GLORIA PITZER'S FAMOUS DAVE'S-STYLE SECRET BBQ SAUCE
Gloria Pitzer is known for copying famous foods, but making them healthy at the same time. "I take the junk out of junk food," says Pitzer. "You know what goes into my recipes." Gloria is careful to point out that she doesn't actually know what the big chains put in their food. "I don't try to dissect the foods and figure out the chemical ingredients," she says. "I never, ever try to steal anyone's secret corporate recipe. I just do my best to duplicate the taste." I have to admit that we don't have a Famous Dave's in Canada, but this is a great sauce. Steps:
- Mix all ingredients in a saucepan and simmer over low heat for 30 to 45 minutes, until thickened. Remember that it will thicken when it cools a bit. Stir every 10 minutes.
- Let cool and pour into a food processor or blender. Blend until smooth.
- Gloria states that this BBQ sauce keeps forever and a day, but I'm not making any guarantees!

Steps:
- Fry bacon in a large saucepan until crisp.
- Drain, reserving 1 tablespoon of the drippings.
- Use the bacon for another purpose.
- Fry the onions in the reserve drippings on medium high heat until caramelized or dark golden brown.
- Don't burn.
- Reduce heat to medium low.
- Deglaze the saucepan with water.
- Stir in the Peach Schnapps, raisins, jalapeño and garlic.
- Simmer for 10 minutes or until the mixture is of a syrupy consistency, stirring occasionally.
- Remove from heat and place the mixture in a blender with Balsamic vinegar, apple, tangerine juice concentrate, pineapple juice concentrate, molasses, apple cider vinegar, lemon and lime juice.
- Process until puréed and return to the saucepan.
- Add corn syrup, tomato paste, brown sugar, Worcestershire sauce, mustard, chili powder, Maggi seasoning, salt, red pepper flakes, black pepper and cayenne.
- Mix well.
- Bring to a low boil, under medium heat, stirring frequently.
- Reduce heat to low.
- Simmer for 20 minutes, stirring occasionally.
- Remove from heat.
- Stir in Kahlúa and liquid smoke.
- Store, covered, in refrigerator.

- Heat the cooking oil in a large heavy cast iron skillet. Add the onion and the garlic. Sauté this lightly. Stir in the catsup, Worcestershire sauce, lemon juice, white vinegar, hot pepper sauce, sugar, paprika, chili powder and salt. Blend together thoroughly the dry mustard and the water until smooth. Then stir this into the sauce. Slowly bring this mixture to a boil. Cover and let simmer for 20 minutes. Makes 2 cups. Sam used this spicy concoction both as a marinade and a basting sauce for his barbecued steaks, chops and chicken.
