GLORIFIED RICE (DESSERT-SALAD)
This dessert-salad is a blast from the past! It's basically a rice pudding with crushed pineapple, whipped cream, and maraschino cherries. Serve glorified rice as a salad to accompany your holiday meal. It's also a great dish to bring to potlucks or church picnics. Enjoy! Adapted from "Mennonite Girls Can Cook".

Steps:
- Mix rice, pineapple, sugar and marshmallows in a bowl.
- Whip cream with additional sugar and vanilla until stiff.
- Fold into rice mixture.
- Chill.
- Decorate with maraschino cherries or slices of fresh pineapple or strawberries.
- Serves 6-8.

GLORIFIED "RICE" SALAD
I hadn't made this in years until last month for our 'Christmas in July' party for our ladies group. The last time was in the early 80's that I had it. I didn't have enough rice so I improvised. It was a big hit. I used orzo pasta. You can also use fresh fruits instead of canned. Mix it up to your liking.

Steps:
- 1. Cook orzo according to directions on package. Rinse in cold water. Can cook the day before and place in fridge over night.
- 2. Open and drain all fruits, except cherries. If not using the whole jar of cherries, remove what you want and dry them on a paper towel and then quarter them.
- 3. While orzo is cooling, whip up whip cream to stiff peaks.
- 4. Stir all ingredients into whipped cream and chill.
