I found this recipe in a newspaper a number of years ago, and I have been making it ever since. The apples go so well with the crumb and cream cheese layers. When fall comes around, this dessert is a real hit! Hint: Many reviewers have suggested doubling the amount of cream cheese!

2 cups all-purpose flour
1 cup brown sugar
1 1/2 teaspoons cinnamon
1/2 cup butter or 1/2 cup margarine
1 cup walnuts, chopped
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
1 egg, beaten
1/4 cup sugar
1/2 teaspoon vanilla
3 1/2 cups apples, peeled and chopped

Steps:

  • Combine flour, brown sugar and cinnamon.
  • Cut in butter to resemble coarse crumbs.
  • Add walnuts.
  • Measure 2 cups crumb mixture and set aside.
  • Press remaining mixture into a greased 9" x 13" pan.
  • Beat cream cheese and milk until smooth.
  • Mix in egg, sugar, and vanilla.
  • Pour over crumb mixture, and top with apples.
  • Sprinkle with the reserved crumbs and bake for 30 minutes at 350°F.
  • (Weight Watchers Points per serving: 7).

2-1/2 cups all-purpose flour
1 teaspoon salt
1 cup cold butter, cubed
1 egg, separated
3 to 4 tablespoons 2% milk
1 cup crushed cornflakes
9 cups thinly sliced peeled tart apples (about 10 medium)
1 cup plus 2 tablespoons sugar, divided
2 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. In a measuring cup, combine egg yolk and enough milk to measure 1/3 cup. Gradually add to the flour mixture, tossing with a fork until dough forms a ball. , Preheat oven to 350°. Divide dough in half. Roll one portion into a thin 15x10-in. rectangle. Transfer to the bottom of an ungreased 15x10x1-in. baking pan. Sprinkle with cornflakes. , In a large bowl, combine apples, 1 cup sugar, 1-1/2 teaspoons cinnamon and nutmeg; toss to coat. 4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 cup shortening
4 large egg yolks
2 tablespoons lemon juice
8 to 10 tablespoons cold water
FILLING:
7 cups finely chopped peeled apples
2 cups sugar
1/4 cup all-purpose flour
2 teaspoons ground cinnamon
Dash ground nutmeg
GLAZE:
1 cup confectioners' sugar
1 tablespoon 2% milk
1 tablespoon lemon juice

Steps:

  • In a large bowl, combine flour, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. In a small bowl, whisk the egg yolks, lemon juice and water; gradually add to flour mixture, tossing with a fork until dough forms a ball. Divide in half. Chill for 30 minutes. , Roll out one portion of dough between two large sheets of waxed paper into a 17x12-in. rectangle. Transfer to an ungreased 15x10x1-in. baking pan. Press pastry onto bottom and up sides of pan; trim even with top edge. , In a large bowl, toss the apples, sugar, flour, cinnamon and nutmeg; spread into crust. From my favourite church cookbook, where all the recipes are tried and true! **Like most of the reviews state, if you don't want to fight with the pastry to make it fit a cookie sheet - make 1.5x the dough recipe or use a smaller pan.

2 1/2 cups flour
1 teaspoon salt
1 cup shortening
1 large egg yolk, slightly beaten, plus (save white)
milk, to make 2/3 cup liquid
5 -6 apples, pared and sliced
1 cup white sugar
2 teaspoons cinnamon
1 cup icing sugar
1/2 teaspoon vanilla
1 tablespoon water

Steps:

  • Mix flour and salt and cut in shortening. Add egg and milk mixture and mix till it forms a ball. Divide dough in half. Roll first half in 17 x 12 inch rectangle. Place in cookie sheet and bring pastry up sides.
  • Cover pastry with apples and sprinkle with sugar and cinnamon (homemade chunky applesauce also works well).
  • Roll out second half of dough and place on top of apples. Moisten edges with milk and pinch together.
  • Beat egg white until stiff and brush on crust. Bake at 400°F for 1 hour.
  • Mix glaze ingredients together and brush on crust.
  • This square freezes beautifully.

