Categories     Yeast Breads

Time 2h25m

Yield 18 breadsticks, 18 serving(s)

Number Of Ingredients 16

4 teaspoons dry active yeast
1 teaspoon sugar
1/2 cup warm water
2 tablespoons ground flax seeds
500 g gluten-free flour, mix (I used mine -- Artisan Gluten-Free Flour Blend)
2 teaspoons garlic powder
1 teaspoon guar gum
1/4 cup extra-virgin olive oil
1 1/2 teaspoons kosher salt
warm water
1/4 cup olive oil
3 minced fresh garlic cloves
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried parsley
1 pinch ground pepper

Steps:

  • Dough:.
  • Combine the yeast, sugar and warm water in a small bowl and let stand 10 minutes.
  • In a large bowl (or the bowl of a stand mixer) whisk together the flaxseed, flour, garlic powder and guar gum.
  • Add the foamy yeast mixture to the bowl and mix for 3 minutes with a sturdy spoon (or using the paddle if using a stand mixer).
  • Add the oil and salt from Column C to the bowl and mix until the dough comes together into a soft ball and feels somewhat elastic. (If the dough feels too dry, add the warm water in small amounts until the dough feels right.).
  • Set the dough aside in a warm place and let it rise for 1 hour.
  • Deflate dough and knead briefly in the bowl. Let rest 5 minutes.
  • Breadsticks:.
  • Heat the oven to 375F.
  • Combine the oil, garlic and herbs in a small bowl.
  • Divide the dough into 18 balls and shape into breadsticks (I found it easiest to treat the dough like playdough and squeeze tubes with my hands).
  • Place shaped sticks on a parchment lined sheet and brush with the garlic oil. Let rise 30 minutes.
  • Bake the breadsticks for 20 minutes. Cool at least 15 minutes before enjoying!

GLUTEN-FREE HERB AND GARLIC BREADSTICKS

GLUTEN-FREE HERB AND GARLIC BREADSTICKS image

Categories     Bread

Yield 18 pieces

Number Of Ingredients 11

½ cup water
¼ cup olive oil
¾ teaspoon salt
Dash pepper
Pinch fresh nutmeg
½ cup Mary's All-Purpose Flour Blend
1 teaspoon xanthan gum
2 large eggs
1 tablespoon fresh herbs (thyme, parsley,
basil), chopped
1 clove garlic, minced, optional

Steps:

  • 1. Preheat oven to 425 degrees. Lightly grease two baking sheets or line them with parchment paper. 2. In a medium saucepan, heat water, oil, salt, pepper and nutmeg over medium heat until liquid begins to simmer. Mix flour blend with xanthan gum and immediately add to saucepan, stirring until dough forms. Cook for 2 minutes over low heat, stirring constantly. 3. Pour the hot mixture into a food processor. Add eggs, herbs and garlic, if desired, and pulse until ingredients are incorporated and dough is smooth and elastic. 4. Spoon mixture into a pastry bag. A #14 bag with the coupling attached and no tip is just the right size for breadsticks. If you don't have a pastry bag, use a large Zip-lock plastic bag with about ¼-inch of one corner trimmed off. Squeeze out long, thin mounds of dough (8-10 inches long, ½ inch wide) onto prepared baking sheets. Use wet fingers to lightly press down the ends. 5. Bake breadsticks in preheated oven until golden brown, about 20 to 24 minutes.

GLUTEN-FREE BREADSTICKS

Categories     side dish

Time 40m

Yield 12 breadsticks

Number Of Ingredients 13

1/2 teaspoon plus 1/8 teaspoon active dry yeast
3/4 cup organic brown rice flour
1/2 cup tapioca starch (see note)
1 tablespoon nonfat dry milk powder
1/2 teaspoon xanthan gum (see note)
1/2 teaspoon unflavored gelatin powder
1/4 teaspoon sea salt
Pinch of dried herbes de Provence
1/4 teaspoon sugar
1 1/2 tablespoons extra virgin olive oil
1 1/2 tablespoons cider vinegar
Nonstick spray or vegetable oil, for greasing baking sheet and breadsticks
Fleur de sel or other flaky sea salt

Steps:

  • Preheat oven to 425 degrees. In a medium mixing bowl fitted with standard beaters (not a dough hook), combine yeast, rice flour, tapioca starch, dry milk powder, xanthan gum, gelatin powder, 1/4 teaspoon sea salt and herbes de Provence. Mix on low speed to blend. Add 1 cup warm water (105 to 110 degrees), sugar, olive oil and vinegar. Increase speed to high, and beat 6 minutes. (Dough will stay very soft and should not pull off sides of bowl; if necessary, add water 1 tablespoon at a time until dough does not resist beaters.)
  • Liberally spray or oil a baking sheet, and set aside. Put dough into a large pastry bag with a plain round 1/2 -inch tip, and pipe 12 breadsticks about 8 inches long, leaving about 2 inches in between. Spray or brush tops of breadsticks liberally with oil, and salt generously with fleur de sel.
  • Bake breadsticks 10 minutes, turn and spray or brush again with oil. Continue to bake until golden brown, about 10 minutes more. Serve warm.
