7 large or 10 medium tart cooking apples (Greening, Rome, Granny Smith), cored, peeled and sliced (10 cups)
1/2 cup apple cider
2 tablespoons raw blue agave
1 teaspoon ground cinnamon
1 1/4 cups packed brown sugar
1 cup Bisquick™ Gluten Free mix
2 teaspoons ground cinnamon
6 tablespoons vegan buttery spread, cut into cubes
Whipped cream, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch baking dish with vegan buttery spread.
  • In large bowl, mix apple filling ingredients; set aside.
  • In medium bowl, mix brown sugar, Bisquick® mix and 2 teaspoons cinnamon. Cut in spread, using pastry blender (or pulling 2 table knives through mixture in opposite directions), until mixture is crumbly.
  • Spread 4 cups of the apple filling in pan; sprinkle 1/2 cup crisp topping over apples. Spoon remaining apple filling on top; sprinkle with remaining crisp topping.
  • Bake 50 to 55 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve with whipped cream.

I perfected the gluten-free and oat-free apple crisp. (Even gluten-free oats cause a reaction for me.) It is crunchy and buttery. Many gluten-free flours are not good for crunch, so I split it with cornstarch!

6 medium apples - peeled, cored, and sliced
1 teaspoon ground cinnamon
2 tablespoons cornstarch
½ cup apple juice
¾ cup light brown sugar
½ cup cold butter
⅔ cup gluten-free all purpose baking flour
⅔ cup cornstarch

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Place apples in a large mixing bowl and toss with cinnamon and 2 tablespoons cornstarch. Transfer to the prepared baking dish. Pour apple juice over apples.
  • Combine brown sugar and butter in a large bowl; beat with an electric mixer until creamy. Blend in flour and 2/3 cup cornstarch using 2 forks or a pastry blender until butter mixture is crumbly; sprinkle evenly over apples.
  • Bake in the preheated oven until apples are tender and crust is golden, 40 to 50 minutes.

1 teaspoon ground cinnamon
1 box Betty Crocker™ Gluten Free yellow cake mix
1/2 cup chopped nuts
1/2 cup butter, softened
1 teaspoon ground cinnamon
1 egg, beaten
Gluten-free vanilla ice cream, if desired

Steps:

  • Heat oven to 350°F. In large bowl, toss apples and 1 teaspoon cinnamon. Spread apples evenly in ungreased 13x9-inch pan.
  • In large bowl, mix cake mix and nuts. With pastry blender or fork, cut in butter until crumbly. Add 1 teaspoon cinnamon and the egg; mix well. Sprinkle evenly over apples.
  • Bake about 45 minutes or until topping is light brown. Serve warm with ice cream.

4 cups apples, peeled & sliced, such as Granny Smiths
1 tablespoon sugar
2 tablespoons water
1 teaspoon cornstarch
1 teaspoon ground cinnamon
1 pinch nutmeg
1/2 cup almond flour
1/2 cup certified gluten free old fashioned oats
1/4 cup brown sugar
1 teaspoon cinnamon
2 tablespoons softened unsalted butter

Steps:

  • Preheat the oven to 350. Coat a pie dish with cooking spray. In a large bowl, toss together the apples, sugar, water, cornstarch, 1 teaspoons cinnamon, and nutmeg until well combined. Set aside.
  • Make the oatmeal topping: In a bowl, gently combine: almond flour, oats, brown sugar, 1 teaspoons cinnamon, and butter until crumbly.
  • Place the apple mixture in the dish. Sprinkle the topping evenly over the apples and bake for 25 to 30 minutes, until the apples are cooked through, the juices are bubbling, and the topping is browned. Serve, hot, warm, or at room temperature.
