolate such as Lindt, broken into chunks
10 tablespoons (1 1/4 sticks) unsalted butter, cut into pieces, at room temperature
1 tablespoon Cup4Cup gluten-free flour
1 1/2 tablespoons sugar
1 teaspoon instant coffee granules
1/4 teaspoon kosher salt
4 extra-large eggs, at room temperature, separated
1/4 cup heavy cream
Coffee or vanilla ice cream, for serving

Steps:

  • Preheat the oven to 425 degrees F. Grease an 8-inch springform pan and line the bottom with parchment paper.
  • Place the one pound of chocolate in a large heat-proof bowl set over a pan of simmering water and stir occasionally until the chocolate is melted. Off the heat, immediately stir in the butter, flour, sugar, coffee granules, and salt with a rubber spatula. Whisk in the egg yolks until smooth.
  • Place the egg whites in the bowl of an electric mixer fitted with the whisk attachment and beat until they form soft peaks. Scrape the egg whites into the chocolate mixture and fold them in very carefully with a rubber spatula, just until combined. Scrape the mixture into the prepared pan, smooth the top, and bake for 15 minutes exactly. (Be sure your oven temperature is accurate!)
  • Turn the oven off and leave the cake in the oven, leaving the door slightly ajar. Allow the cake to cool in the oven for 1 hour. The cake will sink in the middle.
  • Carefully release the sides of the pan and slide the cake onto a flat serving plate or cake stand. Place the 3 ounces of chocolate and the heavy cream in a heat-proof bowl set over a pan of simmering water and heat just until the chocolate melts, stirring occasionally. Add a drop of cream if the mixture is too thick to pour. Pour the chocolate onto the sunken part of the cake, leaving the edge unfrosted. Allow to cool and serve warm or at room temperature with a scoop of ice cream.

2-1/4 teaspoons cornstarch

1 cup chopped walnuts, toasted
Additional confectioners' sugar

Steps:

  • In a large bowl, combine the confectioners' sugar, cocoa powder, cornstarch and salt. Stir in egg whites and coffee liqueur until batter resembles frosting. Add walnuts., Drop by tablespoonfuls 3 in. apart onto parchment-lined baking sheets. Bake at 300° until set, 10-14 minutes. Cool for 2 minutes before removing from pans to wire racks to cool completely. Dust with additional confectioners' sugar.

225 g dark chocolate
6 eggs, separated
1 pinch salt
125 g unsalted butter, softened
435 g unsweetened chestnut puree
2 tablespoons rum
65 g granulated sugar
whipped cream
candied chestnuts (for decoration)

Steps:

  • Preheat the oven to 180 degrees C, gas mark 4. Grease a 23 cm spring form or cake tin.
  • Break the chocolate into pieces and melt in the microwave or in a double boiler (au bain-marie), and set aside.
  • Whisk the egg whites with a pinch of salt until stiff, but not dry.
  • In another bowl, whisk butter and chestnut puree with the sugar. Gradually whisk in the egg yolks, then add the rum and chocolate.
  • Stir in a dollop of the egg white, whisk well to mix everything together, then carefully fold the rest of the egg white in the chestnut mixture.
  • Pour the batter into the tin and let bake for 40 to 60 minutes. You could do the toothpick test, but it should not come out completely clean. Let the cake cool in it's tin on a rack before you unmold it on to a plate.
  • Decorate with whipped cream and candied chestnuts.

1/4 cup whey protein (unflavoured)
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup sour cream
1/3 cup Swerve Sweetener or other erythritol
2 eggs
1/4 tsp Cherry Flavour
1/4 tsp stevia extract
1/4 cup Unsweetened Dried Cherries (finely chopped)
1 3.5 ounce 85 or 90% cacao chocolate bar (chopped)
1/2 cup sour cream
1/4 cup powdered Swerve Sweeteneror other powdered erythritol
3 tbsp cream
1/8 tsp cherry flavour
one tiny drop red food colouring paste (optional)

Steps:

  • For the cake, preheat oven to 325F and grease a bundt pan well.
  • In a medium bowl, whisk together almond flour, whey protein, baking powder, baking soda and salt.
  • In a large bowl, beat sour cream, erythritol and eggs together until smooth. Beat in cherry flavouring and stevia extract.
  • Beat in almond flour mixture, then stir in chopped cherries and chocolate. Pour into bundt pan and smooth the top.
  • Bake 45 minutes, or until a tester inserted in the center comes out clean. Let cool in pan 15 minutes and then flip out onto a wire rack to cool completely.
  • For the glaze, whisk sour cream, powdered erythritol, cream, cherry flavouring and food colouring together in a small bowl until smooth.

This is a really easy but super delicious 'all in one' cake recipe and is perfect for a special occasion. I made this for a chocoholics birthday and even though they themselves do not need to be gluten free they loved it and said they wouldn't have known it was gluten free if I hadn't told them as it was so gooey and not grainy like some gluten free cakes they've tried in the past. So here you go, a chocolatey fudge cake that everyone can enjoy...

175g self-raising all purpose gluten free flour
25g cocoa or cacao powder
1 teaspoon of gluten free baking powder
175g muscocado sugar
175g softened butter
3 large free range eggs
1 teaspoon vanilla extract
50g dark chocolate - melted
175g self-raising all purpose gluten free flour

Steps:

  • Pre-heat the oven to 180.c and line 2 x 20cm sandwich tins with baking parchment and butter the sides to stop the mixture sticking.
  • Place all the cake ingredients into a food processor and mix until smooth, scraping down the sides and re-mixing until well combined.
  • Divide the mixture between the two cake tins and bake in the oven for 30 minutes until cooked through and springy to touch. Leave for a couple of minutes and then turn out onto a wired rack to cool completely.
  • Meanwhile make the fudge frosting icing by placing all the ingredients into the cleaned food processor and mix until smooth, again scraping down the sides and re-mixing until well combined.
  • Sandwich the two sponges together with around a 1/3 of the frosting, add a further 1/3 to the top and a 1/3 to the sides of the cakes, smoothing as best you can with a spatular until the entire cake is covered with fudge frosting.
  • Decorate the cake with chocolate shavings and fudge pieces and the devour with your loved ones. This cake should serve 10.

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 8-inch square pan with cooking spray (without flour).
  • In small bowl, mix flours, cocoa, xanthan gum, baking powder and 1/2 teaspoon salt with whisk; set aside. In medium bowl, beat oil, almond butter, 1/2 cup brown sugar, the granulated sugar, eggs and water with electric mixer on medium speed until well blended. Gradually add flour mixture, beating until well blended. Pour batter into pan.
  • Bake 30 to 35 minutes or until cake springs back when touched lightly in center. Cool completely in pan on cooling rack, about 1 hour.
  • Meanwhile, in 2-quart saucepan, place 1/2 cup brown sugar, ghee, 3 tablespoons of the milk and 1/8 teaspoon salt. Heat to boiling over medium heat about 3 to 4 minutes, stirring constantly. Remove from heat; beat in powdered sugar until frosting is smooth and spreadable. If frosting is too thick, stir in additional almond milk, 1 teaspoon at a time. Frost cake. Sprinkle almonds and chocolate chips over top. Cut into 4 rows by 4 rows.
