1 (8 ounce) package dry egg noodles
1 pound lean ground beef
1 (10.75 ounce) can condensed tomato soup
1 (10.5 ounce) can condensed vegetable soup
salt to taste
ground black pepper to taste
8 slices processed American cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add dry egg noodles and cook for 8 to 10 minutes, or until al dente; drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, brown the ground beef; drain fat. Stir in tomato and vegetable soups, salt and pepper. Mix in the noodles and cook for 10 minutes.
  • Transfer mixture to an 11x7 inch baking dish and layer with cheese. Bake in the preheated oven 20 minutes, or until cheese is melted and lightly brown.

1 -3 large chopped garlic clove (or to taste)
1 teaspoon fresh ground black pepper
2 tablespoons chopped fresh basil (fresh)
2 tablespoons chopped scallions
1 1/2 teaspoons chili pepper flakes (optional)
4 ounces extra virgin olive oil
1 lb parmesan cheese, broken into 1-inch chunks (Parmigiano-Reggiano)

Steps:

  • Place all of the ingredients in the bowl of a food processor. Pulse for about 10 seconds, to break the cheese into small granules. (Use a rubber spatula to scrape down and recombine between every couple of pulses.).
  • Let sit under refrigeration over night for best flavor.
  • Bring to room temperature before serving.
  • Transfer the salsa to a sealed container and refrigerate for up to a Month. If it lasts that long!
  • Note: This is addicting! Serve it as a topping for bread, toss with pasta, spoon over fresh sliced tomatoes, the possibilities are endless.

In the lean years of our marriage, I had to get pretty creative with a lb. of hamburger. This is just one of the staples that kept us going. We affectionately called it "Glop".

1 lb hamburger
1 can(s) cream of chicken or mushroom soup
1 pkg tater tots
1 can(s) corn
dash(es) salt and pepper

Steps:

  • 1. Brown or boil and drain 1 lb. ground beef.
  • 2. Once drained of water and fat, mix in 1 can Cream of Mushroom soup. For an added taste, you can mix half and half mushroom and celery. Optional: Mix in a can of drained corn or your favorite veggie. I don't recommend frozen.
  • 3. In the baking dish, cover the top with tater tots. Bake at the temperature recommended on the tots package. The drop down menu has specific times on it but it's better to go with the package directions. Leave in a bit longer if you like your tots crispy. Serve with a salad and rolls. This is a cheap dish that is a hit with the "meat and potatoes" crowd.

My family fights over this great Thanksgiving side dish that was first brought to our table by my Aunt Joan more than ten years ago. It's the only thing I've found that will convert even the most die-hard canned cranberry eater to a fresh berry advocate.

3 cups fresh cranberries
3 cups coarsely chopped, peeled apples
¾ cup white sugar
1 cup rolled oats
⅓ cup all-purpose flour
½ cup chopped pecans
½ cup dark brown sugar
½ cup butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 3 quart casserole dish.
  • In a medium bowl, toss together the cranberries, apples and white sugar. Pour into the prepared casserole. Mix together the oats, flour, pecans and brown sugar in the same bowl. Spread evenly over the fruit in the dish. Pinch off small pieces of butter and arrange them on top of the oat mixture.
  • Bake, covered, for 50 minutes in the preheated oven. Remove the lid and bake for an additional 10 minutes, or until the top is toasted.

If you are looking for a tasty ground beef recipe, this is for you. It is perfect over rice. However, my grandson prefers it penne.

3 lb ground beef
1 c chopped onion
1 c diced peppers
1 c diced zucchini
1 tsp garlic powder
1 tsp black pepper
1 tsp salt
1 Tbsp italian seasoning
1 Tbsp basil, dried
1 can(s) diced tomatoes with basil, garlic, and oregano
1 can(s) stewed tomatoes
8oz can(s) tomato sauce

Steps:

  • 1. Brown ground beef. Add salt, black pepper, and garlic powder. After beef is browned, taste the mixture to see if it needs any more salt, pepper, or garlic. If the beef tastes good, then the mixture will be delicious.
  • 2. Now add the onions, peppers, and zucchini to the beef and sauté together for a few minutes while stirring. Add the three tomato products, Italian seasoning, and basil. Stir and simmer for ten minutes. Taste mixture to see if you need to add any more seasoning.You do not want your veggies mushy.
  • 3. I usually start the rice just before I brown the beef. By the time the beef mixture is done, the rice is done. Using a bowl or plate add rice to the bottom and scoop on beef mixture on top. Enjoy!
  • 4. This mixture freezes well, so I usually make extra to freeze for another meal.

2.5 units ground beef
2 units onion
3 cups butter
3 cups flour
6 cups milk
1.25 cups water

Steps:

  • Put the beef into a deep skillet. Cook until there is no pink in the meat. Drain the ground beef and set it to the side.
  • Place the 2 onions and the butter into the skillet. Cook until the onions are soft. Place the flour and cook it till it forms a rue and it becomes a light golden brown. Pour in the milk and stir until it becomes a gravy. If it gets too thick, pour in the water to thin it out a little bit.
  • Place the cooked beef back into the skillet and let the gravy heat the ground beef back up. Serve immediately.

A few dribbles of natural maple flavor (King Arthur Flour sells stuff that's real, from real, live maple trees)
Splash of pure vanilla extract
To taste: 3-4 tablespoons of a no-carb syrup (DaVinci sells extraordinarily delicious Splenda-sweetened flavors. This is the stuff they make diet flavored coffee drinks out of. I typically use vanilla, but have also loved the results with hazelnut and dulce de leche flavors. You will LOVE this stuff!!! Buy a few bottles for your favorite diabetic, whoooo, Merry Christmas, Happy Hanukkah, Delicious Kwanzaa, yadda yadda, happy happy joy joy!!)

  • Put it all in a bowl. Exact measurements are for the birds. Put it in something that will melt it. Melt it. Dip pancakes in it. Thank your deity you can still eat such delicious food even though you're a diabetic. OK, so I licked the bowl. Wow. A note about the completely bogus attack on fat: It's scientifically wrong. A low-fat diet is deleterious. Fat does not make you fat unless you consume it with carbohydrates, which trigger insulin production, insulin being a major hormone in fat storage. Without the insulin required (through production in the pancreas by nondiabetics or injection by diabetics) to metabolize high-carbohydrate foods, your body will burn off dietary fat, not store it. 1/2 cup milk
1 cup cooked peas
2 Tbsp pimento (optional)
2 cans (6 oz. each) tuna, drained & flaked
2 cups hot cooked egg noodles
2 Tbsp dry bread crumbs
1 Tbsp melted butter or margarine

Steps:

  • Preheat oven 400°F. Mix all ingredients except bread crumbs & butter in 1 1/2 qt. casserole.
  • Bake 20 minutes and stir.
  • Mix bread crumbs with butter. Sprinkle on top. Bake 5 minutes or until hot.
