1 pound Brussels sprouts, trimmed and halved lengthwise
2 tablespoons olive oil
Coarse salt and ground pepper
4 skinless salmon fillets (about 1 1/2 pounds)

Steps:

  • Preheat oven to 450 degrees. On a rimmed baking sheet, toss brussels sprouts with olive oil. Season with 1/2 teaspoon coarse salt and 1/4 teaspoon ground pepper. Spread in a single layer. Roast, tossing occasionally, until sprouts are browned, 10 to 15 minutes.
  • Season salmon fillets with salt and pepper. Place in center of baking sheet (push sprouts to sides). Roast until salmon is opaque throughout and sprouts are tender, about 10 minutes.

1 lb Brussels sprout, trimmed and halved
1 large red onion, cut into 1-inch wedges, stem ends left intact
2 tablespoons olive oil
kosher salt
black pepper
2 tablespoons pure maple syrup
2 tablespoons whole grain mustard
1 1/2 lbs skinless salmon fillet, cut into 4 pieces
lemon wedge, for serving

Steps:

  • Heat oven to 450° F, with the racks in the upper and lower thirds. On a rimmed baking sheet, toss the Brussels sprouts and onion with the oil, ½ teaspoon salt, and ¼ teaspoon pepper. Roast on the bottom rack, tossing once, until golden and tender, 15 to 20 minutes.
  • Meanwhile, in a small bowl, mix together the maple syrup, mustard, and ¼ teaspoon each salt and pepper. After the vegetables have cooked for 12 minutes, place the salmon on a second rimmed baking sheet and brush it with the maple mixture. Roast on the top rack until opaque throughout, 6 to 8 minutes.
  • Serve the salmon with the vegetables and lemon wedges.

This recipe uses simple tricks to get a light, quick dinner for two on the table with the help of the air fryer. We cook the salmon and Brussels at the same time, and make a tangy lemon-honey dressing in the meantime. Pistachios, raisins, mint and dill add to the bright flavors of this speedy and delicious meal.

1/4 cup golden raisins
1/2 cup boiling water
20 ounces brussels sprouts, trimmed and cut into 1/4-inch pieces
1 tablespoon plus 1 teaspoon olive oil
Kosher salt and freshly ground black pepper
Two 6-ounce skinless salmon fillets
Zest and juice of 1 lemon
1 tablespoon honey
1 tablespoon whole-grain mustard
1/2 cup dill, torn
Leaves from 1 bunch mint (about 1 cup), torn
1/3 cup pistachios, coarsely chopped

Steps:

  • Preheat an air fryer to 400 degrees.
  • Combine the raisins and water in a small bowl and set aside to soak.
  • Place the Brussels sprouts in a medium bowl. Add 1 teaspoon of the olive oil and a generous amount of salt and pepper and toss to combine.
  • Brush the salmon with the remaining 1 tablespoon oil, then sprinkle generously with salt and pepper. Place in the center of the air fryer basket and set the timer for 9 minutes. After 5 minutes, flip the salmon and distribute the sprouts around the fillets. Close the air fryer and finish cooking.
  • Combine the lemon juice, lemon zest, honey, mustard and a pinch of salt in a small bowl or in a jar with a tightly fitting lid and whisk or shake to combine. Taste and adjust the seasoning if necessary.
  • Drain the raisins and place them in a medium bowl. Add the sprouts, dill, mint and half of the dressing and toss to coat. Add more dressing to taste. Divide the sprouts between two plates and top with the pistachios and salmon fillets.