2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup butter, softened
1 egg, separated reserve white (yolk beaten with enough milk to equal 2/3 cup)
1 cup corn flakes cereal, crushed
8 cups cooking apples, cored, peeled and sliced (8 to 10 med apples)
1 cup sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 egg white (reserved egg white)
2 tablespoons sugar
1/2 teaspoon cinnamon
1 cup powdered sugar
1 -2 tablespoon milk
1/2 teaspoon vanilla

Steps:

  • heat oven to 350*F.
  • in medium bowl combine flour and salt, cut in butter until crumbly. with fork stir in egg yolk and milk until dough forms a ball; divide in half.
  • on lightly floured surface roll half of dough into 15x10" retangle; place on bottom of ungreased 15x10x1" jelly roll pan.
  • sprinkle with cereal, layer apples over cereal.
  • in small bowl combine 1 cup sugar, 1 1/2 teaspoon cinnamon and nutmeg, sprinkle over apples.
  • roll remaining half dough into 151/2x101/2" rectangle, place over apples.
  • in small bowl beat egg white with fork until foamy, brush over top crust.
  • in small bowl stir together 2 tablespoon sugar and 1/2 teaspoon cinnamon, sprinkle over crust.
  • bake for 45 to 60 minutes or until lightly browned.
  • in small bowl stir together all glaze ingredients, drizzle over warm crust.
  • cut into bars.

20-22 medium apples, granny smith & golden delicious(peeled & sliced thinly
1 1/3-2 Tbsp lemon juice(1 tbs plus 1 tsp)
1 1/2 c splenda granular
3/4 c brown sugar
1 1/2 tsp cinnamon
1 tsp nutmeg
dash salt
1 c raisins
HOMEMADE PIE CRUST
5 c all purpose flour
1 1/3 Tbsp granulated sugar (1 tbs plus 1 tsp)
1/2 tsp salt
1/2 tsp baking powder
2 tsp cinnamon
1 1/2 c butter flavor crisco
2 jumbo egg yolks (save the whites)
3/4 c ice water
extra sugar for top or use raw sugar or pastry sugar
GLAZE FOR TOP (OPTIONAL)
2 c powdered sugar
1 tsp vanilla extract
1-2 Tbsp milk or more, as much as needed to reach desired consistency

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. For the Crust: combine the salt, baking powder,cinnamon and 5 teaspoons of sugarstir to mix.
  • 3. Measure flour and then add cinnamon mixture to flour. Stir together to blend.
  • 4. Add crisco to flour, and mix crisco into flour with a pastry blender or use 2 forks, until flour resembles little small peas.
  • 5. Beat egg yolks, then add the cold water and stir to blend, then pour into flour mixture, and mix together to form a ball. May need to add 1-2 extra tablespoons of cold water. Add just enough to shape dough into a ball.
  • 6. Divide dough into 2 equal portions, put one in fridge, then dust work surface with flour and add remaining dough. Dust rolling pen, then roll dough out in a rectangle shape to fit a 15 X10 inch X 1 inch deep size pan. May need to piece parts of dough together to cover entire bottom of pan. Pinch seams together.
  • 7. Carefully pick rolled dough up and onto rolling pin, then hold over pan, & unroll from rolling pin into pan. Repeat to cover entire bottom of pan. Spread half of apples onto prepared crust.
  • 8. In a small bowl combine splenda, brown sugar, cinnamon, nutmeg, & salt. Stir to mix then sprinkle half of sugar mixture over apples.
  • 9. Add remaining apples, raisins and the rest of the sugar mixture, evenly over apples.
  • 10. Roll our remaining pie crust to cover top of apples. Make slits all over crust to allow steam to escape as apples are cooking.
  • 11. Brush top of crust with egg white, and sprinkle with raw sugar. Bake in preheated 400 degree F. oven for 50 minutes until crust is golden brown. Place a larger pan underneath to catch potential drips. Allow apple slices to cool completely before adding the glaze.
  • 12. To make the glaze combine powdered sugar, vanilla and 1 to 2 tablespoons of milk or as much as needed to reach spreading consistency. Whisk together and drizzle over cooled apple slices. Cut and serve PLAIN OR WITH OPTIONAL GLAZE. Garnish each slice if desired.
